Ingredients

To prepare this recipe, you will need fairly simple ingredients:

  • 3 eggs;
  • a glass of sugar;
  • a glass of flour;
  • 4 tablespoons of mayonnaise (it is not recommended to use particularly fatty mayonnaise);
  • 5 medium sized apples;
  • 1/2 teaspoon each of baking soda and salt.

If you want, you can add other berries and fruits to the apples, this is entirely at your discretion. But if we are talking about classic charlotte, then it will consist only of apples.

Taking into account the cooking and baking time, the recipe takes about one hour. The given amount of ingredients yields six medium servings of charlotte.

Cooking process

The recipe is quite simple to prepare, just follow a few simple steps:

1. To begin, break the eggs into a bowl or large dish.

2. Add salt, sugar and soda. They need to be introduced gradually, add little by little and mix everything thoroughly during this process. Then the resulting thick mixture must be whipped.

3. Mayonnaise is added. Everything is whipped very thoroughly again.

4. After this, you need to add flour and knead everything. Please note that at this stage there should not be the slightest lumps, otherwise the result will not be very good. Continue kneading until the mixture becomes thick and uniform.

5. Now you need to add fruit. As indicated earlier, the apples should be part of the dough, that is, you do not need to first make a layer of dough, then lay out the fruit, then pour the dough again. Just mix everything well, then the apples will be evenly distributed throughout the pie. Of course, they need to be cut into not too large pieces, otherwise they will stick out from the pie and “draw” attention to themselves too much.

6. This whole mixture is poured into a convenient size mold. You can simply grease it, or you can line it with baking paper - at your discretion.

7. Next, you need to preheat the oven to 190-200 degrees. After this, you need to bake the cake for about half an hour. Its readiness is traditionally checked by sticking a match or a toothpick into the pie. If the surface remains dry after this, then the dish with apples is ready; if it is wet, then you need to keep the charlotte in the oven a little longer.

  • Kefir - 1 glass
  • Sugar - 1 glass
  • Flour - 2 cups
  • Egg - 2 pcs.
  • Refined oil – 50 ml
  • Soda - 1 tsp. (without slide)
  • Vinegar - for slaking soda
  • Apples - 3 pcs

Preparation:

1. First, beat the eggs and sugar with a mixer until the volume increases. Pour the mixture into a deep bowl.

2. Then pour in kefir and stir. Next add the sifted flour. Stir the dough until smooth. Add baking soda, quenched with vinegar, stir again and leave to brew for 10-15 minutes. 3. Place parchment paper in a baking pan and grease with butter. Then pour the dough into it and smooth it over the entire surface.

4. Apples can be peeled. Remove the seeds from them and cut into thin slices. Then stick them into the pie so they are evenly spaced. Now you can put the mold in an oven preheated to 180 degrees.

5. Bake for about 40 minutes, then remove and let cool for 10-15 minutes. After cooling, you can remove the finished pie from the baking sheet, cut into portions and enjoy.

Recipe for classic charlotte with apples, 5 ingredients. Charlotte is a simple and delicious apple pie that literally melts in your mouth, and this deliciousness is prepared very quickly. An incredible aroma fills the entire kitchen, and it becomes so difficult to wait until you can enjoy charlotte with a cup of tea. A wonderful option for baking with apples for every day, the ingredients are always on hand.

Preparation - 50 minutes (your 20 minutes):

  • Prepare ingredients for apple charlotte. Since we take quite a lot of sugar and the dough will turn out sweet, it is better to take sour apples.
  • Beat eggs with sugar and a pinch of salt into a light, thick mass. To make sure that the mixture is already well beaten, draw a line with a whisk. If it remains visible for 1-2 seconds and then spreads, then the eggs and sugar are already well beaten. If it immediately spreads, then you need to beat it some more.

  • Place half of the apples, cut into slices, onto the dough. We start laying out the slices from the sides and move in a spiral straight to the middle.
  • Pour the remaining dough on top and place the remaining apples in the same way. Also at this stage you can sprinkle the pie with cinnamon, if you like, of course.
  • If you cut the apples into cubes, you can add them to the dough, mix gently and then put the whole mass into a baking dish.

  1. The oven must be preheated to a temperature of 180 degrees. If this is not done, the dish will be spoiled.

Few people remember this dessert. Therefore, let’s restore historical justice and prepare the old version step by step.

Traditional charlotte with apples in the oven is a simple dessert made from a minimal set of ingredients.

You will need:

  1. Bread, preferably slightly dry. It contains less of its own moisture, which means it will successfully absorb what is needed for a tasty result. Usually white bread is used, but you can experiment with Borodinsky. The result will be a pie with a very interesting taste.
  2. Apples . It is better to take sour, aromatic varieties.
  3. Impregnation. In ancient times, they used strong tea, milk, cream, melted butter, and in difficult times - sweetened water.

That's all, actually. You will also need sugar (dessert after all!), if desired, you can use aromatic ingredients (cinnamon, lemon zest, etc.).

For a traditional charlotte, you will need a deep non-stick pan of small diameter, ideally a split pan.

The first to go are apples (4 pieces are required): they are peeled, cut into small pieces and placed in a frying pan with a thick bottom, in which a little butter has already been melted.

Sprinkle the apples with sugar (50 g), sprinkle with cognac or rum if desired, and simmer under the lid over low heat for several minutes. The fruits should soften, but not too soft; apple porridge is too much.

The bread is cut into slices and the crusts are removed. And now – it’s better not to read for PP fans! Dip each slice in melted butter and overlap the inside into the pan to form bread sides.

There is no need to dip the bread that will sink to the bottom: it will be soaked in the oil dripping from the sides. It is important that there are no empty spaces left - for this, “patches”, smaller pieces of bread, will be used. In total you will need approximately 200 g of oil.

You can soak the bread with milk or cream. To obtain a particularly tasty result, before preparing charlotte with apples in the oven, this impregnation is infused with cinnamon, cardamom, vanilla - whatever you like. Tea with aromatic additives (bergamot, lemon) is suitable for this.

The top is covered with another layer of oiled bread, without voids. The finished charlotte will be turned over, the top will become the bottom. It is important that it turns out monolithic.

Bake the bread charlotte for 30-40 minutes in an oven heated to 160–170°. If the top starts to bake early, cover the pan with foil.

The slightly cooled charlotte is carefully removed from the mold. There is no need to rush into cutting into portions: if it is hot, the structure may fall apart. The bread slices will be soaked in the aromatic apple filling and will become crispy on the outside.

  • 3 chicken eggs;
  • 1 cup (250 ml) mayonnaise;
  • 1 cup (250 ml) sour cream;
  • 10-12 tablespoons of flour (heaped);
  • 1 packet of vanilla sugar;
  • A pinch of salt.

For filling

  • 3-4 medium sweet and sour apples;
  • 3-4 tablespoons of sugar.

Cooking step by step:


First, let's make the dough: break the eggs, one at a time, into a large bowl. Add sour cream, mayonnaise and mix well.

Gradually add flour, vanilla sugar and a pinch of salt.

Mix the batter (the consistency of thin sour cream).

We peel the apples and cut them into small cubes or grate them (sometimes I add a little grated carrots or pumpkin to the apple filling). Sprinkle the filling with sugar and mix.

Line a baking tray with oiled baking paper and pour half of the dough onto it. Using the back of a spoon, smooth the dough evenly onto the baking sheet.

Spread the apple filling on top in an even layer.


Now pour the remaining dough over the filling. We try to ensure that the top layer of dough evenly covers the apples and sugar.

If desired, you can sprinkle the top of the pie with chopped nuts, sesame seeds or peeled seeds.


Place the baking sheet in the oven and cook the pie for about 30-40 minutes at 190°C.

We check the cake for readiness using a wooden match or a toothpick: a match inserted into the cake should come out dry.

Let the finished pie cool completely, cut into squares and place on a plate.

Of course, most likely, its composition will raise many questions, especially regarding the use of mayonnaise, because only the very lazy have not yet spoken about the heat treatment of this product. And it’s not fashionable, and it’s not useful... But we firmly believe that there must be exceptions to every rule. This mayonnaise cookie recipe is definitely one of them. The only thing is, choose mayonnaise with the most optimal composition: the smaller the list of its ingredients, the better!

INGREDIENTS

  • butter – 200 g + 10 g for greasing the baking sheet
  • mayonnaise – 200 g
  • egg – 1 pc.
  • fine sugar – 150 g
  • vanilla sugar – 2 tsp.
  • flour – 550-600 g
  • salt – 1/2 tsp.
  • baking powder – 1 tsp.

STEP-BY-STEP COOKING RECIPE

Step 1

Prepare dough for melt-in-your-mouth mayonnaise cookies. Cut the butter into small cubes, place in a large bowl and leave for 30 minutes at room temperature. Remove mayonnaise and eggs from the refrigerator.

Step 2

When the butter is soft, stir it with a fork or whisk. Add mayonnaise and lightly beat everything together until the mixture has a homogeneous consistency.

Beat the egg with a mixer with regular and vanilla sugar. If you wish, you can make the cookie dough sweeter by adding a couple more tablespoons of regular sugar, although the amount we suggested is quite enough.

Beat the resulting egg mixture with a whisk or mixer at low speed and add it to the butter-mayonnaise mixture. The result should be a mass of homogeneous consistency.

Step 5

Sift all the flour with baking powder and salt on top of the bowl with the resulting mass. Mix thoroughly. The cookie dough with mayonnaise is ready.

Step 6

Place the resulting dough using a tablespoon into a piping bag fitted with a large shaped tip. If its size does not allow you to place all the dough inside, lay it out in parts.

Step 7

Line a baking tray with baking paper and grease it with butter. Pipe small portions of dough onto it from a pastry bag at a distance of 1 cm from each other. Bake the cookies until browned for 15-20 minutes at 200°C.
