In this recipe we will tell you how easy it is to make the dough at home and share one of the options for salted mushroom for the pie.
Cooking method
So, heat the milk, but do not bring it to a boil. It should be very warm, but not hot. Then pour yeast and sugar into it. To prepare the dough, I use a large and deep plate, which is large enough so that the dough does not escape from it. Leave the milk and yeast for 10 minutes so that the yeast dissolves and swells.
Then add egg, vegetable oil, salt and one glass of flour to our dough. Mix the resulting mass, cover with a towel and leave to rise for 50 minutes.
While our dough is being prepared, you can prepare various fillings for your pies, whites, and pies. The resulting dough can be used for any baking - even frying pies, even baking, even making pizza. I decided to make a pie with potatoes and salted mushrooms. Since our family is not large, I make a little dough - for one or two small pies.
For the filling, peel fresh potatoes, wash and cut into small cubes.
First of all, prepare the yeast dough

Place a few pieces of butter on top of the filling to keep the pie juicy.
Roll out the remaining dough and cover the pie. We secure the edges of the pie well so that the filling does not fall out and make several punctures with a knife or fork to allow hot air to escape from the pie. It is better to leave the resulting pie for about 10 minutes so that the dough rises again, then it will turn out more airy and soft, and only then put it in the oven.
Preheat the oven for 5 minutes to a temperature of 180 degrees, put the pie in the oven for 35-40 minutes. While the cake is baking, it is not recommended to open the oven. We take out the finished pie, grease it with either whipped raw egg white or butter.
Pie with salted mushrooms and potatoes made from yeast dough
We suggest making yeast dough for pies with salted mushrooms at home. The product comes out airy, tender, and cooking it is a pleasure.
- 1 package of yeast (15 g);
- 1 tbsp. warm milk;
- 1 egg;
- 2 tbsp. l. Sahara;
- 1/2 tsp. salt;
- 3-4 tbsp. flour;

How to make a pie with salted mushrooms and potatoes from yeast dough?
Add sugar and yeast to the milk and stir. Leave for 12-15 minutes so that the yeast has time to swell.
Add the egg, beat a little and pour in the oil.
Add salt, add 1 tbsp. flour, stir and set aside for half an hour. Then add the remaining flour and knead the dough thoroughly.
Cover with a towel and leave in a warm place for another half hour. While the dough is rising, we recommend starting with the filling.

Remove the peel from the potatoes, wash and cut into 5 mm cubes.
Also peel the onion, wash and finely chop.
Rinse salted mushrooms (any) in water, drain through a colander and cut into pieces.

Divide the yeast dough in half: roll out 1 part on a baking sheet sprinkled with flour.

- Beat the yolks with sugar, and then mix them with warm milk, sugar and soft butter.
- Combine the prepared products and the remaining flour. Knead the dough, cover it with a towel and leave it alone for one hour.
- It's easy to prepare salted mushrooms. First, boil the potatoes and crush them with a mortar.
- Wash the milk mushrooms and cut into small pieces. After this, fry them in vegetable oil along with onions.
- Finely chop the green onions.
- Mix potatoes, herbs and fried mushrooms.
- Divide the risen dough into pieces, and then roll out each part. Place the filling on the blanks and connect the edges.
Fry the pies on both sides and serve them with tea or other drinks.
Yeast pie with salted mushrooms and cabbage

- 700 g yeast dough
- 600 g each of cabbage and salted mushrooms;
- 2 onions;

- onions – 75 g;
- stale rye bread – 30 g;
- milk – 50 ml;

- Cover the mushrooms with cool water and leave for at least an hour to swell. Rinse and boil in clean water for 20 minutes after boiling.
- Drain the mushrooms in a colander. When the excess liquid has drained, cut the mushrooms into small pieces.

- To prepare the pie, we need to knead or buy ready-made yeast dough. It can be rich or lean. I still have some ready-made lean meat left over from yesterday after baking the pies. This is where it came in handy.
- I left the salted saffron milk caps in the evening to soak in cold water. At this point, the mushrooms had already been soaked for 12 hours. We rinse them and strain off the liquid.

Salted mushrooms 500 g are washed, if very salty mushrooms are soaked, depending on the salting for 30-60 minutes. Drain the mushrooms well, chop finely, and fry in oil in a frying pan. It will be delicious if you add potatoes (mashed potatoes) to this minced meat. If the pies are cooked with only mushrooms, then fry more than 2-3 onions; with rice, one is enough. Sprinkle the fried mushrooms with a teaspoon of flour, pepper and mix with onions, the filling is ready. For minced meat with rice, you don’t need flour, add 2 tablespoons of sour cream, 3 tablespoons of boiled rice, 2 chopped eggs, add a little salt and sprinkle with black pepper.
