Vegetable rice

Source:

You will be surprised, but cauliflower can be turned into... rice without much difficulty. And yes, it's very tasty!

You will need: 450 g of cauliflower, 2 egg whites, 1 onion, garlic to taste and spices.

Preparation: Disassemble the cabbage into inflorescences, grind in a blender to the fraction of rice grains. This will only take a few seconds. Alternatively, if you don’t have a blender, just grate the vegetable. Fry finely chopped onion in oil, add garlic passed through a press. Pour in the whites, stir-fry until the egg whites begin to break up into small pieces. Now add cabbage, salt and pepper. Fry for 5 minutes and remove from the stove. Serve as a separate dish or as a side dish.

Advantages of the steam method

Cauliflower is rightfully considered a nutritious and tasty vegetable. It is prepared in different ways, but if you steam vegetables, then during the cooking process the beneficial substances that are so necessary for the human body are preserved. A properly prepared dish will not only be satisfying, but also healthy.

The advantage of the steam method is that during the cooking process all the beneficial vitamins and minerals remain in the dish. By cooking cauliflower in a double boiler, you can get a dish that will be healthy and tasty.

If you steam food, all the beneficial substances are preserved as much as possible, moreover, the taste of the finished product will be more delicate, and the consistency will become soft and slightly crispy.

Some people recommend eating the inflorescences raw, but after cooking in a double boiler, the cabbage turns out more tender and pleasant to the taste. You should not cook the product for too long; just steam for 15 minutes, and the finished dish can be served.

To prepare a steamed cauliflower dish, you need to prepare it. You need to inspect the head of cabbage and remove places where there are dark spots. When choosing cabbage, you should pay attention to medium-sized heads, elastic, light in color without dark areas. After purchasing fresh cabbage, it is best to cook it immediately, or you can leave it in the refrigerator for a week. If you have prepared a lot of cabbage, you can freeze it and put it in the freezer. Frozen cabbage retains all its beneficial properties for six months.

To cook the product in a double boiler, the inflorescences must be separated from each other. The inflorescences should not be too large. But you shouldn’t chop them too finely so that you don’t end up with a mush during the cooking process. The washed inflorescences are placed on a tray, trying to ensure that they do not lie on top of each other.

If you need to cook a large amount of cabbage, it is better to divide the process into several times.

The steamer is placed on the stove or set to a special mode in an electric steamer. It takes 25 minutes to cook the dish in a double boiler. If you cook it on the lower tiers, the dish will be ready in 10 minutes. To check the readiness of the dish, the inflorescences are pierced with a sharp object. Do not pierce the inflorescence directly in the steamer, otherwise you may get burned by the steam. It is necessary to pull out a tray or piece of product onto a plate and pierce it with a knife.

Steaming cauliflower is not difficult at all. Cooking time may depend on the container in which the product is prepared and the size of the inflorescences. Typically the cooking time takes about 20 minutes.

The subtleties of cooking cauliflower in a double boiler

The steamer has a complex design. Any unit must have a water tank. The water in it is heated, and the steam rises into containers located at the top. If the steamer is electric, it has a heating element. Baskets with perforated bottoms are placed on the water tank. This is where you should put vegetables for cooking. Manufacturers' basket volume ranges from 1 to 5 liters. The capacity of the water tank can have a volume from 0.5 to 6 liters.

The secret to cooking cauliflower is careful preparation in advance. Rinse the cabbage under the tap. Then put it in a container of salted water so that the worms come out. Afterwards, cut off the black rotten areas of the cabbage. Prepare cauliflower immediately after purchasing, as it spoils very quickly even in the refrigerator. When buying cauliflower, focus on the smell. If it gives off an unpleasant aroma, do not buy this head of cabbage.

The optimal size of the inflorescences should be 4 cm in length and width. Do not cut the cabbage too finely, otherwise it will boil and turn into mush. Place the washed inflorescences in a special tray: they can be adjacent to each other. If you stack the florets on top of each other, they will not cook evenly and will be half raw. If you have a lot of cabbage, cook it in batches. Place the steamer on the stove or turn on the appropriate mode on the device. Cooking time for inflorescences: 25-30 minutes. On the lower floors of the steamer, the cabbage will cook faster by 10 minutes. Check the doneness of the cauliflower with a sharp knife. Just don't pierce the inflorescence in the steamer. First, take it out onto a plate. The strong steam may scald your hands.

Clean the steamer thoroughly before use, as bacteria multiply very quickly in a humid environment.
