I want to offer you a very tasty apple pie. It was borrowed from Yulia Vysotskaya from the “Eat at Home” program.

Lush charlotte with apples on kefir

Using kefir in the recipe will make the charlotte fluffy and airy. This recipe can well be called “dietary”. The calorie content of this dessert is about 160 kcal/100g. And if you use a sweetener (for example, erythritol) instead of sugar, then the already low calorie content will be reduced by another factor of two.

There is no need to use stevia based sugar. This will add a flavor that not everyone will like.

Ingredients:

  • 1 glass of kefir
  • 1.5 cups flour
  • 4 chicken eggs
  • 1 cup of sugar
  • 50 g butter
  • 0.5 tsp soda, vanilla
  • 3 large apples

Preparation:

First of all, you need to cut the apples. The ideal option would be to cut them into thin circles using a slicer. If you don’t have such a device in your kitchen, you will have to work with a sharp knife.

Sprinkle the apples with lemon juice to prevent the flesh from browning.

In a separate bowl, beat the eggs well, add sugar and kefir. Pour in the melted butter and mix everything thoroughly using a mixer.

After this, you need to add flour to the mixture.

This should be done in portions in 3-4 batches to avoid lumps. Add half a glass of flour and mix with a mixer. Then add the same amount and beat thoroughly again. And so on until all the flour is gone.

Finally, add baking soda and vanilla and mix again.

Then take a mold and put baking paper in it. Pour half the mixture into the pan, then add and evenly distribute the sliced ​​apples.

After this, pour and smooth out the remaining mixture.

Place the pan in an oven preheated to 180 degrees and bake for 40 minutes.

While the apple charlotte is baking, do not open the oven, otherwise all the splendor will disappear.

Classic charlotte recipe in the oven

Well, this recipe is a classic version of a quick and easy preparation of charlotte from products that are always in the kitchen.

Ingredients:

  • Chicken eggs - 4 pcs
  • Sugar - 200 g
  • Flour - 160 g
  • Apple – 3 pcs.
  • Powdered sugar - to taste

Preparation:

Peel the apples, remove the core and cut into small slices.

Break the eggs into a separate bowl and beat them, gradually adding sugar.

I do not advise you to use a whisk, otherwise the preparation will turn into a very long and tedious process. Use a mixer, this will speed up the time of preliminary preparation of products by 4 times.

Beat until fluffy.

After this, carefully add and stir the flour. In principle, you can use the mixer again, or you can meditate while mixing and use a wooden spatula. The result should be the same - a uniform thick mass.

Then place the apples on the bottom of the baking dish and pour freshly prepared dough on top. Carefully level everything with a spatula and place in the oven for 30 minutes at 180 degrees.

After you remove the pan from the oven, do a little trick: turn the pan over and place it on a hard surface. But don’t take out the baked goods themselves—let them cool while hanging to preserve their fluffiness.

After 10-15 minutes, the charlotte can be removed from the mold.

Before you start cooking, you need to prepare all the necessary products and tools. In order for Julia Vysotskaya’s apple charlotte to turn out fluffy, you need to beat the eggs well, which means you will need a food processor or mixer. It will take much longer to beat by hand, and in the end you still won’t get the cake you want.

In order to easily release the charlotte from the mold, it is advisable to use a detachable one. And to avoid unpleasant surprises, you need to wrap it in foil. After all, the dough will be quite liquid. And one more small but very important point. Charlotte from Yulia Vysotskaya has a lot of apple filling and not enough dough. In her opinion, only in this case will the cake turn out delicious.

Lush charlotte with sour cream

The difference between this recipe and the first one is that instead of kefir, sour cream is used, which makes the dough very tender and tasty. And a small technical difference - you don’t need to turn the mold over at the end.

And since we are not going to turn the mold over, it would be ideal for this charlotte to use a mold that has an opening design.

Ingredients:

  • Chicken egg 4 pcs
  • 4 large apples
  • Sugar 150 g
  • Flour 150 g
  • Vanilla sugar 1 pack.
  • Zest of 1 orange
  • Full-fat sour cream 1 tbsp. with a slide

Preparation:

Preparing the dough is not much different from previous recipes.

Peel the apples and cut them into slices approximately 5 mm thick.

Beat the eggs with a mixer, adding a pinch of salt to create an airy foam.

While beating, add simple and vanilla sugar. Beat the mixture for about 6 minutes to obtain that same foam.

After the mixture becomes fluffy and airy, add flour and sour cream to it. Rub the orange peel into it and mix everything thoroughly with a wooden spatula.

Next, lay baking paper on the bottom of the mold and grease it with butter. If desired, you can also sprinkle with a little sugar.

We lay the apples on the bottom in one layer, then pour the dough into the mold, and on top we lay the apples in a circle, sticking them into the dough to get a beautiful pattern.

Well, then we put the charlotte in an oven preheated to 180 degrees for 30 minutes.

Then we take out the mold, let it cool and only after that we take our cake out of it.

Tsvetaevsky apple pie from Julia Vysotskaya

This recipe is loved by both adults and children. And according to Yulia Vysotskaya’s method, it became much easier and faster to cook, without worsening its taste.

What you will need:

  • Ready-made puff pastry without yeast – 1 pack;
  • Sour apples – 3 pieces;
  • Butter – 1 pack;
  • Granulated sugar – 50 grams;
  • Cinnamon – a pinch.

Let's get started:

  • First, bring the dough to room temperature.

To defrost the dough, it is better to leave it on the work surface in advance, and it will gradually melt.

  • Slice the apples with the peel. Just try to cut them the same thickness.

  • Roll out a thin layer of dough, cut out a circle from it and transfer to a baking sheet. From the remaining dough I form the edges of the pie.

I first pierce the dough with a fork so that it does not swell.

  • We lay out the chopped fruits in a beautiful pattern and cover them with granulated sugar and ground cinnamon.
  • Place the dish in the oven to bake for 25 minutes at 200 degrees.

  • Remove it from the mold and cool, then pour aromatic apricot jam on top.

  • Thanks to this, it will be saturated with delicate juice and become very juicy and not really tasty.

Apple charlotte with semolina without eggs

More precisely, this recipe is better called manna with apples, but it’s all in the details. The essence remains the same - this is a pie with apples and semolina. What you call it is up to you. No chicken eggs are used in the preparation, which means it is also vegetarian. It cooks very quickly, literally in 10 minutes (not taking into account the baking time).

Ingredients:

  • Apples – 5pcs
  • Flour - 200g
  • Sugar - 200g
  • Semolina – 200g
  • Butter – 150g
  • Baking powder - 10g

Preparation:

Place flour, sugar and semolina in one bowl. Stir everything with a spoon, then add baking powder and stir everything again.

After this, grate the apples. It is not necessary to peel them.

Then we take a tall baking dish, coat it with butter and lay out our ingredients in layers, compacting them quite tightly. First a layer of flour with sugar, then a layer of apples. And so on one after another. Each layer is 1.5-2 cm thick.

The top layer is flour with sugar, onto which we grate the butter using a grater.

To keep the butter firm and grateable, place it in the freezer for 15-20 minutes.

As in previous recipes, we send our form to the oven, preheated to 180 degrees for 5 minutes, until blush appears. Then reduce the temperature to 140 degrees and bake for another 15-20 minutes.

To check the readiness of the dessert, open the oven after half an hour and pierce it with a thin wooden stick along its entire length (for example, a kebab stick). If no dough sticks to it, then the charlotte is ready.

Let the pan cool slightly and remove the pie. Ready.
