The pies turned out spontaneously. There was puff pastry left in the refrigerator from previous baking and I decided to use it. It was ordinary dough, which is sold in sheets, but I rolled it into a roll - this way I am much more accustomed to working with it and rolling out individual products. For savory pies or samsa, I try to choose dough that is not too rich in the store and usually go by the picture on the package. If cakes with cream are pictured, I don't buy that dough, it's for cakes.
The result surprised and pleased me. I had no idea that puff pastries could be so soft. With this filling, the dough does not flake, the cabbage makes it softer and the pies simply melt in your mouth. The important thing here is not to stew the cabbage, but to fry it. You can add a little water, but be sure to let it evaporate completely.
To prepare cabbage and egg pies on puff pastry, take the necessary ingredients. The final number of pies will depend not only on the quantity of products, but also on the degree of rolling out the dough, as well as on the size of these pies.
Chop the cabbage very thinly with a sharp knife and fry in a couple of tablespoons of oil. I prefer to use melted butter or olive oil for frying. You act according to your taste and capabilities. Remember to stir the cabbage frequently to prevent it from burning.
After 10 minutes, sprinkle with spices and add a little salt. To make the cabbage softer faster, you can add a little water and simmer it under the lid. If you want, for a brighter filling, add a teaspoon of ketchup or tomato paste. I didn't add it.
The water should completely boil away and the cabbage should become dry and soft. When the cabbage is ready, add the green onions. After a couple of minutes, remove the pan from the heat.
Combine cabbage with chopped boiled eggs. Add salt to taste and mix well. The filling is ready.
Cut the dough into equal pieces. Flatten each piece and roll out thinly. Use flour as needed to keep the dough from sticking to your hands.
Place the filling in the center and seal the edges tightly, like dumplings. Then turn the patty over, seam side down.
Place the pies on a baking sheet, brush with sour cream and sprinkle with sesame seeds. Bake in a preheated oven until golden brown, oven temperature 180 degrees. Baking time depends on the properties of your oven, use it as a guide.

We will only use cabbage for the filling. We won't add anything to it except spices.
Let's take:
- 500 g puff pastry without yeast,
- 1 kg of young cabbage,
- 1 tbsp. sour cream,
- salt, spices (coriander, cumin, black pepper, dry garlic, mustard seeds and turmeric),
- sesame seeds for decoration,
- 2 tbsp. vegetable oil.
Step 1. Let's start by thawing the dough. We release it from the packaging and separate the layers. Let them lie down and warm up.
Step 2. Pour oil into the frying pan and heat it. Next, add spices, it will open up better.
Finely chop the head of cabbage and transfer it to the frying pan. Pour the cabbage into the aromatic oil. Fry over high heat for 5 minutes. Add salt and cook for another minute. The pieces will brown and absorb the spices. She will continue further cooking in the oven.
Step 3. Roll out the dough. Transfer the layer to a baking sheet lined with parchment. We put the filling inside and distribute it evenly over the surface.
Cover with the second rolled out layer. Carefully pinch the edges.
For a beautiful crust, grease the surface with sour cream. Sprinkle sesame seeds on it. It remains to make a few cuts through which steam will escape.
