Yeast buns are one of the best childhood memories, if not for everyone, then for many. Fragrant, with a crispy crust, they seem to take us back to a carefree time. But everyone can plunge into the atmosphere of warmth and comfort with the help of buns, and immerse their family in it.
Preparing this pastry, which can be an excellent addition to tea, dairy products, and jelly, is quite simple - you just need to be friendly with the dough and figure out how to wrap them. Sweet buns made from yeast dough can be prepared with or without filling.

- Wait for the dough to rise. After about an hour, knock it out and wait another 30 minutes.
- Form buns. Sprinkle the work surface with flour, roll the dough into a sausage, cut into pieces from which to form into balls.
- Roll the balls into oval cakes and sprinkle with sugar.
- The next step is perhaps the most difficult in the recipe. We need to figure out how to beautifully roll buns from yeast dough. To do this, roll the flatbreads into a roll and bend them in half, with the sugar on the inside. Flatten the ends and make a cut on the fold to cut 1/2 of the roll, then unfold this cut - you get a classic bun.
- Brush semi-finished products with beaten egg.
- Bake for 15 minutes at 200 degrees.

Cooking buns

Sugar buns made from yeast dough
Some housewives prefer to prepare classic buns using yeast dough with kefir.
Ingredients used:
- Flour - 0.5 kg;
- kefir - 200 gr.;
- milk -50 gr.;
- Egg - 4 pcs.;
- Powdered yeast - 10 g;
- Sugar - 100 gr.;
- Salt - 5 g;
- vegetable oil - 50g;
- Vanillin.
Preparation:
- Pour the yeast into a bowl, pour warm milk over it, add 2 tsp. Sahara.
- Mix kefir, egg, salt, eggs and flour in another bowl.
- Gradually mix the contents of two plates, kneading thoroughly.
- Let the dough rise for 40 minutes, then beat and leave for the same amount of time.
- Shape into buns using yeast dough. We figured out how to do this correctly in the previous recipe.
- Bake the pieces for 25 minutes at 180 degrees.
Kefir buns are ready. They do not differ from ordinary ones in their splendor and ability to maintain softness for a long time.
We bake sweet fluffy buns with dry yeast in the oven
Making these delicious bagels is easy, just follow the step-by-step recipe. Boiled condensed milk, jam or jam is used as filling.
Ingredients
- Butter + vegetable oil – 95 g
- Vanilla sugar – 11 g
- Dry yeast – 12 g
- Water – 380 ml
- Sugar – 3 tbsp.
- Flour – 750 g
- Salt – 1 tsp
Preparation

- Sugar - 100 gr.;
- Salt - 5 g;
- vegetable oil - 30g;
- Wheat flour - 0.25 kg;
- water - 0.250 ml;
- Vanillin.
Preparation:
- Heat water to 40 degrees, dissolve yeast and sugar in it.
- Let it sit for 15 minutes, add the remaining flour and knead the dough.
- Form the buns into a ball and let them rise.
- Bake for 20-25 minutes at 180 degrees.
Ready. Despite the simplicity of the ingredients, these quick buns are very tasty and ideal for family tea parties.
A little about yeast dough
The most common two basic recipes for yeast dough are:
- Sponge method. It involves a kind of activation of dry or fresh yeast. To do this, add a little sugar and flour to them, knead thoroughly and let this mass rise a little. Sometimes a few tablespoons of milk are poured here. In this way, you can not only check the quality and freshness of the yeast, but also make the dough more fluffy.
- A quick recipe for straight yeast dough is used when time is limited. In this technology, yeast is immediately added to the main dough along with other ingredients, after which the dough rises and bakes.
There is also another recipe for making yeast dough with regular or sour milk, which may seem strange to you. Its essence lies in the fact that after preparation, a lump of dough is placed in several plastic bags, tied tightly and literally drowned in cold water. In a confined space, the dough rises quickly, even despite the low ambient temperature. Products on this basis, where yeast is used, turn out incredibly airy and have voids inside.
The main secret of yeast dough is the appropriate temperature of all components. Milk should be heated to 40 degrees, eggs, melted butter or margarine should be at room temperature. In no case should you increase the temperature, otherwise the yeast will spoil, and in a cold liquid, for example, sour or regular milk, water, the yeast simply will not start working, and the dough will not rise.

Sweet buns in the oven can also be quickly prepared from puff pastry.
Product composition:
- Puff yeast dough - 0.5 kg;
- Egg - 3 pcs.;
- Powdered sugar;

- Salt - 5 g;
- vegetable oil - 50g;
- Vanillin.
For filling:
- Poppy - 100 gr.;
- Sugar - 150 gr.;
- Butter - 50 gr.
Preparation:
- Prepare the dough. Mix flour, sugar, salt, yeast, vanillin, milk, vegetable oil, mix thoroughly. Wait an hour and a half for the dough to rise, knock it down and wait another half hour.
- Prepare the filling. The poppy seed filling for buns is very easy to prepare. The poppy seed is steamed in boiling water, ground with sugar and butter.
- Form buns. We looked at the shapes of buns made from yeast dough with sugar in the first recipe. In this case, the only difference is that instead of sugar we have poppy seed filling.
- Brush with egg and bake for 20-30 minutes at 180 degrees.
The poppy seed buns are ready, enjoy your meal. It's hard to tear yourself away from such deliciousness.
Sponge and unspread dough with milk
Homemade buns made from yeast dough with fresh or sour milk will require approximately 3 hours of free time:
- about 30 minutes to knead the dough;
- another 2 hours to lift it;
- Approximately 30 minutes to bake homemade buns.
Using our recipe, you can prepare delicious and very aromatic airy buns with sugar. If you prepare the dough according to the recipe, do the following:
- Mix a little warm milk, half a portion of flour and yeast until smooth.
- Cover with a towel and place in a warm place for 30 minutes.
- When bubbles appear on the surface of the mixture, you can begin kneading the dough.

If you have chosen a straight method of preparing buns with milk, immediately start mixing the ingredients:
- Heat the milk to body temperature, dilute a portion of dry or pressed yeast in it. Pressed ones must first be crushed in your hands.
- Add beaten eggs and a portion of sugar. You can add a little vanilla.
- Melt margarine or butter, cool to body temperature, pour fat into your mixture in a thin stream, stirring vigorously. When the fat combines with the dough, you can add a little salt.
- The flour can be sifted in advance or immediately added to the dough through a sieve; be sure to do this in portions, kneading the mixture well after each time. Otherwise, the dough may form lumps.
- First, knead the dough in a bowl, then transfer the lump to the table and continue kneading on a hard surface, intensively kneading it on all sides.
With the sponge method of making dough, all products are poured into the dough and kneaded only after the yeast begins to act.
The method of preparing a pastry with or without sugar called “Vodolaz” is more interesting and even unusual:
- Also heat the milk, dissolve dry yeast and sugar in it. Place this dough in a warm place for half an hour so that it rises (you can place it in a slow cooker at a temperature of about 40 degrees or a little less).
- When the dough is ready, add scrambled eggs at room temperature and beat a little with a whisk.
- If butter or margarine does not melt, grate it on a coarse grater directly into the bowl with the dough and stir well.
- Sift the flour and add to the dough. When about a third of the flour remains, add it little by little, controlling the consistency. This dough should be elastic but soft.
- Form a ball with your hands. Now you can wrap it in several plastic bags, or you can leave it as is.
- Fill a large saucepan with a lot of ice water, put a lump in it - it should sink to the very bottom.
- After about 20-30 minutes, the lump should float to the surface, which indicates its readiness. During this time, you can prepare the molds, baking sheet or filling for the buns with sugar.
- Remove the lump from the ice water, stir it a little on the table with a small amount of flour and leave for 10 minutes, covered with a napkin.

Any of these options has its advantages. However, in the end, the yeast will do its job - with proper preparation and strict adherence to the recipe, the consistency of the buns will be airy, porous and very light.

1. Pour water and milk into a container. We also send the egg and salt there.
2. Sift the flour and pour into a bowl along with sugar and yeast. Place soft butter there too.
3. Place the container in the bread machine and turn on the “Yeast dough” mode. Now we just have to wait for the sound signal, notifying us that it is ready.
Yeast dough raisin buns
Raisin. Baking with it has been popular at all times. Tender, sweet raisin buns are still relevant today, especially if they are made with your own hands and with love.
For preparation you will need the following ingredients:
- Wheat flour - 0.5 kg;
- milk - 300 gr.;
- Chicken egg - 3 pcs.
- Yeast - 20 gr.;
- Granulated sugar - 150 gr.;
- Salt - a pinch;
- Margarine - 100 gr.;
- butter - 50 gr.;
For filling:
- raisins - 100 gr.
Preparation:
- A dough is prepared from about 100 grams of flour, which is mixed with warm milk, sugar, yeast and salt.

Preparation: These buns turn out very fragrant, tender and airy. They are so delicious that one serving is usually not enough. For the test you need: 100 ml. Dissolve yeast in warm milk.
