General cooking principles

There are several main rules that will help you prepare delicious donuts:

  • In order for the donuts to turn out airy, you should first let the dough rise as a total mass, and then leave the already cut donut blanks for 20-30 minutes;
  • the optimal deep-frying temperature is 130-150 degrees, so that the donuts have time to cook inside (there is no raw dough left) but do not burn on the outside;

  • if the temperature cannot be measured, it is worth adjusting the size of the stove to a level below average;
  • It is advisable to place the finished treat on paper napkins to remove all excess fat and slightly reduce its calorie content.

A little history

Let's start with an interesting name. It comes from the English word dough - dough and nut - nut. This is explained by the fact that previously American donuts were not in the form of a donut, but in the form of a ball.

The first mention of such sweets dates back to the middle of the 19th century, and immigrants from Denmark to the states began making them. It had its own name - olykoeks - butter cupcakes.

But because of its shape, the American confectionery product made from sweet dough fried in a deep fryer received a different name - dough nut. Moreover, before it was cooked not in oil, but in pork fat, until a golden crust formed. The interesting dish caught on and gained unprecedented popularity. What do these donuts look like today? However, there are other versions of the appearance of this name. There could be a play on words - the expression dough knots is pronounced almost the same as “donuts” and may have a reference to baking in the form of the same name. Or maybe the word nut - nut, does not refer to appearance at all, but began to be used because the middle of the donut was poorly cooked, and it was filled with nuts or berries, i.e., a filling that does not need careful heat treatment.

Classic recipe

Donuts (the step-by-step recipe with photos is also suitable for novice housewives) are easiest to prepare according to the classic recipe. In this case, you can either leave the treat in its original form or top it with glaze. The latter is also prepared independently. It includes quality chocolate bars and heavy cream.

Ingredients

For the dish you will need to prepare:

  • flour – 530-550 g;
  • sugar and butter - 3 tbsp. l.;
  • eggs – 2 pcs.;
  • heavy cream – 45-50 ml;
  • milk - 220-240 ml;
  • instant yeast – 10-11 g;
  • salt and vanillin - 1 pinch each;
  • chocolate – 55-60 g;
  • confectionery topping.

In addition, you need to take a large amount of vegetable fat for the recipe. It is needed for deep frying. The oil should be odorless, otherwise it will affect the taste of the finished dessert.

Step-by-step cooking process

Cooking steps:

  1. Raw eggs will mash with all the sugar called for in the recipe. Butter fat, already melted in any convenient way, is poured into it.
  2. All that remains is to mix salt and sugar into the mixture, pour in milk (be sure to preheat it), and add instant yeast. After mixing, add flour and vanillin. It is advisable to send these two ingredients into the mass through a fine sieve.
  3. All ingredients will be mixed into a soft dough. It should not stick to your fingers.

  4. Under a towel made of natural fabric, the mixture will infuse for 50-60 minutes.
  5. When the dough has risen sufficiently, it’s time to transfer it to a floured surface, roll it out into a 1 cm layer and divide it into circles. It is convenient to cut out the center of future donuts using a pastry bag tip or a vegetable oil lid. In this form, the workpieces should stand for approximately 20-25 minutes. During this time, the mass should rise again.
  6. The delicacy will be fried in small portions in hot oil. The preparations should become appetizing and golden.
  7. When the entire portion of the delicacy is ready, you can put it aside and start making glaze.
  8. The cream must be thoroughly heated until it becomes hot, after which the chocolate, broken into cubes, must be dissolved in the dairy product. When the additive is completely dissolved, the mass will need to be allowed to cool completely.

At the very end, you should dip each donut on one side in chocolate glaze. Afterwards you can transfer them to a plate and serve with tea. You will end up with approximately 22-24 donuts.

How does a donut making machine work?

After the ingredients for the dough are mixed, a special nozzle squeezes it out of the nozzle in the shape of a ring - regular smooth or with curly edges, depending on its type. The workpieces fall into a vat of boiling oil and move along a conveyor. To prevent hot splashes from scattering around, the nozzles are located at a low height above the cooking container. Halfway through, a mechanism with blades turns the donuts over so that they are evenly fried on both sides. They are then transferred to cooling racks. Additionally, the devices can have devices that allow you to pour the glaze onto the blanks, remove its excess, inject the filling and perform other necessary operations to produce a variety of delicious donuts.

The fastest and easiest way is to buy store bought. The quantity for the filling is chosen according to taste. To make the donuts look beautiful in the end, you can use cream with food coloring. For the dish you need to take:

  • water – 230-250 ml;
  • yeast – 20-25 g;
  • whole egg and raw yolk – 1 pc.;
  • flour - half a kilo;
  • granulated sugar and butter – 80-90 g each;
  • salt – 1 pinch;
  • butter and custard.

It is important not to overdo it with the cream so that it does not come out of the preparation. Otherwise, the filling will begin to burn quickly when the workpieces are browned in hot fat. The oil will have to be changed after each serving.

Step-by-step cooking process

Cooking steps:

  1. Pour water into a convenient bowl and add the crumbled yeast into it. After mixing, you can add 2 tsp to the mixture. sugar, pour in the whole egg and yolk.
  2. Then you need to sift the flour into the mixture, without stopping stirring.
  3. When the melted butter is poured in, you can add salt and mix everything.
  4. All that remains is to roll out the mass into a layer, cut out circles from it without holes in the center. The pieces should stand at room temperature for about 2.5-3 hours. During this time they will rise again.

  5. Using a special syringe, add the filling. There shouldn't be too much filling. Even with a minimal amount, the treat will turn out tasty and appetizing.

The finished delicacy can be sprinkled with powdered sugar if desired. It can be either classic white or colored. The second option will especially appeal to little sweet tooths.

Donuts with icing

If you want to make unusual donuts, then there is a recipe for donuts made from pumpkin dough. Pumpkin will give the dough a stunningly beautiful color and incredible tenderness. The glaze is also unusual - based on marshmallows. So the donuts turn out airy, very tasty and beautiful, just like in the photo.

Ingredients:

  • 100 ml milk;
  • 50 g sugar;
  • 12 g yeast;
  • 350 g flour;
  • 200 g thick pumpkin puree;
  • 60 g butter.

For the glaze:

  • 130 g marshmallows;
  • 100 g white chocolate;
  • 60 ml cream;
  • food coloring (optional).

Step-by-step cooking recipe:

  1. Grind the peeled pumpkin to a puree consistency.
  2. We put live yeast into the bowl, add a spoonful of sugar to it and pour in the milk, which has been heated to 40 °C. Stir with a whisk. Yeast and granulated sugar should be completely dissolved.

  3. Now add two tablespoons of flour from the total amount, stir everything, cover and leave in a warm place until it increases in volume.
  4. Mix (the dough needs to be settled) and place it in a bowl for kneading the dough.
  5. Add pumpkin puree, add the remaining sugar and mix. At this stage, it is most convenient to use a mixer or whisk.

  6. Add the sifted flour into the pumpkin mixture and knead the dough, using a mixer or your hands.
  7. Add soft butter and continue kneading.
  8. Coat the bowl with oil, place the dough, cover the container with film and keep it in a warm place for 1.5 hours.

  9. As soon as the dough has increased in volume, knead it well, divide it into two parts and roll it out on the table to a thickness of slightly less than 1 cm.
  10. Cut out donuts from the dough, leave for 20 minutes, and then deep-fry until golden brown.

  11. We transfer the finished donuts to a napkin, which will absorb excess oil, and give them time to cool completely.
  12. Bring the cream to a boil, pour it over the chocolate pieces, wait 1-2 minutes and stir until smooth.
  13. Place the marshmallows in the microwave. They should increase in volume and become very soft. Stir them with a whisk, and then add cream and chocolate to this mass, mix until smooth.

  14. If desired, divide the icing into several parts and add icing of any color.
  15. Dip the donuts into the glaze and sprinkle with colorful sprinkles if desired.

Advice! You need to work with the glaze only while it is warm - as soon as it starts to cool, it will immediately thicken.

Curd

Donuts turn out delicious from curd dough. Below is such an unusual recipe with step-by-step photos. At the same time, it is not difficult to repeat it. Even a novice cook can cope with the task. The cottage cheese for the base of the treat should not be too liquid. If the product is like this, you will first need to hang it in gauze to drain off excess whey. This is especially true with homemade cottage cheese.

Ingredients

For the dish you will need to prepare:

  • cottage cheese – 230-250 g;
  • flour – 280-300 g;
  • eggs – 2 pcs. big size;
  • granulated sugar – 80-90 g;
  • soda – 4-5 g;
  • salt.

It is important to choose fresh eggs for the dish. They will be used raw. The recipe includes dry soda without vinegar/citrus juice. This means that there is no need to extinguish it first.

Step-by-step cooking process

The cooking process includes several stages:

  1. The eggs are processed with a mixer or other similar “kitchen aid”.

  2. Add sugar and other dry ingredients, except flour.
  3. After carefully combining all the products, you can send them cottage cheese and flour. As a result, you will end up with a sticky, thick mass in the bowl. It will stick to your fingers.
  4. The resulting mass is transferred to a surface dusted with flour. This will take approximately ½ tbsp. dry component. It is advisable to calculate this amount separately.
  5. Afterwards the dough will be divided into 3 parts. Each is rolled out to a thickness of approximately 0.5-0.7 cm. It is important that the base is not too thin. Otherwise, you won’t be able to make lush, plump, delicious donuts.
  6. It is convenient to cut out the blanks from the base using a large glass, and the centers using a glass or a butter lid. As a result, you will get more than 20 donuts. The exact amount depends on the size of the glass.
  7. As a result, the workpieces will be fried until golden brown in hot fat. It is convenient to use a miniature narrow pan for this. The fire should be moderate. During the process, the dough will quickly increase in size and brown. It is important not to miss the moment when the treat is fully prepared. Otherwise it will burn instantly.

Already on a plate covered with paper napkins, you can sprinkle the treat with white/colored powdered sugar.

How are homemade donuts prepared?

Mix the vinegar with the milk and let it sit for a few minutes until it thickens.

In a medium bowl, beat room temperature margarine and sugar until smooth. Mix eggs and vanilla thoroughly. Sift together flour, baking soda and salt. Gradually add it to the mixture of sugar and margarine, while simultaneously pouring in the vinegar and milk. Knead the dough and roll it out on a floured board to a thickness of 7-8 mm. If you have a special donut cutter, you can quickly form the dough pieces. This is what it looks like (photo below).

If not, take a cup for the outer circle, and for the inner circle, cut off the neck of any plastic bottle. Let the preparations stand for about 10 minutes.

In a large, deep frying pan or saucepan, heat the oil to 190 degrees (if you don't have a kitchen thermometer, be aware that the oil should be simmering). Fry the donuts until evenly golden brown, be sure to turn them over once. Pat dry on paper towels. Sprinkle with powdered sugar while still warm and serve immediately.

Apple

Donuts, the recipe with photos step by step which can be changed to your taste, can even be fruity. Most often the apple version is chosen. It is simple and accessible. Of course, these are not classic donuts, but they are a very interesting version. The calorie content of the treat will be approximately 108 kcal per 100 g.

  • milk – 130-140 ml;
  • egg – 1 pc.;
  • flour – 110-120 g;

This amount of food will make approximately 10 servings of treats. Vegetable oil is mainly used for frying the treat. But approximately 1 tsp. You will also need it in the dough.

  1. You should start with a test. For it, all the dry ingredients from the recipe are sent in a separate bowl, except for vanilla sand and cinnamon. It is best to pour flour through a sieve. Then the dough and the future treat can be made as airy as possible.
  2. The remaining dry ingredients must be mixed separately. They will only be needed for sprinkling the finished treat at the very end.
  3. In another bowl, beat the egg with milk and butter (with a small spoon). The liquid mass should be homogeneous.
  4. Afterwards you need to combine the liquid and dry mass. It will be processed with a whisk until the mixture begins to resemble liquid store-bought sour cream.
  5. While the dough is standing aside, you can work on the fruit. Apples should be completely removed from the skin and all excess (be sure to cut out the middle with the seeds), after which the remaining parts should be cut into rings.

  6. The latter should turn out to be quite large. The optimal thickness of apple blanks is about 1 cm.
  7. Add oil to the frying pan. Its quantity should be approximately the same level as the thickness of the apple slices. When the fat is hot enough, you can dip the fruit into the dough and fry. They will be cooked on all sides until golden brown. If desired, you can make holes in the middle of the blanks so that they resemble classic donuts as closely as possible.

The treat, already cooled on a napkin, can be sprinkled with a mixture of cinnamon and vanilla sugar. This will make it even more tasty and aromatic.

Recipe for the most delicious homemade donuts

Any donuts are always tasty, but fatty and high in calories. Therefore, for those for whom such baking is contraindicated, homemade donuts can be prepared in the oven: the recipe is just as simple, everything is very fast, and most importantly, delicious.


The most delicious donuts come from childhood

During the cool season, there is a special desire to eat a delicious pie, a fluffy bun or a hearty pie. Delicious donuts made with milk and yeast in a frying pan will “warm the soul” just as well, and they are prepared...

Ingredients:

  • 200 ml milk;
  • 500 g flour;
  • 100 g sugar;
  • 3 yolks (+1 egg);
  • 50 g butter;
  • 15 g pressed yeast;
  • 1 packet of vanilla sugar;
  • 2 pinches of salt.

For the glaze:

  • 100 g chocolate;
  • 50-70 ml cream;
  • 10 g butter.

Step-by-step cooking recipe:

  1. Add a spoonful of sugar to a bowl of warm milk and crumble the pressed yeast.
  2. Dissolve the yeast in the milk, cover the bowl with cling film and leave for 15 minutes.

  3. Pass the flour through a sieve into a deep bowl, make a hole and pour in the yeast milk. We also add the yolks, the remaining sugar and a bag of vanilla.
  4. Lightly mix the ingredients with a spoon, and then add pieces of soft butter, also add salt and knead.
  5. Transfer the contents of the bowl to the table and knead the dough for 5-7 minutes. The dough should be soft and not stick to your hands.

  6. We collect the dough into a ball, put it in a bowl, after greasing it with vegetable oil. Cover with film and leave in a warm place for 1 hour.
  7. Place the risen dough on the table and, after rolling it out into a layer 1.5-2 cm thick, cut out the rings using any molds.

  8. Transfer the dough pieces to a baking sheet lined with parchment and bake at 180°C for 15 minutes.
  9. Transfer the finished donuts to a wire rack and leave to cool completely. At this time, prepare the glaze. Place chocolate pieces into the hot cream, leave for 15 minutes, and then stir with a whisk until smooth.

  10. For a glossy color, add a piece of butter to the glaze and stir everything well again.
  11. Dip the donut into the glaze, transfer it to a wire rack and immediately decorate with colorful sprinkles.

From strawberries

This is a very unusual version of donuts. It is perfect even as a holiday treat. But to make such donuts, you will need a special form for baking them and a pastry bag/syringe. It is best to take fresh strawberries. If this is not possible, then previously defrosted will do. But it should be stored with a minimum amount of ice.

  • flour – 230-240 g;
  • kefir (sour milk/buttermilk) – 170-180 ml;
  • sugar – 120-130 g;
  • eggs – 2 pcs.;
  • butter – 1.5-2 tbsp. l.;
  • strawberries (fresh/thawed) – 330-350 g;
  • baking powder – 1.5 tsp;
  • salt – ½ tsp;
  • honey – 80-90 g;
  • vanilla extract – 1 tbsp. l.;
  • butter, powdered sugar.

Step-by-step cooking process

Cooking steps:

  1. First, dry (except powder and 1 tbsp sugar) and liquid ingredients will be combined in two separate bowls. Afterwards they should be mixed thoroughly. Honey and butter are pre-melted to a liquid state.
  2. At the end, most of the strawberries will be introduced into the mass. This is approximately 2/3 of all berries. First, the strawberries get rid of everything unnecessary and are cut into small, neat cubes.
  3. The mixed dough should be poured into a large pastry bag.
  4. Oiled donut molds are filled with the resulting mass about 2/3 full. The delicacy will be baked in the oven for approximately 8-9 minutes at medium temperature. It is convenient to check the readiness of the treat with a toothpick. It should remain clean after puncturing the dough. If the mixture sticks, add a couple more minutes to the recommended cooking time.
  5. The remaining berries should be chopped into small cubes and mixed with sugar.

  6. Use a fork to puree the mixture. And then leave it at room temperature so that the berries release their juice.
  7. Approximately 3 tbsp. l. Strawberry mass needs to be beaten with powder. The end result will be glaze. If it is too thick or runny, you can correct the situation with additional portions of strawberry juice or powdered sugar.
  8. When the donuts are completely ready, it’s time to let them cool outside the oven and then immediately dip one side into the glaze.

The delicacy is delicious served with cold milk.

We were engaged in the delivery of American donuts - donuts. We had our own production, point of sale and delivery.

In the summer of 2014, when I was 24 at the time, my partner and I came up with the idea. Then we collected our thoughts for several months and opened on November 5th.

Have you opened - in the sense of opening a point of sale?

No. We had a grandiose idea: to work purely for delivery - like pizza delivery. We rented a small space for production, hired two cooks and a courier. Clients contacted us by phone or through social networks.

Why donuts?

We thought donuts were a goldmine and we were about to raise millions. They figured that the cost was very low, and the demand in the city was high.

And most importantly: no one in Perm cooked donuts well.

We have never been so wrong before.

We screwed up literally in everything I listed.

What is the difference between donuts and donuts?

Donuts is a Russian name, donuts is an American name. And a donut is considered to be a large donut with filling inside, icing on top, and a hole in the middle. This is exactly what we were selling.

Yes, I had never done anything before and never saw myself as an entrepreneur.

My partner and I worked at .

To put it briefly, it was Homer Simpson's job: you sit in front of a computer all day and press a button. Zero brains, zero any skills.

The position was called “Monitoring Specialist”, but my friends called it “Dream Job”. Work schedule: every four days, it turns out about 6-7 days a month. 6-7 days when you do nothing. Some watched TV series, others played computer games. I tried to earn extra money, develop somehow, listened to “Transurfing of Reality” by Vadim Zeland. At the same time, the average salary was 30,000 rubles per month and at that time completely covered all my needs.

By the way, after opening Magic Donuts, we worked there for another 2 years. Our “headquarters” was located at T Plus, and we drew all our analytics on a local marker board.

How long have you worked with donuts?

The whole process from opening to selling my share lasted 3 years. A conflict arose with my partner. We were in equal shares.

When we defeated all the competitors in the city, when there were no challenges left and we solved absolutely all our problems, my partner and I saw the problem in each other.

Previously, we were inseparable; I considered him more than a brother - almost a father (he is older than me). But it so happened that at one point we became almost the main enemies.

In the end, I sold my share to my partner - because I knew that I would do something else. I was sure that there was no need to focus on one thing, and it would be better in the future.

I know for sure that I sold it cheap. In fact, I gave 3 years of my life - there was nothing else in it except donuts at that time. Normal relationships, family, health - everything is in the background.

If we consider the sale not from the point of view of money, then it was the wrong decision.

But at the moment I'm doing well. I learned from these experiences and mistakes, and now my business is growing.

So I'm happy with how everything happened.

What advice can you give to a new businessman?

Definitely try it.

There are many chances that you will not like your business. Information gypsies have created such an aura around business that it is: pew-pew, yachts, travel, vacation, everything is cool. In reality this is a little different.

But it's very interesting. Nobody knows who is hiding inside you. Maybe you are a great architect, manager or brilliant salesman. Maybe you will create a coffee shop that will be incredibly beautiful, and the whole city will go to it.

I recommend trying and not worrying if it doesn't work out. If you understand that this is not yours, this does not mean that you are bad. This means that you have other interests in life. If it doesn’t work out, you’ll go back to your job, or vice versa, you’ll radically change your field of activity.

But if you fail, you will stop paying attention to the cult of entrepreneurship and you will be happy.

I have never developed so much in my life, I have never had such progress in my brain as during these three years of business. It was a huge leap.

Life has changed, I am educating myself. Even if everything was screwed up and I didn’t make any money, the knowledge that I received there is priceless. Even in donuts - it would seem, laughter, somehow frivolous - everything that I learned helps me a lot in life.

How much did the cooks earn?

The first cook earned about 12,000 a month. It was terrible, but it was worth the money we were making. I must say that the workload was low.

About 2 months after opening, when the girl from the canteen came, we began to grow and stopped sparing money on employees. Especially for the cook: after a year she received about 40,000, after a year and a half she did not drop below 50, working 2 every 2. In the canteen she received 3 times less.

Did you have your own transport?

We bought a car. "Chevrolet Spark" nicknamed "Bullet". He was good.

It cost 90 mowers, and in 2 years we invested 200,000 in repairs :)

Part of the money was recouped because someone was constantly crashing into it, the insurance company paid us money, but we didn’t repair anything :). He had a broken ass in the trash.

Mostly I drove the “Pula”. Our partner had his own car, and we also hired couriers with our own. At first we tried to plant them behind ours, but quickly realized that no one really took care of it.

What happened in this “Spark”. Large stoves were being worked on. When the process was not yet established, I drove it to get the ingredients - these were two 50-kilogram bags of flour and a bunch of additives - the Spark was lowered to the floor. Everyone laughed on the road, but I had a blast.

Didn’t it happen that you started by cooking in your own kitchen?

We immediately understood what food production was.

They didn’t do everything well right away, so that SanPiN came and said: “You guys are handsome.” But gradually we came to this.

Our first production, stupidly, was on the 2nd floor. You take these 50-kilogram bags, drag them up the stairs, it’s heavy, fucked up. And then you get into the car covered in flour, the whole interior is also covered in flour. It was fun.

I found a place for the second production not far from the center - near the circus. There we did everything very well, we could be proud: white walls and ceiling, everything was in accordance with Sanitary Regulations, the cooks washed everything until it shined after their shift. Everything is clear: extractor hood, forced ventilation, toilet, separate warehouse for ingredients. And the location is convenient for delivery.

There are a lot of cool stories.

We didn't know anything about donuts. I wrote a heartfelt message on VKontakte to 10 people who were involved in this with the meaning: “Guys, help!” 9 people sent me.

A guy from Tyumen made contact. He told me how cool his donuts were, how Muscovites came and said that Dunkin Donuts was shit compared to him. And he was ready to tell everything for a trip to Turkey.

We told him that we were a startup and had no money, so we agreed on an XBox. I took my dad’s car and we drove off.

On the way, he told us what equipment we needed to buy: just that deep fryer that cooks everything itself.

The man ended up not in Tyumen itself, but at some lumber yard on the outskirts of the outskirts. We arrive and enter the “production”. He and the boys are smoking a hookah there, there is dirt and stink everywhere. In my opinion, there was no water at all at that moment. Well, complete ass.

And we still didn’t understand anything, we thought: “Wow, how cool!” We smoked hookah and watched TV. In production! In outerwear! In shoes from the street!

Well, the man showed us how everything happens. I took the bag, diluted it with water, and poured it into the deep fryer. I poked the buttons and it turned out to be a donut.

We had almost never tried donuts before, but we liked them. It seemed that this was the best production in Russia, nothing bothered us.

And then, in passing, it turned out that he does not supply these donuts anywhere. There are no certificates, he takes them to one store, nothing is sold in the store.

It seems to me that all he earned from these donuts was our XBox.

Then he sold us a bag of ingredients and we went home.

Already in Perm they read the composition - and there it was “E-shek”... On the 21st I stopped counting. And we realized that we had lost 2 weeks and money on equipment and mixture.

What was eating up the bulk of the money?

The first six months were consumed by unsales. It was kind of crazy.

I conducted analytics and was 100% sure that I could predict demand. Complete bullshit. Complete nonsense. Demand is unpredictable.

Since the donuts are made overnight, you have to figure out how many to bake that night. And then if the weather is sunny, or people have received their salaries, or something else, the donuts run out by 12 o’clock in the morning. Or vice versa - by 10 pm you have nothing sold. We were constantly in this swing.

I remember well the moments when we bring these 50-100 donuts that were not sold to our “T-plus”, make tea and start eating them and discussing plans to take over the world.

That's probably when we got full of them. Well, my partner definitely hasn't eaten them since then.

What was not eaten, I threw in the trash.

How much did one donut cost?

The cost of the donut was 20 rubles. When we opened, we were 100% sure that the full cost was 2 rubles. At first, the donut came to the buyer for 50 rubles, then we raised it to 60.

300% is the average markup in food production. Usually, everyone fights for 400% by reducing costs.

When you mindlessly multiply 60 minus 20 by 1,000 pieces - oh, you're a millionaire. Nothing like that. There are still a lot of expenses, reinvestment and so on.

When did you become profitable?

We thought we were working in a positive direction from the first days. In some ways, we were great, because without any business experience we organized sales in such a way that the first customers appeared on the opening day.

We had a bunch of analytics tables: how many sales, where the money went, where it came from. And we were sure that we were making money. At the same time, if they saw that, for example, there weren’t enough turnovers, they threw in money. You need to open a kiosk - more money.

And six months later, in the summer, we realized that we were throwing money away, but had no profit. We’ve been living in the thirties since our “Dream Job.”

Summer is the low season, especially for delivery. And we opened a kiosk. Sales fell and we sat down to count our millions. Initially, we dreamed of revenue of 100,000 per month - and have long since exceeded it.

And when they calculated the numbers, they discovered that in six months they had lost 1,200,000 - 1,400,000 rubles in the red. And we realized that we were in trouble.

We even seriously discussed the idea that we would divide the losses in half, close down and move on with our lives in the most beautiful “Dream Job”, where we don’t have to think. There is no responsibility: no employees, no taxes, no problems, no obligations. And here you work like a horse from morning to night, and you have minus two hundred lams in six months.

We decided to give the business one last chance: to think about how to redo everything so as to make money. We’ve been trying for a couple of months, it won’t work, it won’t work.

We didn't really believe in success. But a miracle happened.

We redid the recipe, the work system, reduced all costs, fired one cook.

We refocused from delivering donuts to supplying coffee shops. It turned out that in July we sat down to count, July-August we redid everything, and from September the business steadily went into positive territory.

That is, during these 2-3 months you closed 1,400,000 debts?

No. We were still screwed.

But the business began to generate net profit - the money you earn.

We fought back for a long time. Probably only after 2-2.5 years all the loans were closed.

Did you also take out a loan to open it?

Of course, we had nothing.

While planning our business, we had one thought: “What the hell, business. We’ll invest 300 cash and that’s it.”

It turned out, of course, not 300,000, but many times more. I had 100,000 rubles, everything else was loans. My partner had approximately the same situation.

The banks loved us very much because we went to them for loans like going to a store.
