The dough for such a pie can be different. You can knead fluffy yeast dough or buy ready-made puff pastry, but you will have to prepare the filling yourself. To make it tasty, you need to know a few secrets.

First of all, you need to choose high-quality dried fruits. It is good if they were completely cleared of seed pods before drying. Fruits, dried in slices or halves without removing the seeds, are suitable for making compotes, but it is better not to use them in pies, since the hard plates of the testes do not “yield” to the blender, and their presence will spoil the taste of the finished dessert.

Before preparing the filling, be sure to wash the apples and then pour in a small amount of boiling water (the water should be level with the dried fruits). Place the pan on the stove and cook until the fruit is soft. Then drain the apples in a colander.

Advice! Under no circumstances leave boiled dried fruits to cool in water, otherwise they will lose their taste.

Punch soft apples with a blender or pass through a meat grinder. The base of the filling is ready, now you need to bring it to taste. Instead of sugar, it is better to add powdered sugar or honey. You can also add jam or preserves. And if you use granulated sugar for sweetening, then carefully stir the puree so that all the grains dissolve.   • 2 tablespoons sugar;
  • 100 gr. butter (melted butter or vegetable);
  • 150 ml milk (you can use the same amount of whey or kefir).

To prepare the filling you will need 300 g. dried apples and sugar to taste. If desired, you can use honey or jam instead of sugar.

Let's start by kneading the dough. Heat the milk to about 36-40 degrees, add yeast and half a tablespoon of sugar. Stir well so that there are no lumps. Cover the dishes with a lid or film and leave for 15-20 minutes.

If you can’t spend time preparing yeast dough, you can use a quick recipe by preparing the base of the pie with kefir.

We will need:

  • 1 glass of kefir or any other fermented milk product;
  • 2 cups of flour;
  • 200 gr. high-quality margarine for baking;
  • 1 egg;
  • 1.5 teaspoons baking powder;
  • 200 gr. dried apples.

Let's start by preparing the filling. Pour hot water over dried fruits for 10 minutes, then dry and cut. If the apples are too dry and have not become soft after soaking, then they are not suitable for this baking.

Boiled dry apples contain too much liquid, so they should not be added to the dough.

Now you can turn on the oven, as the dough cooks very quickly. Set the thermostat to 180 degrees and start kneading.

Shortbread pie with sour cream

A very delicate baking option. A crumbly sand base, delicate cream with sour cream, a delicious filling of dried apples - what could be better?

Let's prepare:

  • about 2 cups flour (a little more may be needed);
  • 200 gr. high-quality margarine or butter;
  • 1 egg;
  • 1.5 teaspoons baking powder;
  • 100 gr. granulated sugar (for the base) and another 120 gr. (for cream filling);
  • 300 gr. thick sour cream;
  • 2 tablespoons starch;
  • 2 teaspoons vanilla sugar;
  • 200 grams of dried apples%
  • a few spoons of apricot jam (or any seedless jam).

Boil the apples, chop them, mix with jam or preserves. We determine the amount of jam to taste.

Prepare the sand layer: sift the flour, add baking powder and granulated sugar. Place the butter, cut into small cubes, into the flour and rub with a fork until crumbly. Add the beaten egg and knead the dough into a lump. Place the dough in a bag and place it in the refrigerator.

Roll out the chilled dough so that the layer is larger than the diameter of the mold. Place the dough into the molds, forming the sides. Prick the bottom with a fork and place in the oven for 15 minutes (heat 180 degrees).

While the base is baking, beat the sour cream with granulated sugar and starch, add a little vanillin to the cream.

We take out the mold, lay out the filling and pour out the cream filling, and let it bake for another half hour. Let it cool and only then take it out of the mold and cut into portions.

Prepare your food.

Boil semolina in milk. Cool.

In the center of each strip we place the filling in the form of a roller, pinch the edges in the form of a “sausage”.

It is convenient to bake this cake on a silicone mat with concentric circles on it, but you can also use a round pan. Lenten apple pie with nuts

During Lent you can prepare delicious baked goods with nuts and dried apples.

To make a Lenten pie, prepare:

  • 50 gr. dried apples;
  • half a glass of peeled nuts, preferably walnuts;
  • 80 ml vegetable oil (choose an odorless product);
  • 240 gr. flour;
  • one and a half teaspoons of baking powder;
  • half or three quarters of a glass of sugar (depend on your taste);
  • a pinch of vanillin;
  • 200 ml water.

To decorate the cake we will make icing, for it you will need:

  • 50 gr. powdered sugar;
  • 2 teaspoons orange or lemon juice.

In this recipe, you don’t need to puree the apples; just chop them finely and steam with boiling water for 10-15 minutes. Then drain the water and dry the dried fruits by placing them on paper towels.

Advice! Dry apples are much more convenient to cut with scissors rather than with a knife.

Lightly toast the nuts and chop them with a knife or blender. You should get small pieces.

Sift the flour into a bowl, add vanillin, baking powder, granulated sugar. Stir, add vegetable oil. Stir thoroughly, we will get crumbs.

Add the prepared apples and nuts and add water. Stir until smooth.

Let's prepare the dishes for baking - grease with oil, sprinkle thickly with semolina or ground breadcrumbs. Lay out the dough and smooth it out. Place the workpiece in a preheated oven (190 degrees) and leave for about 40 minutes.

At this time, prepare the glaze by mixing powdered sugar with citrus juice. Let the baked dessert cool slightly, cover the warm cake with icing and leave until completely cooled. Cut the cold pastries into portions.

Cooking steps

First, let's prepare the filling, for this we will sort out the dried apples, rinse them, put them in boiling water and cook over high heat for 3-5 minutes, then reduce the heat and cook the apples over low heat for about 15 minutes (until the apples are saturated with moisture), then add sugar to taste. Next, let the broth boil and turn off the heat, cover the pan with a lid and let the apples cool.

You can drink the decoction (it turns out very tasty and rich). Let’s squeeze the apples out of the liquid and use them to prepare the filling for our pies. Place half of the boiled apples in a blender.

And cut the remaining half of the apples into small pieces. To the rolled apples add jam to taste and apples cut into small pieces.

Mix the apples with jam thoroughly and the filling for the pies is ready.

Next, let's start preparing the dough; to do this, sift the flour into a bowl. Mix sour cream with warm water and add to flour.

Pie in a slow cooker with dry apples

Delicious baked goods with dry apples are made in a slow cooker. There are many cooking recipes, here is one of them.

We will need:

  • 3 eggs;
  • 3-4 tablespoons of granulated sugar;
  • three quarters of a glass of flour (a regular glass of 250 ml is used);
  • 50 gr. butter;
  • a teaspoon of baking powder;
  • a pinch of vanillin;
  • a pinch of salt;
  • 50 gr. peeled walnuts;
  • 150 grams of dried apples;
  • 6-8 pieces each of dried apricots and prunes;
  • 30 gr. raisins

Wash the dried fruits and pour boiling water over them for a quarter of an hour. Salt the water, dry the fruit and cut into small pieces. Lightly fry the nuts and chop them.

Break the eggs into a bowl, add granulated sugar, add vanillin, salt and baking powder. Beat everything with a mixer for about 10 minutes. Then sift the flour into a bowl with the mixture and carefully mix with a spoon (we no longer use the mixer). Pour in the melted butter and add pieces of dried fruits and nuts, mix everything and put it in the multicooker bowl, not forgetting to grease the bottom and lower part of the walls with oil.

Select the baking mode and set the timer for 60 minutes. After the signal, remove the cake using the steam basket and place it back into the bowl with the top pale side down. Select “baking” again, but now set the timer for 20 minutes. Remove the finished dessert using a steam basket and leave to cool. Then you can decorate the dessert with powdered sugar or whipped cream.

Let's start the process

  1. First of all, place the yeast, granulated sugar and water in a separate container. Mix well and leave for 10 minutes in a warm place in this form. After the required time has passed, the dough should be ready.
  2. Sift the flour into a separate container, add salt and granulated sugar. Mix everything well and make a hole in the center, into which we beat the egg and pour in the activated yeast. Then mix gently and the result is a sticky dough.
  3. Melt the butter and add it to the rest of the ingredients. Mix everything well and collect it into a ball. The dough is smooth, soft and elastic. It should not stick to your hands. Transfer it to a greased container and cover with cling film. Place in a warm place for 30-40 minutes.
  4. Let's start preparing the filling. To do this, rinse the dried apples with warm water and place them in a saucepan. Pour water here, put it on fire and cook until soft. After the required time has passed, we place them on a sieve and pass them through a meat grinder with a fine grid. Then we send the vessels granulated sugar and cinnamon. Mix everything well.
  5. Divide the prepared dough into 10 parts, each of them needs to be rounded. Then you need to cover them and leave for 10 minutes. After the required time has passed, pour a little flour onto the work surface and roll out each ball one by one into a small flat cake. On the sides, retreating one centimeter at a time, you need to make vertical cuts, and place the filling in the center. Then you need to pull one edge through the cut on the opposite side. In this way we form all the pies and place them on a baking sheet, which we have previously covered with baking paper. Then cover everything with a towel and send it to a warm place for 30 minutes.
  6. In a separate container, combine milk and water, stir well and grease our products with the prepared mixture after the required time. Then put it in the oven, preheated to 180 degrees, for 20 minutes.
