Everyone has long known that baking is, frankly speaking, unhealthy, but it is impossible to resist a fragrant hot pie from the heat. We don’t want to be on a diet all January, so we found festive but dietary recipes from Anna. Less dough and more delicious filling – this is the motto we go to the kitchen to try out the pies. And traditionally - no expensive problematic ingredients!
You can bake it either in a slow cooker or in the oven, the quality will not suffer!

New York cheesecake without baking
The ingredients for the no-bake version are practically the same as the main composition. But, of course, there are some nuances. Particularly delicious cold cheesecakes are made using cooking technology from Andy Chef. Another advantage of cold cheesecake is that it can be made with cottage cheese or cream cheese, prepared independently at home.
For the base:
- 200 g shortbread cookies;
- 100 g melted butter;
- 1 pinch of salt.
For the cheese mixture:
- 600 g double cream cheese (you can try making a dessert with mascarpone cheese);
- 200 g sour cream;
- 4 sheets of gelatin (or 20 grams of loose gelatin);
- 120 g sugar;
- 1 lemon (zest of 1/2 lemon and juice of a whole lemon);
- 1 teaspoon vanilla essence;
- 200 ml cream.
For filling:
- 200 g strawberries;
- about 2 tablespoons of sugar (the amount depends on the sweetness of the fruit);
- 2 tablespoons lemon juice;
- 2 sheets of gelatin (or 10 grams of loose gelatin).
Cooking process
- Finely crush the cookies in a blender (or in a plastic bag with a rolling pin). Mix with ghee and salt. Cover the bottom of the baking dish (diameter 26 cm) with parchment. Pour the crumbs into the mold and compact tightly. Place in the refrigerator for about 30 minutes.
- Soak the gelatin in cold water. Grate fresh cheese and mix it with sour cream. Add sugar, lemon zest and juice, vanilla essence. Mix everything with a whisk until the lumps disappear.
- Dissolve all the softened gelatin in a saucepan over low heat. Add a few tablespoons of the cheese mixture to the gelatin and mix well. Then add the rest and immediately mix well.
- Whip the cream until creamy and carefully add the cheese mixture. Place in the mold and smooth the surface. Let it sit in the refrigerator for at least 4 hours, but it’s best to leave it overnight.
Preparing the fruit filling
- Puree strawberries with sugar (amount to taste) and lemon juice. You can use frozen berries.
- Soak gelatin in cold water and dissolve over low heat. Add the fruit puree to the warm gelatin and mix well.
- Carefully pour the resulting mixture onto the base that has hardened in the refrigerator. Garnish with fruit if desired. Let it harden again in the refrigerator for 2 hours.

Who invented New York cheesecake
In 1873, William Lawrence bought a cheese factory in Chester, New York, which produced Neuchâtel cheese. He added cream to the classic French cheese, creating a rich, creamy cheese. In 1880, this cheese was marketed under the name Philadelphia Cream Cheese. His next step was to make a typical German cottage cheese dessert that used cottage cheese. Later the idea came to use cream cheese instead.
Cheese cake owes its second birth to the small restaurant Lindy's, which opened in 1961 in New York. The delicious cake became a hit so quickly that the restaurant owner made it his main dish and specialty of the establishment. The popularity of Lindy's, and with it the unusual cheese cake, grew quickly. Until now, modern confectioners consider the Lindy's cheesecake recipe to be the only classic one.
