On the eve of any holidays, you always want to pleasantly surprise your family and friends. And I was so tired of the usual menu that I decided to prepare “Melnik” salad as the main salad. I can say with confidence that not everyone knows the recipe for its preparation, and not everyone has heard of such a salad. But believe me, the delicate airy taste will not leave any guest indifferent.

Ingredients for preparing Melnik salad:

  1. Chicken fillet 500 gr.
  2. Potatoes 5 pcs.
  3. Carrots 4 pcs.
  4. Onions 2 pcs.
  5. Chicken eggs 8 pcs.
  6. Pickled cucumbers 3 pcs.
  7. Cheese (hard) 200 gr.
  8. Honey mushrooms (marinated) 1 cup
  9. Mayonnaise to taste
  10. Salt to taste

Preparation of "Melnik" salad:

Step 1: Prepare the ingredients.

As you might have already guessed, we will prepare the salad in layers. But first you need to cook all the vegetables and meat. I chose to boil the chicken fillet as it would add a subtle flavor to the salad, but you can also boil beef or pork. So, let’s cook the meat over medium heat and add a little salt to the water. Wash the potatoes and carrots well and cook. Boil eggs hard. Drain the juice from canned mushrooms and cut into small pieces. Peel the onion and finely chop it. Grate the cheese (I used Russian) and pickles on a coarse grater. As soon as the vegetables and eggs are cooked, they need to be placed under cold, running water for a few minutes and then peeled. Next, cut the eggs (only 5 pieces) and potatoes into small cubes, and grate the carrots on a coarse grater. Take the yolks from the remaining eggs and grate them on a fine grater. Cool the finished fillet and chop finely.

Step 2: Prepare the Melnik salad.


Take a serving dish and put mushrooms in the first layer, and chopped onions on top.


Sprinkle the second layer with half of the grated cheese and grease with mayonnaise.


The third layer is chicken fillet, and then place pickles on top.


Then coat the eggs with mayonnaise, then add carrots-salt-mayonnaise and potatoes-salt-mayonnaise.


Sprinkle everything on top with cheese and grated yolks.


Place in the refrigerator to soak for a couple of hours.

Step 3: Serve the Melnik salad.


Decorate the finished salad with green leaves and serve. Bon appetit!

Tips for the recipe:

- - Instead of chicken fillet, you can cut smoked breast.

– – In the classic recipe I use salted mushrooms, not canned ones. But I didn't find them.

- - In some recipes, the Melnik salad is laid out a little differently: potatoes, mushrooms, onions, cheese, eggs, chicken fillet, cucumbers, again potatoes, carrots, cheese again and decorated with yolks on top. Each layer is smeared with mayonnaise.

  • cut vegetables with dense tissues (celery, beets, carrots) as finely as possible. Components such as cucumbers, onions or tomatoes are best served in thin slices, but it is advisable to serve lettuce leaves whole;
  • To preserve vitamin C in vegetables, you should use a stainless steel knife when slicing;
  • It is allowed to dress the salad with high-quality (preferably homemade) mayonnaise or sour cream, or a mixture of them, as well as vegetable oil;
  • A particularly piquant and healthy dressing is lemon juice. In addition, citrus fruit is able to fully provide food with salt, charge food with a juicy taste and wonderful aroma;
  • for convenient processing of layers of Melnik salad with mayonnaise, as well as in order to reduce the calorie content of food, it is recommended to apply the sauce in the form of a mesh;

  • instead of chicken breast, in Melnik salad you can use smoked product, as well as other meat ingredients;
  • mushrooms in the dish should be salted, but not pickled. It is best to use volushki, black milk mushrooms, saffron milk caps or bitter mushrooms;
  • It is undesirable to frequently mix the components intended for snacks, since as a result of contact with air, the taste and appearance of the prepared products will suffer;
  • To give the salad a subtle garlic aroma, you can use this life hack: add a crust of bread rubbed with garlic to the food, then remove it before serving.
