Salad Emerald bracelet with kiwi and chicken layers. Recipe

Home Mixed salads

Salad “Emerald Scattering” is a juicy appetizer made from affordable ingredients that will perfectly complement the holiday menu. The salad is easy to prepare and very quick. In order for the dish to take no more than ten minutes to prepare, you need to boil the chicken and eggs in advance. The salad can be varied with different types of chicken, tomatoes, and herbs.

For a more dietary version of the snack, you need to replace mayonnaise with sour cream. You can remove fatty cheese or eggs from the salad - this will not change the bright taste of the dish. It is best to choose ripe kiwis for snacks, but in moderation. It is best if they have a slight sourness. Before serving, the dish must be infused - a quarter of an hour is enough.

Recipe for “Emerald Scatter Salad”:

Cut the chicken fillet into cubes, place on the bottom of the bowls and coat with mayonnaise. I like to apply a thin mayonnaise mesh.

Grate the cheese and chop the red onion. First, put half the onion into the bowls, then half the hard cheese. After that, grease with mayonnaise again.

Cut the tomatoes into cubes, chop the dill. Place the dill around the bowl, place the tomatoes in the center, and be sure to add salt and pepper.

Boil eggs, cut into small cubes. Place eggs on top of tomatoes and apply mayonnaise mesh. Then place the remaining onions and cheese on top.

To decorate the top, cut the kiwi into cubes and arrange in a mound in the shape of a Christmas tree. Garnish with dill sprigs, pomegranate seeds and thin strips of mayonnaise. If you don’t want to decorate like I did, then just put a layer of kiwi on top of the onion, and then just sprinkle with cheese.

How to make Emerald Scatter salad? Prepare the necessary ingredients. I used chicken fillet, but you can use thighs or drumsticks.

  2. Step 2:

Wash the chicken and boil in salted water. To make the salad meat more juicy, be sure to immerse the chicken in boiling water. Cook the chicken over moderate heat until cooked through. Remove the chicken from the broth and cool.

  3. Step 3:

Wash the pre-peeled onions and cut into small cubes. To remove excess bitterness from the onion, I poured boiling water over it for 15 minutes. But this is optional.

  4. Step 4:

Boil the eggs hard for 7-8 minutes from the moment they boil. Drain the water. Pour cold water over the eggs to cool and remove shells better. Grate the cooled peeled eggs on a coarse grater.

  5. Step 5:

Finely chop the chicken into cubes or strips. It should be completely cool.

  6. Step 6:

Grind the cheese on a coarse grater.

  7. Step 7:

Wash the tomatoes and dry them. Cut the tomatoes into large cubes. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during the process of cutting and cooking they will spread into a shapeless mass.

  8. Step 8:

Place an even layer of shredded chicken on a flat plate.

  9. Step 9:

    Then add chopped onion.

  10. Step 10:

    Apply mayonnaise mesh.

  11. Step 11:

Lay out each subsequent layer with a slightly smaller diameter so that the salad eventually takes on the shape of a slide. Spread the next layer of grated cheese.

  12. Step 12:

Grease the cheese layer with mayonnaise.

  13. Step 13:

Place the chopped tomatoes and the mayonnaise mesh again. Apply mayonnaise to the sides of the salad as well.

  14. Step 14:

Cover the top and sides of the salad with grated eggs. Place the salad in the refrigerator for 1 hour, covering with cling film.

  15. Step 15:

Before serving, garnish the salad with kiwi. Wash the fruits and remove the skins. Cut some of the kiwi into small cubes, place it around the bottom and on top of the salad. Cut the rest into half rings and place on the sides. You can decorate the kiwi salad as you wish.

  16. Step 16:

    Bon appetit!

It is better to prepare mayonnaise yourself. It will be tastier and healthier. See here for interesting recipes for homemade mayonnaise. You can also use not only mayonnaise, but also sour cream or natural yogurt as a dressing. You can take them separately or mix them with mayonnaise in any proportion to your taste - this will reduce the calorie content of the dish.

How to prepare champignons

Fresh mushrooms must be washed under running water. Then we chop them as desired. Pour vegetable oil into the frying pan. Heat it and send the sliced champignons for 15 minutes. During the entire process, be sure to mix the mushrooms. A few minutes before they are completely ready, add salt to taste. Add prepared mushrooms to the “Emerald Scattering” salad (see photo of the ingredient above) only when well cooled.
