How to choose pork liver
A high-quality chilled offal has a shiny, smooth surface without dried areas or damage. The liver is elastic to the touch, and when cut, it is moist and slightly grainy. The color is uniformly brown, without spots or other shades. The smell is pleasant, not pungent, slightly sweet and without acid.

There is almost no ice in a package of good frozen livers. If there is too much of it or it is colored pinkish, it is better to refuse the purchase.
