Who among us doesn’t like to have a cup of tea with something sweet in the evening? Let's face it, we all do this sometimes. And instead of eating sweets and chocolates, many bake pies, buns and cakes. Made with your own hands, they give a special home comfort, and their taste is more pleasant.

But constantly pampering yourself with sweet confectionery is still not good. Therefore, there is a way out - to use not only tasty, but also healthy ingredients in baking. Manna with carrots is just one of those recipes. Carrots are a very healthy vegetable. Its vitamins and beneficial properties are retained in it even after any type of heat treatment, albeit in smaller quantities. Therefore, preparing manna according to this recipe with carrots will be an excellent solution for varied and healthy baking.

Although many of us have not liked semolina porridge since childhood because of all these unpleasant lumps, such a story will not repeat itself in semolina. Firstly, the taste of the pie is significantly different from the taste of porridge. Secondly, the consistency itself resembles a pleasant crumbly cupcake, which is certainly an excellent positive feature. If you still doubt that preparing manna is worth it, then read the recipe and see how easy it is to make.

Cooking steps

Prepare ingredients for making dough. Peel the carrots and grate on a fine grater.

Sift flour into a large bowl, add sugar, semolina, baking powder and vanilla sugar. Mix all dry ingredients.

Pour in kefir and mix well with a spoon.

The mass will be thick and lumpy. Add carrots to the dough and stir.

Then add the eggs and mix again. Our dough will begin to change its consistency and become less thick and more homogeneous.

Melt margarine and cool. Wash the lemon, pour boiling water over it, and then dry. Remove the zest from the lemon. Add melted margarine and lemon zest to the dough, mix everything well.

Grease the baking dish with vegetable oil. Place the dough into the mold. The consistency of the dough will not be thick, do not be alarmed, the semolina will swell and as a result, the carrot semolina will turn out crumbly and tender.

Place the pan with the dough in a preheated oven and bake at 180-200 degrees for about 40-45 minutes. Check readiness with a dry toothpick. Cool the cake completely in the pan, then remove from the pan and transfer to a flat plate. At this stage, you can prick the manna with a toothpick and soak it in any syrup or honey.

I decided to cover the carrot manna with a lemon juice-based sugar glaze. I added a little creativity and colored the glaze with yellow dye. The light sourness of the glaze perfectly complemented the taste of the baked goods. So, take a lemon and squeeze about 2-3 teaspoons of juice out of it. Gradually add powdered sugar, stirring vigorously.

When the consistency of the glaze resembles condensed milk, you can add coloring, mix again and cover the manna with glaze.

Give some time for the glaze to harden. This is such a bright and appetizing carrot manna.

With sour cream

To prepare carrot cake with sour cream, you will need the following components:

  • 2 large carrots;
  • 3 eggs;
  • 1 tbsp. flour;
  • 2 tbsp. l. sour cream from 15% fat content;
  • 2 tbsp. l. sunflower oil;
  • 1/2 tsp. cinnamon;
  • 1/2 tsp. soda;
  • 2 apples;
  • 50 g raisins;
  • 1/2 tbsp. granulated sugar.

Carrots, the classic recipe of which can be supplemented with sour cream, are prepared according to the following scheme:

  1. To begin with, you can wash the carrots in running water, peel them with a vegetable peeler and chop them on a grater with small holes.
  2. Next, you need to break all the eggs into a bowl and beat them with a mixer. While beating, add granulated sugar in small portions. Beat the mixture until the granulated sugar is completely dissolved.

  3. Now you can add chopped carrots, sour cream to the beaten egg, pour in sunflower oil, pour in baking soda, slaked with vinegar, sift flour through a sieve, add raisins and cinnamon. The dough should be thoroughly mixed with a spoon until a single mass is obtained. The finished dough should be poured into a rectangular baking dish, greased with sunflower oil.
  4. Then you need to peel the apples with a knife, cut them into slices and place them on top of the dough. The apples need to be lightly drowned in the dough, pressing the slices with your finger so that they are in the center of the pie.
  5. Afterwards, you can heat the oven to 200 °C, put the mold inside and bake the carrot cake for at least 30 minutes. When the cake acquires a golden color, you will need to cover the pan with foil and bake the carrot until done. Use a wooden skewer to check if the cake is ready.

Carrots can be served either hot or cold along with cold milk.

Recipe for “Carrot-orange manna”:

In a bowl, combine kefir and semolina.

Mix well. Leave for 40 minutes for the semolina to swell.

Wash the orange well, dry it and remove the zest from it using a fine grater.

Wash the carrots, peel and grate on a fine grater.

After 40 minutes, add orange zest and carrots to kefir with semolina. Mix well.

In a separate container, combine eggs with sugar.

Beat with a mixer at high speed for at least 5 minutes.

Add the egg-sugar mixture to kefir and semolina. Mix.

Then add melted butter and sifted flour with baking powder.

Mix well. The dough should turn out like thick sour cream.

Distribute the dough evenly in the baking dish (brush with butter if necessary). Bake in an oven preheated to 180 degrees for 40 minutes.

After 40 minutes, remove the manna from the oven, let it cool slightly in the pan, then remove it.

And you can serve it with tea.

The mannik turned out to be soft, tender, aromatic and very tasty.

Preparing the dough

Sometimes you can find recipes for semolina, where the basis is flour and semolina in a 1:1 ratio. But better taste and results can be achieved using only semolina.

1. Let's start by preparing the liquid part of our dough. To do this, take a deep bowl and a blender or mixer. Beat sugar with eggs.

2. Next we need to mix this egg mass with butter or margarine. To do this, it would be best to defrost it first or layer it on thin plates and beat everything well again with a mixer. It is better not to pour in melted hot butter, as this can lead to the coagulation of the protein.

3. The last liquid component is kefir. Just pour it in and mix the liquid for homogeneity.

4. Now you need to pour semolina into all this and mix well. The most important thing in manna recipes is to let the cereal brew. It must absorb some of the liquid, swell and increase in volume. Otherwise, you risk getting something other than a pie.

5. You may ask a very reasonable question: when should you add carrots? Now it's her turn. The vegetable needs to be washed and peeled, and then chopped into a puree on the smallest grater.

And this puree, along with vanilla and a packet of baking powder, needs to be mixed with the dough.

6. Now let's leave it to rest for half an hour.

Carrot manna with kefir - delicious, fluffy and healthy pastries

Carrot manna with kefir is a very tasty, fluffy, and also healthy pastry that can be prepared as a dessert for tea. You can serve this kind of pie just like that without anything, or you can show all your imagination and decorate it, for example, with powdered sugar and berries. You can fill it with milk chocolate, topping, jam or condensed milk.

As a drink, manna goes best with hot tea and compote. You can also safely serve it with homemade sour cream, however, this option is not very suitable for those who are on a diet.

Preparation:

9. Place the manna in an oven preheated to 190 degrees for 30-35 minutes. Be sure to check the readiness with a wooden skewer; it must be dry. Remove the manna from the mold onto a dish, sprinkle powdered sugar on top and lay out raspberries or currants.

Baking a pie

All baking rules come down to temperature, cooking time and shape.

1. The temperature will be standard - 180 degrees. You need to place the pie in a preheated oven, so turn it on to warm up as soon as you prepare the dough.

2. An important element is also the shape of the baked goods. It’s more likely not even she herself, but the way she was prepared. If the mold is silicone, then you don’t need to do anything, in this regard it is simply ideal. It is better to grease a metal mold with oil or sprinkle with flour. You can also line it with baking paper.

3. Pour the risen dough into the mold and level it out. Before doing this, make sure that the carrot puree is distributed evenly. And you can remove the pie to bake for about 30 minutes.

4. Once it has a nice golden color, it will be ready. When serving, you can sprinkle with powdered sugar.

But if there is no sour cream, replace it with 50 ml of kefir.

With cocoa

To prepare carrot cake with cocoa you will need the following ingredients:

  • 150 g carrots;
  • 160 g wheat flour;
  • 20 g cocoa powder;
  • 170 g granulated sugar;
  • 3 eggs;
  • 1.5 tsp. baking powder;
  • 150 ml sunflower oil;
  • 1/4 tsp. table salt.

Step-by-step preparation scheme:

  1. The first step is to preheat the oven to 180°C, rinse the carrots, peel and grate using a small grater.
  2. After the eggs, you need to break them into a separate bowl, add granulated sugar, table salt and beat using a mixer until fluffy. This will take approximately 5 minutes.
  3. Then you will need to add sunflower oil to the mixture and beat the mixture again. It will take 2 minutes to completely stir the oil. Then add grated carrots to the mixture and mix thoroughly using a kitchen spatula.
  4. Next, you need to sift the dry mixture of flour, cocoa and baking powder and combine with the liquid mass using a kitchen spatula. The dough should be homogeneous.
  5. Afterwards, you need to coat the mold, the diameter of which is 24 cm, with 1 tsp. sunflower oil, sprinkle with wheat flour, place the dough in it and place in a preheated oven. Baking will take approximately 40 minutes.
  6. Now you can remove the pie from the oven, check that it is ready by piercing it with a toothpick, and leave to cool. If the toothpick comes out dry, the cake is ready. Chocolate carrot cake should be decorated with berries or fruits, cut into portions and served along with tea or coffee.
