This dough attracted me because of the absence of milk and eggs. It turns out Lenten baked goods are very popular on church holidays. And the donuts turn out to be simply melting, despite the modest composition of the dough.

According to historical information, the traditional name for a lush deep-fried pie first appeared in Polish and is translated as “crumpet”. Initially it just looked like a ball-shaped pie with or without filling, and the hole in it appeared in Russia.

It’s unlikely that anyone will argue that sweet, light, tender, fluffy donuts are a great idea for quick and easy baking. Cooking without eggs makes it quick and easy to make delicious, tender and soft products that remain tender for a long time and do not go stale.

Kefir and yeast donuts with filling

The easiest way to bake golden brown donuts is with kefir and yeast. Since these two components “work” well with each other. Kefir acid, sugar and yeast interact quickly. The dough rises instantly and becomes light as a cloud.

Ingredients

  • wheat flour or other – 2 cups;
  • kefir – 1 glass;
  • dry yeast – 5 g;
  • sweetener – 50 gr.;
  • a little salt to taste;
  • a small amount of soda;
  • oil for frying, filling (jam, wait, chocolate).

Step by step recipe

  1. Warm kefir to room temperature, then add yeast and sugar, stirring until completely dissolved. Set aside for 15-20 minutes.
  2. Next, you need to mix the remaining bulk ingredients and thoroughly mix everything together with a spoon. You will get a soft and tender yeast dough.
  3. Distribute the dough into small pieces of approximately 3-4 cm. And then roll them out with a rolling pin.
  4. Cut out rings with a glass.
  5. Place jam or a slice of chocolate on one ring. Cover the top with another ring. And carefully secure the edges.
  6. Deep fry the products. Or in a saucepan with boiling vegetable oil. Fry until evenly light golden brown.

If you miss the moment to bring the donuts to a pronounced golden color, you can overcook them. Since the cooking process lasts a few more minutes after you remove the delicacy from the oil.

To prevent the dessert from being too greasy, place the baked goods on a layer of paper towels.

Advantages of soda over yeast

It would seem that yeast gives volume to the dough. No wonder the Russian proverb says: “It grows by leaps and bounds.” But using baking soda for baking has several advantages:

  • Saves time: classic dough with yeast takes about 2 hours to prepare, with sodium bicarbonate - about 30 minutes.
  • Yeast is a fungus that promotes the development of putrefactive microflora in the intestines. Many people are familiar with the feeling of heaviness in the stomach and bloating after eating buns.
  • Soda costs less and is consumed more slowly.
  • Sodium bicarbonate is always on hand and has virtually no expiration date. And you need to monitor the freshness of the yeast and constantly replenish its reserves.
  • Yeast can cause an allergic reaction, while soda is hypoallergenic.

Some people absolutely cannot tolerate yeast in any form or dish: in baked goods, beer, kvass, wine - in everything that is produced by fermentation.

Their body reacts to fungi entering the digestive tract with diarrhea, bloating, cramps, attacks of nausea and even vomiting. Skin rash, runny nose, sneezing, cough, sore throat, headache and dizziness often develop.

It’s impossible to get rid of the disease, but you can still protect yourself:

  • exclude yeast-containing products from your diet;
  • in home baking recipes, use soda instead of yeast;

  • increase the amount of fresh vegetables, protein and complex carbohydrates in the menu.

While baked goods made with kefir are more airy, cottage cheese donuts fried in oil have a denser structure.

The most important rule on how to make delicious donuts from cottage cheese dough is to “catch” the desired consistency of the dough. So that the dough is not clogged with flour (otherwise it will not be airy). But the dough should not be sticky in order to be able to form donuts.

Ingredients

  • flour - 140g;
  • cottage cheese (5% fat) - 250g;
  • sour cream - 2 tbsp;
  • sugar - 50 gr.;
  • salt;
  • soda;
  • vegetable oil for frying.

Recipe step by step

  1. Place cottage cheese and sour cream in a deep bowl, add sugar and salt and bring until smooth. Let it brew for 15 minutes.
  2. Add slaked soda and add flour portionwise. Beat until you obtain a soft and fairly sticky consistency. Leave to infuse for an hour.
  3. Divide the dough into parts and mold them into round-shaped cakes (or cut them with a culinary ring or glass). Then, if desired, you can make donuts with filling from two parts: fill them with jam, condensed milk or something else, and then carefully connect the edges.
  4. Cook the products using a deep fryer until done.
  5. For decoration you can use powder mixed with cinnamon.

Yeast donuts in a frying pan

Pan-fried donuts with yeast are a classic. After all, not everyone has a deep fryer in their kitchen, and they may not even have a convenient pan. But you can always find a frying pan.

Ingredients

  • flour – 400 gr.;
  • any fermented milk drink (you can just water!) – 250 ml;
  • dry yeast – 1 tsp;
  • sugar – 50 gr.;
  • vegetable oil – 20 ml;
  • salt;
  • soda;
  • frying oil, jam or condensed milk, powdered sugar.

Step by step recipe

  1. Melt yeast and sugar in any fermented milk liquid and leave for 15-20 minutes.
  2. Add oil, salt to taste (a pinch), slaked soda, whisk the resulting mixture with flour and let it brew for 10 minutes.
  3. The finished mass should be divided into small circles and made into flat cakes, which can also be filled with filling and closed tightly. Gently form a little ball with your hands.
  4. Pour vegetable oil into the pan so that the oil can almost completely cover the product.
  5. Fry until golden brown. Then place on a wire rack to cool the crumpets. And on the grill it’s more convenient to sprinkle with powder or pour melted chocolate.

To guarantee baking yeast donuts in a frying pan, choose dishes with high sides. Then more oil will fit. Or fry on one side and then 2-3 minutes on the other. The first option is preferable.

Donuts with boiled condensed milk

Ingredients

  • 250 ml warm milk;
  • 100 g sugar;
  • 10 g active dry yeast;
  • 1 teaspoon salt;
  • 3 tablespoons vegetable oil + for frying;
  • 500 g flour;
  • 200–250 g boiled condensed milk;
  • powdered sugar - for sprinkling.

Preparation

Dissolve a tablespoon of sugar and yeast in milk and leave for 15 minutes. Add the remaining sugar, salt and butter and stir. Add flour little by little, stirring well after each addition.

Lightly knead the dough with your hands. Cover with a towel and leave for about 1.5 hours. During this time, the dough should double in size. Roll the dough into a sausage, cut into pieces and roll them out lightly.

Place a little condensed milk on each circle of dough. Bring the edges of the dough together and form into balls. Cover with a towel and leave for another 20–30 minutes. Then fry the donuts in hot oil. Sprinkle them with powdered sugar before serving.

Donuts without yeast on water

Lenten option, how to cook donuts without eggs and yeast in water. Suitable for vegans during Lent. However, the recipe is very good, there is practically no difference between the dough with and without dairy products.

Ingredients

  • flour - 400 gr.;
  • water - 200 ml;
  • sugar - 50 gr.;
  • salt;
  • soda;
  • vegetable oil.

Preparation

  1. Bring sugar, salt and soda in boiling water to a homogeneous consistency.
  2. Carefully add flour and leave the dough for an hour.
  3. The dough is then divided into balls and made into flat cakes.
  4. You can use any jam or chocolate spread as a filling. An interesting option for the filling is to mix sugar and cinnamon.
  5. Place the donuts in a large amount of oil and cook until golden brown.

Frying

The pan must be deep. You can use a cast iron Dutch oven. There are 2 ways of frying.

1 way

A large amount of oil is poured into a deep frying pan. When the fat begins to boil, donuts are dipped into it. When they turn brown, they are pulled out.

Method 2

Another method involves pre-frying in a shallow frying pan, greased with a little oil, over low heat. Then the donuts are fried over high heat in a large amount of fat.

Each housewife can try both methods and choose the one she likes.

Milk donut dough

The taste of milk donuts is soft and creamy. The dough turns out very tender. When finished, it tears easily in your hands, not rubber.

We will need

  • flour - 400 gr.;
  • milk drink - 200 ml;
  • yeast - 1 tsp;
  • sugar - 50 gr.;
  • salt;
  • soda;
  • vegetable oil;
  • boiled condensed milk for filling.

Step by step recipe

  1. Combine all dry ingredients except flour in milk.
  2. Whisking constantly, add flour, then let the mixture sit for about an hour or an hour and a half. The dough should stick to your hands a little and be soft.
  3. Divide the dough into small portions and turn them into small flat cakes that can be filled with filling. Or just fry in oil.
  4. Place the condensed milk in the center of the dough and seal the edges tightly.
  5. Cook products in a container with boiling oil.
