When choosing the right fruits, you should pay attention to several factors:
- Small fruits decrease in size during drying, so it is better to take medium, large apples with a small seed box.
- The main value is the pulp, so the fruits must have thin skin.
- Sweet varieties are tart and have low taste. It is better to take sweet and sour varieties. During cooking, the acidity is reduced and sweetness is added. But compote from such apples produces a rich sweet and sour taste.
- Autumn varieties are best suited for drying. They have dense, juicy pulp, which retains the desired shape during heat treatment.
The best varieties for home cooking are Antonovka, Aport, Pepin, Titovka.
Dried apples in the oven - general principles of preparation
