Rough coffee: history of creation and options for making a coffee drink.

Despite the huge number of types of sweet coffee with milk, Raf coffee occupies a special place in the coffee menus of specialized establishments and in the hearts of coffee gourmets. Almost all of this is due to the gentle creamy taste of the drink with a pronounced coffee color. In addition, there are more authentic flavor combinations - Raf coffee with honey, lavender, citruses.

Queen of Provençal Meadows

Like most of the European herbs we know, lavender comes from the Mediterranean. Even the ancient Egyptians knew about its healing qualities: lavender oil was a component of cosmetics and was used in embalming. Later, in Ancient Rome, the aromatic herb was used as a medicine for infectious diseases. Together with the Roman legionnaires, she came to France and other European countries. Lavender flowers were considered sacred among the first Christians. In the Middle Ages they were used as a medicine, and since the Renaissance, lavender has become a popular aromatic additive for perfumes.

The most famous lavender fields are in Provence. Endless meadows covered with blue-violet flowers attract great attention from tourists. Lavender is not only a cultivated plant here, but also a symbol of the entire region.

In Russia, you can see lavender blooming in Crimea: there is especially a lot of it in the Bakhchisarai region.

Origin

Rough coffee in appearance and in its serving method is almost entirely reminiscent of a latte or cappuccino, but it is a fundamentally different coffee drink. It is prepared from espresso, involves the addition of milk and, of course, two types of sweet sand - regular and vanilla. Thanks to this, the taste becomes softer and more delicate, it contains the colors of creme brulee.

The origin of the drink is very interesting, since it was invented in Russia, or more precisely, in Moscow. Let us remember that the birthplace of most types of coffee is Italy, and the world owes the Yankees to the emergence of drinks with a huge amount of water (Americano) or the addition of milk.

If we talk about Rafa coffee, then for the first time it was prepared by the barista of the Coffee Bean coffee shop chain in the early 90s for a foreigner named Raphael. The guest was not a huge fan of cappuccino and latte, so he asked to prepare a drink especially for him, in which the taste of espresso would not be so clearly felt.

The staff prepared espresso for the guest and whipped it with light cream and sugar. The guest liked the result of such an experience, and then all of Raphael’s friends, who ordered “coffee like Raphael’s,” appreciated it. As a result, the name was transformed into a more comfortable Raf-coffee, and then (like the drink itself) moved to other specialized establishments.

Currently, Raf coffee is offered by most coffee shops not only in Moscow, but also in other towns of the Russian Federation, while it is practically never found in foreign establishments.

Composition and calorie content

The composition of traditional Raf is quite common - a serving of espresso (25-30 ml), 100 ml of cream with a fat content of less than 11% and 2 teaspoons of sugar. The latter is represented by ordinary sand and vanilla sugar, taken in equal quantities.

The energy value of a 130 ml serving is 135-150 kcal. But it is more convenient to calculate calorie content each time, taking into account the ingredients of the drink. A serving of espresso is the lowest in calories – only 2 kcal. The main load comes from cream, the calorie content of which is 120 kcal per 100 ml, and sugar. Regular has an energy value of 377 kcal per 100 g (19-22 kcal per teaspoon), vanilla - 288 kcal (about 14-20 kcal per teaspoon).

If supplements are used, this usually results in an increase in calories. Naturally, honey is the most nutritious - 312 calories per 100 g of product or 30-35 kcal per teaspoon. The calorie content of fresh orange juice is about 36 kcal, lavender is 23 kcal per 100 g of product.

If caramel, toppings, and chocolate chips are used for decoration, this also affects the total calorie content of the drink.

Rough coffee, especially in coffee shops where it is served in huge glasses, can hardly be called a diet drink. If you are watching your figure, it is better to immediately include it in your daily calorie intake and not consume it at unplanned times. The drink itself is sweet, rich and high in calories, so it does not need additional desserts.

Difference from cappuccino and latte

Rough coffee, latte and cappuccino are prepared on the basis of espresso with the addition of milk or cream and sugar, but these drinks are very different from each other.

Unlike cappuccino, Raf coffee is prepared with cream, which makes its taste softer, and creamy notes are more clearly felt in it. The manufacturing process also differs - for cappuccino, milk is frothed separately and poured into espresso. Raf anticipates the simultaneous whipping of espresso, cream and sugar, so its structure is more airy.

If we associate latte with Raf coffee, then first it is also necessary to emphasize that the recipe involves the use of milk, not cream. Some of the milk is simply heated, while the other is whipped using a steam vent. Lattes are usually laid out in layers - first, heated milk, then a layer of espresso is carefully poured (along the walls of the glass), followed by a cap of whipped milk. It makes sense that such a drink is served in a glass goblet to show the transition of layers.

For a latte, it is important that the ingredients do not mix, while for Raf coffee the ingredients are mixed in one container. It turns out that the difference is justified by manufacturing technology, which, in turn, leads to differences in the serving of drinks.

About the essence and biography

No one has ever worked hard to create a delicious, delicate dessert made from coffee and cream. This is an impromptu drink that arose thanks to two men. One of them, whose name was Rafael, was desperate to get a coffee dessert that suited his taste, the other was a barista at a Moscow coffee shop, who, one might say, had a sporting interest in pleasing an obstinate client. Whoever wants it will achieve it! Another spontaneous cocktail delighted the visitor. This is where the triumph of lush, deliciously delicate raf coffee began.

According to some sources, three baristas of the first coffee shop of the international Coffee Bean chain in Moscow, two young guys and one girl, are related to the origin of the cocktail. But only the name of Gleb Neveikin went down in history.

Rafael Timerbaev, that same capricious gourmet, by the way, our compatriot, turned out to have a large number of friends. Apparently, knowing about his picky taste and having heard that someone, somewhere had pleased him, they became interested in the new product. Looking into the coffee shop, they began to order from the barista “coffee like for Raf,” i.e. Raphael. Gradually, the name Raf became a household name and acquired a new meaning. Very quickly the recipe was mastered in other metropolitan establishments, and popular love created from it a cocktail desired by millions.

Fact. It is very interesting that raf coffee remained our Russian “trick”; it was not accepted abroad. I do not rule out the presence of primitive envy of a successful invention. But foreigners are happy to feast on Russian coffee masterpieces in Russia.

The essence of the drink and its “zest” is that, unlike the “two-story” cappuccino that has conquered the world, in which a layer of foamed milk is placed on top of the espresso, for raff coffee the two main ingredients are whipped simultaneously. The second difference is the mandatory use of raff cream for cooking, rather than milk, which gives it amazing tenderness.

Traditional recipe

The traditional recipe is considered to be the one according to which coffee was prepared in the early 90s at Coffee Bean. You can repeat the drink only if you have special whipping equipment and a coffee machine. The latter will help prepare the “correct” espresso with a 25-30 second extraction time. The whipping apparatus will allow you to achieve uniformity of the drink and obtain a light, airy, foamy texture.

To make one serving of Raf coffee according to a traditional recipe, you will need the following ingredients:

  • 50 g espresso (actually, a double shot of regular 25 ml espresso,
  • 100 g of cream, the fat content of which is less than 11% (if only a fatty product is available, it must be diluted with milk in advance),
  • 1 teaspoon each vanilla and regular sugar.

First you need to brew the espresso. The flow chart shows that 7-8 mg of ground coffee beans per 25 ml of water is required. While the coffee machine is preparing the drink, you need to warm up the dishes for serving Raf coffee. This can be a clay mug or a transparent glass with a low stem.

Cream must be used at room temperature; cool cream will not whip well and will cool the drink. The cream is placed in the pitcher, sugar is added there, after which the prepared espresso is poured into it. Now you need to beat the resulting mixture using the steam vent of the coffee machine. The drink is ready, all that remains is to serve it perfectly.

Varieties

You can brew Raf at home if you don’t have a coffee machine in a cezve. First, you need to prepare coffee from 50 ml of water and 1 teaspoon of ground coffee. Grinding the beans just before making coffee will make the taste of the drink brighter. For the same purpose, you can throw a pinch of salt on the bottom of the cezve or warm up the ground grains on the bottom of the cezve a few seconds before.

It is better to pour coffee with cool, unboiled water; the heat should be moderate. It is important to warm up the coffee beans, obtaining their beneficial substances, taste and smell, but do not allow the drink to boil. As soon as you notice foam rising, it is recommended to remove the cezve from the heat and strain the coffee.

At this time, it is recommended to heat the cream. You can do this in a water bath or place them in the microwave for a few minutes. Next, it is recommended to combine 2 teaspoons of sugar (it is better if it is equal amounts of vanilla and regular sugar), heated cream and brewed coffee and beat the mixture well with a blender. When a lush foam appears on the surface, the coffee is poured into a serving bowl. It is better to warm it up over steam beforehand.

You can decorate the drink with chocolate or coconut shavings or topping.

Rough coffee is a true field for culinary tests. You can add alcohol, citrus juice, honey to it. The taste of the drink only benefits from this.

Orange Raf coffee is very popular. The recipe for making it is almost identical in all respects to the one used to prepare the traditional drink, but instead of vanilla sugar, 20 ml of fresh orange juice is used. It should be without pulp. Instead of juice, you can use orange sugar, then the citrus flavor will be felt to the least extent.

This version of Raf coffee relieves thirst, has citrus freshness, and also speeds up metabolism and helps eliminate toxins.

To make the drink more viscous in taste, spicy and fragrant, and also more beneficial for the immune system, you can replace sugar with honey. You will need 1 or 1.5 teaspoons of natural honey. This method involves first combining 50 ml of freshly brewed espresso and 100 ml of cream. Only then add honey and beat the coffee.

Making Raf coffee according to this recipe usually involves serving it in clay cups. Ground cinnamon is used as decoration. The honey drink has a warming effect, which is why it is rightfully considered mainly a winter drink.

Fans of nuts or Snickers bars will appreciate the nutty Raf. The recipe includes a fairly high-calorie nut butter, so the cream is replaced with milk. For 50 ml of espresso you will need 100 ml of milk, a tablespoon of peanut butter, and cane sugar or caramel syrup to taste.

First, the paste must be diluted in a small amount of milk to a mixture of thick sour cream, then pour the resulting mixture into the pitcher. Add warmed milk, sugar or syrup there.

Brew espresso and pour it into the pitcher, then beat the composition using a steam vent or blender. Afterwards the drink is poured into cups and decorated.

For this recipe, it is important to choose a good-quality paste. It should be very natural, and the main component should certainly be nuts.

Instead of vanilla sugar and vanilla, you can use lavender. Lavender Raf has a pronounced calming effect and perfectly relieves stress. In this recipe, lavender flowers are used instead of vanilla sugar. You will need half a teaspoon of dried raw materials.

Lavender flowers must first be ground in a coffee grinder with a teaspoon of regular sugar until it becomes a homogeneous fragrant powder. The rest of the process is similar to the traditional one. Espresso is brewed (in a coffee machine or Turk), combined with cream, and lavender sugar is added. All ingredients are whipped until foamy.

This drink is usually decorated with lavender flowers. They go great with a slice of orange.

Fusion cuisine offers extraordinary Raf cheese coffee. From the name it is clear that the drink will have not only creamy, but also cheese notes.

To make it, coffee is brewed in a cezve from 2 glasses of water and 2 teaspoons of ground coffee. Usually spices are added to coffee - cinnamon, ground ginger, nutmeg, cloves. But you can refuse to use them or adjust the amount to your own taste.

Add 50 g of soft cheese to 100 ml of heated cream and carefully beat the mixture with a blender until smooth. Then all that remains is to combine the coffee, 2 teaspoons of sugar (regular and vanilla) and the cream cheese mixture in a warm pitcher and beat.

The cheese you should use is the one that is usually put in desserts - Philadelphia, mascarpone, cottage cheese, ricotta.

Little tips from experts will help you get even more delicious and fragrant Raf coffee.

  • It is better to put vanilla sugar in the cream before it is heated, so it will dissolve more perfectly and give 100% its taste and smell.
  • If the fat content of the cream is quite high, and there is no milk on hand to dilute it, you can even do this with boiled water. It is curious that more and more often, when milk and cream are added to coffee, it is called Raf coffee in English.
  • Vanilla sugar in a drink, unlike baked goods, can behave quite harshly, making coffee cloying and tasteless. You should start adding it with 3 g per serving, increasing to 5-6 g (just a teaspoon) as needed.

If you don’t like vanilla, you can replace it with cane or orange sugar, use honey or lavender.

Rough coffee at home according to a step-by-step recipe.

“Raf coffee” (or simply “Raf”) is a hot drink made from espresso, cream and two types of sugar – vanilla and regular snow-white. All ingredients are mixed and whipped with steam in a pitcher (milk jug).

This drink was invented in Moscow, at the Coffee Bean coffee shop. One of the guests, whose name was Rafael, did not like regular coffee, and the barista decided to whip up espresso with cream and vanilla sugar for him. Other regulars of the establishment also began asking for coffee, “just like for Raf.” The drink turned out to be very successful, and a couple of years later it appeared in other coffee shops. With all this, its name was shortened to “Raf-coffee”.

Another advantage of the Raf coffee recipe is that it can be easily prepared at home. All you need is coffee, cream and vanilla sugar. Try to do it according to my recipes.

Marina, St. Petersburg

It seems to me that this is the most feminine coffee that exists. Although the name sounds a little harsh, in reality the taste is very delicate and soft. I often prepare lavender raff at home. It turns out a little different than in a cafe. Maybe because I cook it in a cezve.

Anastasia, Moscow

In a coffee shop next to the office I buy raf coffee for 300 rubles. for a cup. I take different varieties, especially tasty ones - lavender and citrus. I cooked it at home once, but it didn’t turn out right.

Great benefits of small flowers

Linalyl acetate ester and aromatic substances of the terpene group (linalool, borneol alcohol, geraniol) are responsible for the persistent and recognizable smell of lavender and lavender oil, and tannins (tannins) are responsible for the tart taste. Together they have a calming (and other) effect on the human nervous system. Studies on mice have shown that lavender extract improves sleep quality, increases cognitive abilities and reduces the chances of developing Alzheimer's and Parkinson's diseases.

Studies have also been conducted on humans. It has been proven that using lavender oil:

Reduces the severity of anxiety disorders,

· relieves general anxiety,

· alternative to the action of antidepressants.

Aromatherapy with lavender oil relieves migraines in the initial stage, and massage with its help is useful for relieving acute and chronic pain in the muscles of the back, lower back and neck. The oil can also be applied to scratches and damaged skin: it has antiseptic and wound-healing properties.

However, lavender is not only a raw material for the production of essential oil.

Various raf coffee recipes.

Classic recipe at home

To create "Raf" coffee, you do not need to have a coffee machine. It’s enough to stock up on Turk and the desire to please yourself with a tasty drink.

The classic composition of "Raf" coffee includes:

  • vanilla sugar – 0.5 – 1 tsp;
  • espresso – 50 ml;
  • cream – 100 ml.

First you need to prepare espresso:

  1. 2 teaspoons of finely ground coffee, sugar (optional) and a whisper of coarse salt are placed in a Turk, which is held over the fire for the next 2 to 3 minutes.
  2. The mixture is thoroughly stirred and then poured with clean water (50 ml), preheated to room temperature.
  3. The drink is brought to a boil and removed from the heat. All that remains is to cover it and wait 5 - 10 minutes.

In a coffee machine, the base for “Raf” is prepared more easily. You should take the same amount of ingredients, mix and pour into the coffee maker. Coffee is ground very finely to obtain the richest flavor.

The key to perfect coffee is high-quality beans, optimal grinding and the correct preparation method.

Classic “Raf” is prepared like this:

  1. Espresso should be carefully strained, completely removing the ground beans.
  2. Add vanilla sugar.
  3. Heat the cream to a temperature of 60 - 70 degrees, but do not bring to a boil. Add to coffee.
  4. Beat the resulting mixture using a cappuccino maker/whisk/mixer until thick foam forms on the surface.

You can experiment with the amount of sugar (both vanilla and regular) at your discretion.

It is better to take low-fat cream - 10% or 15%. A more nutritious product will have to be diluted with water in equal proportions. In extreme cases, milk will do, but preference should be given to a natural fatty product.

Raf coffee - what is it?

Rough coffee is a rather unusual coffee drink, which differs from other espresso-based drinks in both production and taste. The main ingredients of raff coffee are: espresso, vanilla sugar and cream. This whole mixture is whipped with a steam vent in the pitcher of the coffee machine.

In fact, all espresso-based drinks are prepared from separate ingredients, but raf coffee is prepared only by mixing all the ingredients at the beginning. Thanks to this, that unique taste of creme brulee and the delicate smell of airy vanilla-creamy foam appear.

Lavender drink

Exotic lovers and those who want to try something new can try the “oriental” version of “Raf” - with the addition of lavender. Despite the specific taste, drinks with this additive are becoming increasingly popular, and it is not difficult to prepare such coffee yourself.

For this you will need:

  • strong freshly brewed coffee – 50 ml;
  • vanilla or regular sugar - 1 tsp;
  • 15 percent cream – 100 ml;
  • lavender inflorescences – ½ tsp.

Cooking method:

  1. Using a coffee grinder or blender, grind the lavender flowers and vanilla sugar.
  2. Add the sugar-flower mixture to the hot espresso and stir.
  3. Pour in the cream and beat until foam appears.

Decorate lavender “Raf” coffee with whole lavender flowers.

Anyone can make such cocktails, and you can use both a Turk and a coffee machine.

The main thing is to adhere to the method of preparing espresso and the specified proportions.

If you want to prepare a larger quantity of Raf, the volume of ingredients must be increased proportionally. You can experiment with the proportions of vanilla sugar and other additives.

The drink can be served not only as cappuccino - in small porcelain cups, but also poured into tall glass glasses. Decorate the cocktail with a vanilla bean, an orange slice, coconut shavings, chocolate or almond chips.

Now there are a lot of recipes for making coffee with milk. Raf coffee is very popular among visitors to many restaurants and cafes. The drink consists of brewed espresso, which goes well with sugar and cream. Raf coffee is an airy dessert that has a delicate vanilla and creamy taste. Today we will tell you recipes for making raf coffee at home and the history of the drink. We will also discover the intricacies of preparing a delicate dessert.

The history of raf coffee

Where did the recipe for raf coffee come from, the traditional version of which many coffee lovers like even more than an ordinary cappuccino? It turns out that our homeland, a country that has never been a coffee Mecca, is also able to amaze gourmets in the world of coffee. This happened back in 1996, when next to the Kuznetsky Most metro station in Moscow the Coffee Bean coffee shop was thriving and living its own slow life.

A distinctive feature of this coffee shop was that it was created in the South American style, so many foreigners often visited this establishment to drink a good cup of espresso or cappuccino. The coffee shop actively amazed guests with its variety of types of coffee, many options for traditional and unusual coffee drinks.

Therefore, it is logical that after some time regulars appeared here, for whom “Coffee-Bean” became a place of greatest relaxation and enjoyment of their favorite drink. One of these guests was a certain Raphael. He didn’t really like the cappuccino the barista was preparing, so he asked him to prepare something special and unusual. This special drink was raff coffee, which was prepared by whipping espresso, 11 percent cream and vanilla sugar.

Rafael really liked this drink, and after that he began to come to Coffee Bean much more often. And friends and acquaintances began to order coffee like Raf’s. But this name didn’t sound very good, so after some time the name raf coffee was invented. Then this drink spread not only in Moscow, and not even within the borders of the Russian Federation - it became popular and known throughout the world.

Traditional raf coffee recipe

For raf coffee, the recipe has not actually changed over its 20-year history. Although at the moment you can find quite a huge number of recipes in a wide variety of unexpected variations. For example, orange or lavender raf coffee, the recipe for which was invented a little later.

The traditional recipe provides the following proportions and ingredients:

  • 25 ml regular espresso,
  • 5 g each of vanilla and regular sugar,
  • 100 ml chilled cream 11% fat,
  • 1 g ground cinnamon.

During the manufacturing process, cream and two types of sugar are mixed in a pitcher. After that, espresso is prepared, which is also poured into the pitcher. All ingredients are whipped so that a fluffy vanilla foam comes out. Next, a cup or a special glass is warmed up, into which the finished drink is poured. The top of the raffe coffee is decorated with cinnamon.

Lavender raff coffee recipe

Lavender drink can be prepared even at home.
The same ingredients are used for it, but cinnamon is excluded and half a teaspoon of lavender plants is added. Coffee can be prepared in a Turk over low heat. After that, sugar must be ground with lavender flowers, and this mixture is added to coffee. Then mix everything, add cream and heat the coffee for 2 minutes. Now all that remains is to beat the purchased drink until smooth with an ordinary blender. Naturally, if you have a cappuccino maker, the effect will be more striking. As soon as the coffee is poured into cups, it is served immediately so that the compacted foam does not have time to come off. There are no serious manufacturing rules in this recipe, so you can safely prepare coffee not only in a Turk, but also in an ordinary coffee machine or coffee maker.

It is important to note that for honey raff coffee sugar is not used, and a teaspoon of honey is added only before beating in a blender. For a citrus drink you will have to use not only vanilla, but also orange sugar. And after making coffee, decorate with a slice of lemon or lime.

Honey flavored drink

Honey coffee has a specific taste, but in combination with vanilla you get a unique “velvety” drink.

To prepare it you will need the following components:

  • strong coffee – 50 ml;
  • low-fat cream – 100 ml;
  • vanilla sugar – 0.5 tsp;
  • liquid honey – 1 tsp.

Cooking method:

  1. Pour vanilla sugar or vanillin with powdered sugar into the coffee, pour in a spoonful of honey, mix thoroughly.
  2. Add preheated cream.
  3. Beat with a blender or other device.

The drink acquires a special taste in winter.

Citrus raff coffee recipe

At the same time, the recipe for orange raff coffee is slightly different. To make it, traditional ingredients are useful, to which two teaspoons of high-quality orange juice are added. It is better if it is a natural, freshly squeezed product. The juice is added to the pitcher first, and this fragrant drink is decorated with orange slices and a small pinch of cinnamon. This combination gives raff coffee an extraordinary piquancy and pleasant astringency.

Coffee with mint

Mint invigorates and gives freshness, which we so often lack in the morning. Just by smelling the bright smell of mint, you will wake up much faster than if you just brew yourself a mug of instant coffee. To combine the pleasant effect of both ingredients, simply add a little mint syrup and, of course, fresh mint to your regular drink, since it contains all the vitamins and the awakening effect.

Ingredients:

  • fresh mint,
  • mint syrup,
  • 2 teaspoons of coffee,
  • sugar,
  • water.

Preparation:

  • While the coffee is preparing, add a little mint syrup to it, stir and bring to readiness.
  • Add sugar to taste and garnish the drink with a fresh mint leaf.

Subtleties of making raff coffee

It is also necessary to note certain aspects of making raf coffee. If you dare to use a fairly large glass of more than 180 ml, then it is better to use two espressos and a corresponding amount of other goods. It is important that the cream has a low fat content, but if you cannot purchase such cream, then a very fatty product is diluted with ordinary boiled water.

You also need to be careful with vanilla sugar. If in baked goods it is not very noticeable, then in coffee the taste and smell of sugar stands out quite brightly and richly. This is why you need to be very careful when adding this ingredient. If 5 g seems like a very high dose, then you can add all 3 g with a suitable increase in the amount of regular sugar.

The moment with making espresso is very important. At home, this drink is prepared in different ways, so you need to choose your own recipe, which will be available both in terms of production technology and taste. For example, espresso can be prepared in a Turk or French press. Only after making coffee is it better to strain, although some coffee lovers prefer to drink coffee with the remaining liquid.

Cooking with vanilla

You can enhance the sweetish vanilla flavor of the cocktail using natural vanilla essence.

But you should be careful with this element - if there is an excess of such liquid, the drink will acquire an unpleasant bitter taste, uncharacteristic of coffee beans.

Required ingredients:

  • espresso – 50 ml;
  • vanilla essence – 0.5 tsp;
  • cream or full-fat milk – 100 ml.

Natural vanilla essence is an infusion of vanilla pods in alcohol. It will add piquancy to the coffee. But if there is no such ingredient, then it can be easily replaced with vanilla liqueur (50 - 60 g).

How to prepare Raf with vanilla extract:

  1. Prepare espresso according to the proposed method, discarding the crumbs of coffee beans.
  2. Pour in essence, cream, sugar as desired.
  3. Beat thoroughly, cool slightly.
