Loaf charlotte with apples: a quick recipe

Perhaps many people have bread left in the house that no one wants to finish eating. And it lies and grows stale, but the hand does not rise to throw it away. Every rational housewife has a couple of recipes in stock that will tell you what to do with such bread. For example, you can prepare sweet croutons for breakfast. Charlotte made from a loaf of bread with apples is also good as a dessert. The recipe may seem unusual to some, because many are accustomed to making pie dough themselves.

A little history

Why was apple pie called charlotte? There are several versions on this matter.

The most romantic one says that the hopelessly in love chef came up with a new dessert in honor of his lady love, Charlotte. According to another version, the name of the pie is dedicated to a woman who actively developed the idea of \u200b\u200bgrowing apple orchards. She was the wife of the King of Great Britain.

There is another interesting story that tells how charlotte appeared from a stale loaf of apples. The recipe based on stale bread was popular in German bakeries, of which there were many in Russia at the turn of the 19th and 20th centuries. Russian visitors chuckled at a dessert made from leftover baked goods. They said that German spouses were terribly economical, even if the pies were made from crackers.

The Russians behind their backs called the wives themselves with the generic name “Charlotte”, because it was quite popular among German ladies and had already become a common noun for any woman living in Russia. This is how the pie made from crackers with fruit got its name in honor of the German women.

In fact, no matter how the charlotte from a loaf with apples appeared, the recipe rightfully deserves attention.

Charlotte with bread and cookies: original recipe

This method of preparing charlotte from a loaf is quite unusual. This pie turns out very tasty and tender. Usually it does not have time to cool down, as it is instantly eaten.

For baking you need:

  • leftovers from yesterday's bread or loaf;
  • all kinds of cookies, bagels;
  • 50 milliliters of milk;
  • a glass of sugar;
  • package of curd cheese in a volume of 180 grams;
  • 50 grams of butter;
  • apples.

Cooking method:

  1. Be sure to soften the butter before starting cooking. It shouldn't be liquid. Leave the specified volume at room temperature for half an hour.
  2. Prepare the dressing. To do this, you need to mix the cheese, sugar and soft butter in one bowl. Bring all ingredients to a homogeneous consistency. To speed up the process, arm yourself with a mixer or blender.
  3. In another bowl, combine bagels, cookies and bread. Break up the ingredients. Pour milk over everything and wait until softened. Knead the workpiece with your hands, bringing it to a homogeneous mass.
  4. Wash the apples, peel them and cut them into slices.
  5. Place half of the softened dough into the baking bowl. Spread 1/2 of the curd dressing on top.
  6. Lay out the apple slices and repeat the procedure in reverse order: brush the fruit with cheese cream and cover with the remaining dough.
  7. Set the oven temperature to 150 degrees, then place the workpiece in it for 20 minutes.

Charlotte with apples from a loaf: recipe

Let's do the filling first, because it takes time to prepare. Of course, you could be lazy and just use apples, but with caramelized fruit the pie will turn out especially delicious. Condensed milk replaces butter in the recipe so that the filling is not too greasy.

Wash the apples, remove the peel and core. Cut the fruits into small cubes and place in a saucepan. Add vanilla sugar, cinnamon, condensed milk and lemon juice to them. Mix everything carefully. Cook the apples over medium heat, covered, until they become soft and the liquid has evaporated. Don't forget to stir constantly, otherwise the filling will burn. This will all take about fifteen minutes. This may seem like a long time for some, but your guests will be surprised by this loaf charlotte with apples.

The dough recipe is also different from the usual one. In a bowl, beat the eggs with two tablespoons of sugar until it is completely dissolved. Add milk and mix again. For now, we’ll put the bowl aside and start working on the loaf.

Cut off the crusts from the bread - you only need the crumb. If you make small portioned charlottes, then you need to cut a piece from the bun that is suitable in size to the bottom of the mold. Cut the crumb into cubes or sticks if you need a whole charlotte from a loaf with apples. Reviews say that both options are equally tasty.

Grease a baking sheet with butter. Dip the loaf pieces into the prepared egg-milk mixture, then place them on the bottom of the mold in one layer. Cut the remaining slices of bread into approximately equal rectangles. They will act as the sides of the pie. We also dip them in the mixture and place them along the walls of the mold. It turns out to be a kind of base for the pie.

Now place the caramelized apples in the pan. Cover the charlotte with pieces of loaf dipped in the egg-milk mixture. Sprinkle the remaining sugar (two tablespoons) on top. You can skip this point, but without it the charlotte from the loaf with apples will not be as tasty. The recipe is perfect for the oven, so preheat it to 180 degrees and place the pie there for about 40 minutes. Small portioned charlottes will bake for about 20 minutes.

Cool the finished dish and sprinkle with powdered sugar.

Charlotte from a stale loaf: step-by-step recipe

To make apple pie you will need:

  • half a loaf of stale bread;
  • 3-5 small apples;
  • a glass of milk;
  • two eggs;
  • a pinch of cinnamon;
  • a tablespoon of sugar.

How to cook:

  1. The peculiarity of this recipe is that it is necessary to use stale bread to prepare the pie. Cut it into slices 2-3 centimeters thick.
  2. In a container, beat eggs with sugar. When foam begins to form, add milk.
  3. Grease a baking bowl with vegetable oil. You can replace it with semolina or flour if desired.
  4. Chop the apples into small pieces. Sprinkle cinnamon over the fruit. It will give your pie a special aroma and exquisite taste.
  5. Dip the bread slices into the milk-egg mixture one at a time. Place pieces of stale loaf on the bottom of the bowl, and also form sides from them.
  6. Spread the apples onto the bread in an even layer and place the remaining moistened slices on top. There is no need to add additional milk to the bread.
  7. Bake the charlotte in the oven at 180 degrees for 7-10 minutes. Due to the fact that the dough is not filled with milk, the bread will dry out much faster.

You can deliberately leave the loaf in the open air and wait until it becomes stale (about 2 days).
