To be honest, it would never have occurred to me to chop cabbage in a blender. It will be small - I would have thought. Until my mother-in-law shared her impressions with me. I decided to conduct an experiment and prepare cabbage in 2 ways: classic, chop it, but not with a knife, but using a machine (photo above) and using a blender.

Almost everyone knows how to ferment cabbage, I have no doubt. Although at one time I was so full of my father’s preparations that for a long time I was not at all drawn to them. Therefore, I admit, this was only the fourth time. But immediately after the first one, I felt how simple and tasty it was, I felt that I finally missed it all, I felt that I wanted to eat sauerkraut made with my own hands. Although they say that the cabbage of grandmothers selling near the metro is delicious, and my dad’s cabbage was even tastier, there is no doubt that he is a master of all kinds of pickles.

Classic recipe: 1 kg cabbage 1 medium carrot (or more) 20 grams salt (or to taste)

I used, firstly, my favorite kitchen machine, for which I immediately purchased a high-speed slicer-grater, since I really love borscht, despite the fact that my husband still doesn’t like it, and if shredding cabbage doesn’t bother me , then cut carrots into thin strips or beets - I’m not such a master in this matter. Before the Kenwood Titanium, I always used a Borner hand grater. Now I use it. Well, when you just need to chop and grate just a little bit.

Shred the cabbage. We remove the top leaves and leave them - they will come in handy.

Select a shredding disc and insert it into the attachment. The attachment is for a kitchen machine. To put cabbage through a Kenwood grater, cut it into 4 pieces and separate it into leaves, then wash them, shake off excess water and twist a few leaves at a time and insert them into the vegetable serving compartment. Like this.

As soon as all the cabbage has been passed through, we change the shredding disk to a grater disk with small holes (not frequent, there is another disk with small and frequent holes, there will be a very thin straw).

We pass the carrots directly to the cabbage.

Now we salt it all, mix it and press a little on the cabbage so that the juice comes out. Place the reserved leaves at the bottom of the container where the cabbage will be fermented, then shredded cabbage with carrots, and then the leaves again. Place a lid or plate and... cargo. Leave for 3 days, occasionally piercing with a fork. Serve in 3 days)

Another way is to grind cabbage and carrots in a blender.

The main advantage is fast. A few button presses and you're done. The mother-in-law said that she much prefers to cook cabbage this way, saying that it is also tasty and takes less time. But this has its drawbacks. The main thing: experience has shown that in such a high bowl as mine (one of the blenders that happened to be at hand), such a quantity of cabbage had to be passed in parts, otherwise it would end up in porridge at the bottom, with large leaves on top. There is no problem if you cook little cabbage. But usually they ferment a lot. However, this can be avoided if the bowl is wide, or use a food processor. And still, keep an eye on it; you may have to open it and stir it so that it doesn’t get too crushed at the bottom. Thus, in my case the time took approximately the same. The high-speed slicer skips what’s in the compartment in a second, but I had to roll the cabbage 5-6 times. Another downside to blender-blended cabbage for me: visual perception. Still, you will agree that shredded cabbage is prettier). The fermentation time was no different for me, although I thought it should be different. Both cabbages were cooked at the same time.

To the meat you need to add onions and carrots (whole, but peeled), parsley root, and also, I beg your pardon, a bouquet garni (we talked about it in detail here, in the chapter “Broth for risotto”). Having placed all this on the bottom of the pan in as harmonious an order as possible, I pour in two liters of cold water - enough to cover the food with a palm-thick layer of water. The liquid level should not be higher than 2/3 of the height of the pan, otherwise it will splash out in the future, and under no circumstances should you add water here - the flow of the process will be irreparably disrupted. And put the pan on the highest heat.

When foam begins to stand out, I skim it off with a spoon. When the foaming stops, I cover the pan with foil, securing it tightly around the edges, and put it in the oven, preheated to 150ºC. Foil almost completely prevents steam from escaping and temperature loss, so after half an hour I reduce the temperature to 110ºC

After an hour, carefully remove the pan from the oven, remove the foil, remove the bouquet garni, remove the carrots, parsley root and onion with tongs, and instead put in a little chopped potatoes, about three. The choice of potatoes for cabbage soup is a separate topic; I prefer high-starchy, crumbly varieties, abundantly provided by the Belarusian peasantry

Then cover the pan tightly with foil again and place in the oven for another hour and a half. During this time, its contents will turn into a velvety, languid and incredibly fragrant stew.
