It seems that Italian ricotta cheese and pear are made for each other. Together they create a wonderful duet, this is a kind of upside-down pie, similar to tarte tatin, only with pear and ricotta.

Pie with pear, ricotta and cardamom

So I decided to join in baking from yeast dough, especially since the festive Easter week continues and you can afford different goodies! Pear goes very well with spicy spices and delicate ricotta. The pie turned out fragrant and tasty, I invite you to tea!

Ingredients for Pear and Ricotta Pie:

Dough

  • Butter – 150 g
  • Vegetable oil – 50 ml
  • Sugar - 4 tbsp. l.
  • Salt - 2 tsp.
  • Chicken egg - 1 pc.
  • Wheat flour / Flour – 1 kg
  • Yeast (dry fast-acting “Saf-Moment”) - 20 g
  • Milk – 500 ml

Filling

  • Ricotta – 400 g
  • Pear (hard, sweet) - 2 pcs.
  • Powdered sugar - 100 g
  • Chicken egg (for greasing) - 1 pc.
  • Star anise - 1 piece
  • Cardamom – 3 pcs.

Cooking time: 90 minutes

Number of servings: 6

Recipe for Pear and Ricotta Pie:

Cooking times are indicated without taking into account the test time. From this quantity of products you can make dough for 2 or 3 pies. Dilute dry instant yeast “Saf-Moment” in 50 ml of warm milk, add sugar. Cover with film and place in a warm place until a foamy “cap” forms.

Mix the egg with salt. Sift the flour. Heat the remaining milk. Melt butter and mix with vegetable oil. Pour the flour into a mound, make a well in the center, pour in the fermented yeast, egg and milk. Knead the dough. Add the oil mixture in parts and knead thoroughly until elastic.

The dough is very tasty and does not stick to your hands. Roll it into a ball and put it under film in a warm place. It should come up 2 times. My dough rises in a slow cooker in the “Yogurt” mode for 1 hour.

For the pie we will need 1/2 of the resulting dough. Roll out the dough into a rectangular layer. Peel the pears and cut into cubes. Grind star anise and cardamom (seeds) in a mortar.

Mix ricotta with powdered sugar. Add spices to the chopped pear.

First place the ricotta on the long edge of the dough, followed by the pears.

Fold the filling once. Cut the remaining dough into thin strips. Roll the filling further.

Roll the resulting roll into a circle and pinch the edges. Place a cooking ring in the middle of a baking sheet lined with parchment and place our roll around it. Cover with a towel and leave to rise for half an hour. Preheat the oven to 180 degrees. Brush the pie with egg and bake for 30-35 minutes. Cool slightly and serve.

The filling is very aromatic thanks to the added spicy spices.

When baking, the dough turns out airy and tasty. The pie is moderately sweet.

With nuts

Pear with ricotta in the oven turns into an especially delicious hearty dessert if you add nuts to the treat. In general, any of the latter will do. For example, you can take walnuts or assorted almonds, peanuts, and hazelnuts.

The amount of nuts in the recipe should be determined according to the taste of the cook.

Composition of ingredients

For the dish you need to take:

  • pears – 2 pcs.;
  • ricotta – 55-60 g;
  • honey – 1-3 tsp;
  • cinnamon, nuts.

You can take 2-3 pinches of cinnamon. But 1 large handful of nuts will be enough. All of them should already be shelled.

Step-by-step cooking process

The cooking process includes several stages:

  1. Each washed fruit must be cut into 2 parts. It is necessary to separate the pears lengthwise. You should get approximately 2 equal parts.
  2. The core should be removed from the fruit halves. It is convenient to do this with a teaspoon with a sharp tip. The result should be recesses like in boats, but without holes. By the way, there are special spoons for removing seeds.
  3. Place the pulp from fresh pears - the pulp that was extracted from the middle of the fruit - into a bowl convenient for mixing. It needs to be mixed with cheese. For example, you can do this with a fork. The mass should be homogeneous. It is important to ensure that the pear pulp is well distributed throughout the cheese.
  4. You need to add cinnamon to the same filling mixture. You can add sweetener if you wish. For example, honey, Jerusalem artichoke syrup or white/brown sugar. It's not obligatory. The honey will still be distributed on top of the filling, so it may not be removed from the cheese and nut mixture.
  5. Nuts without shells need to be chopped. You can make their pieces both quite large and small. All that remains is to add the nuts to the filling after the sweetener.

  6. After mixing the mass, place it in small portions into the middle of the fruit with indentations.
  7. Top the filling with liquid honey. If necessary, distribute the product over the treat.
  8. All you have to do is bake the delicacy in the oven for a few minutes. As soon as you notice that the middle with the filling has begun to bubble, you can turn off the heat and remove the dessert. By the way, a microwave is also suitable for preparing it.

Remove the fruit halves from the oven and sprinkle cinnamon on top. Afterwards, you can immediately serve the delicacy to the table.

How to serve a dish

The dessert goes well with tea and coffee. But you can also serve it with various herbal drinks. Trying stuffed pears is delicious both warm and freshly cooked, or completely cooled.

Shortcake with caramelized pears and ricotta

If you don't have it, you can replace ricotta with cottage cheese .

The combination of pear and ricotta is a crazy classic. But in fact, I just opened the refrigerator, took out the food from there and put together the puzzle of this pie.

Recipe

For the test:

  • flour - 180 gr.
  • butter - 80 gr.
  • sugar - 20 gr.
  • egg - 1 pc.

For the caramelized pears:

  • butter - 50 gr.
  • sugar - 50 gr.
  • pears, small - 4 pcs.
  • brandy, cognac or amaretto - 25 gr.

For the ricotta cream:

  • ricotta - 250 gr.
  • egg - 1 pc.
  • flour - 25 gr.
  • sugar - 60g.
  • vanilla extract - 1 tsp.
  • a handful of hazelnuts - optional

Dough

  1. Grind the flour with cold butter, cut into cubes, in a blender or with your hands until the crumbs are wet, make a well in the center, add sugar and add the egg (if small) or yolk (if large).
  2. Using your hands, quickly mix it all into a homogeneous mass and collect it into a ball. If the mixture is crumbly, add a spoonful of cold water.
  3. Wrap the ball in film and refrigerate for 30 minutes.

Meanwhile, caramelize the pears and prepare the cream.

Caramelized pears

  1. Peel and seed the pears and cut them in half.
  2. Mix sugar and butter in a saucepan and cook over low heat until the sugar dissolves, add pears and alcohol.
  3. Simmer until soft. Depending on the ripeness of the pears, it may take 10 to 30 minutes.

Ricotta cream

  1. For the cream, puree the ricotta in a blender or through a sieve, add the egg, sugar, vanilla and mix with a fork until smooth. Add flour and mix lightly.
  2. Roll out the chilled dough between two sheets of parchment into a thin layer of 0.5 cm maximum. Cut out a rectangle equal to the bottom of your mold and four strips 2 cm wide, equal in length to the sides of the mold. Press the dough to the bottom and sides, spread the cream with ricotta, and place the pear halves on top, as if at an angle, cut side down.
  3. If desired, sprinkle with chopped hazelnuts and a pinch of sugar.
  4. The oven is preheated to 180º . Bake for 45 minutes or until golden brown.
  5. The cooled pear pie can be sprinkled with powdered sugar.

Pie with pear and ricotta in a slow cooker

It’s even easier to prepare a delicate cheese and cottage cheese pie if you have a slow cooker.

Ingredients:

  • sifted flour - 1 tbsp;
  • sunflower oil – 50 ml;
  • sour cream – 50 ml;
  • sugar – 50 g;
  • egg – 1 pc.;
  • baking powder – 1.5 tsp.

For the filling prepare:

  • ricotta cheese – 0.5 kg;
  • powdered sugar – 60 g;
  • eggs – 3 pcs.;
  • vanilla extract – 1 tsp;
  • pears – 3 pcs.

You can add apples, some raisins and nuts to the filling.

Step-by-step preparation:

  1. Pour vegetable oil into a deep bowl, beat in an egg, add sugar, sour cream and use a mixer to beat everything well. Then gradually add flour and knead the dough. At the very last moment, add baking powder. Roll out the dough into a circle slightly larger than the diameter of the multicooker bowl - this is necessary to form sides along the walls of the container.
  2. Combine ricotta with powdered sugar, eggs, add vanilla extract and beat with a blender at maximum speed. Place this light mass on top of the dough in the mold.
  3. Peel the pear and cut into slices. Place the juicy pear pieces on top of the filling, gently pressing them down.
  4. Turn on the “Baking” mode and cook for an hour.
  5. After waiting for the end of the program, let the cake brew for a while in the slow cooker, and after 15 minutes, take out the dessert.

Allow the cake to cool before serving; if desired, you can sprinkle it with a mixture of powdered sugar and cocoa powder.

Cinnamon

Pear with ricotta in the oven turns out especially tasty with a variety of spices. The latter will make the taste of the treat brighter and more interesting. Cinnamon fits perfectly into the dish. But you can combine this spice with others according to your taste.

As a result, this recipe produces a very original and unusual treat. It will be relevant to serve even on the holiday table. But in this case, it is important to pay special attention to decorating the delicacy. A variety of berries, herbs, and sweet sauces are suitable for it.

For the dish you need to take:

  • ripe pears (but not too soft) – 4 pcs.;
  • ricotta – 180-20 g;
  • natural liquid honey – 2 tbsp. l.;
  • cinnamon – 6-7 g;
  • shortbread cookies – 25-40 g;
  • powdered sugar and cranberries.

Fruits need to be ripe, juicy and sweet, but not too soft. Otherwise, the pears will not retain their beautiful, appetizing shape when baked. Powder and cranberries are mentioned in the recipe only to decorate the delicacy. Therefore, they can be completely excluded or replaced with other ingredients according to the taste of the cook.

Step-by-step cooking process

The cooking process includes several stages:

  1. Already washed and dried ripe fruits need to be divided into 2 parts. From each half you need to scrape out the middle as carefully as possible. You need to act carefully so that the hole does not end up through. Otherwise, the filling will not stay in the fruit “boats”.
  2. The selected pulp will need to be chopped very finely. You can make miniature cubes. Or another option is to mash the pear pulp with a fork to the desired consistency.
  3. The mass or cubes obtained in the last step should be mixed with ricotta. After that, add liquid honey. Be sure to repeat the mixing so that the filling ends up sweet.
  4. The prepared mixture must be filled into the holes in the halves of the pears.

  5. You need to sprinkle the filling with cinnamon on top. You can also use a mixture of it with other spices.
  6. The delicacy should be baked in the oven at 195-200 degrees for a quarter of an hour. Afterwards you will need to remove the dessert from the oven and sprinkle with cookies. The latter must first be crushed. It is convenient to do this with a fine grater. You can also simply crush the cookies in the bag with a rolling pin or process them in a blender bowl.
  7. All that remains is to put the treat under the grill for another 5-6 minutes. By the way, if the oven does not have such a function, you can use a slow cooker.

Afterwards, you can immediately take a sample from the sweet, delicate delicacy. It’s worth biting into both the pear and the filling to appreciate the unusual combination of dessert ingredients.

How to serve a dish

All that remains is to place the delicacy on a large beautiful plate. Garnish it with fresh/frozen cranberries. You can sprinkle the dessert with powder on top through the finest sieve. Cinnamon is also suitable for decoration. It is also allowed to take other berries, fresh or frozen. By the way, using exactly the same scheme you can prepare a treat from fresh apples.

Open French pie with pears and cheeses

Ingredients

  • puff pastry without yeast – 300 g
  • pears – 3 pcs. medium size
  • semi-hard cheese - (Dutch type) - 70 g
  • blue cheese (“Roquefort”, “Dorblue”) – 90 g
  • eggs – 2 pcs.
  • cream 20% - 100 ml.
  • pepper mixture

Step-by-step cooking recipe

Turn on the oven.

Place the dough in a shallow baking tray on baking paper, forming low sides.

Cut the pears into thin slices and place tightly over the entire surface of the dough.

Grate the semi-hard cheese on a medium grater and sprinkle the shavings on top of the pears.

Crumble the blue cheese with your hands and spread it over the surface of the grated cheese.

Lightly beat the eggs and cream with a whisk.

Pour the mixture over the pie.

Sprinkle freshly ground pepper (or a mixture of peppers) on top.

Place in a preheated oven. Bake at 200 degrees for 20-30 minutes (the time is arbitrary and depends on the quality of your oven) until the top is lightly browned.

Remove the finished pie from the paper. Cool slightly.

Catch the aroma and taste the pie. Perhaps this is exactly what France smells like, and perhaps you just tasted a piece of it.

Pie with pears and blue cheese

An incredibly simple recipe, I advise you to make it and surprise your loved ones or friends with such an unusual pie!) In my opinion, the combination of pears and blue cheese is simply exquisite!

Puff pastry (ready) - 1 layer
Hard pears - 2 pcs.
Eggs - 2 pcs.
Sour cream (15%) – 200 g
Dor Blue cheese – 100 g

This pear and cheese layer cake is delicious! But, of course, it’s not an acquired taste!) Although my family didn’t want to try it at all at first, when they smelled the aroma, they ran into the kitchen and ate it all in about 15 minutes :)

How to make pear and cheese pie:

1. Let the oven heat up. Grease the mold with vegetable oil, roll out the dough and place it in the mold.

2. Cut the pears into slices 0.5 cm thick and carefully place them in the mold.

3. Mix the yolks and sour cream.

4. Beat the whites, and then add them to the sour cream mixed with the yolks. Mix very well, you can use a blender.

5. Pour the egg-sour cream mixture on top of the pears.

6. Place blue cheese cut into small pieces on top.

7. Bake the pie with pears and cheese for about 40 minutes at 180 degrees.

Classic recipe

Pear with ricotta in the oven is most often prepared according to the classic recipe. In this case, a minimum of components is taken for the treat. Honey is best used as a sweetener.

Both natural bee and flower will do. The calorie content of the dessert will ultimately be approximately 78.6 kcal.

  4. When the cheese is already in the cavity, you can optionally sprinkle it with any spices. But this is optional.
  5. The blanks must be placed on a baking sheet or in a mold covered with high-quality parchment. You will need to bake the treat for a quarter of an hour at medium temperature.

When the stuffed pears are completely ready, you can serve them immediately. It’s delicious to try this unusual dessert either warm or completely cooled.

What can I add?

As noted above, such a delicacy can be perfectly complemented with spices. For example, cardamom. It can be poured under the cheese into the hole in the fruit or on top.

How to serve a dish

Place the resulting delicacy on a large flat plate and pour liquid honey on top. For decoration, you can use slices of chocolate or funny miniature figures made from it.

Farmer's pie with pears and cream cheese

Ingredients

  1. 200 g butter
  2. 225 g sugar
  3. 7 pcs yolks
  4. 225 g curd cheese
  5. 250 g flour
  6. 6 g salt
  7. 6 g baking powder
  8. 250 ml milk
  9. Vanilla extract
  10. 25 g corn starch
  11. 300 g pears, peeled
  12. 30 g cane sugar
  13. 30 g water
  14. Almond petals
  15. Pumpkin seeds

How to cook

  1. All ingredients at room temperature Dough: beat 180 g butter and 175 g sugar until smooth. Add 5 yolks, 75 g of curd cheese, stir until combined. Sift 250 g of flour, 6 g of salt, 6 g of baking powder into a separate bowl and carefully mix into the yolk-curd mass. Knead the dough and place in the refrigerator to cool completely (at least 3 hours).
  2. Cream: pour 250 ml of milk into a saucepan, add vanilla extract and bring to a boil, but do not boil. In another saucepan, combine two yolks, 50 g of sugar, 20 g of corn starch and grind until white. Next, pour hot milk into this mixture in 3 additions, stirring vigorously. Place the saucepan on the fire and stir vigorously, bring to a boil, strain and leave to cool. Add 150 g of curd cheese to the cooled cream and beat thoroughly.
  3. Filling: Peel and seed the pears and cut into large cubes. Place in a frying pan, add 20 g butter and 30 g cane sugar. Caramelize the pears over medium heat. Mix 30 g of water and 5 g of corn starch, pour in a thin stream into the pears, stirring constantly, bring to thickening, remove from heat and let cool.
  4. Oven. Preheat to 160°. Take a mold with a diameter of 18 cm, a side height of at least 6 cm and distribute the cold dough over it. Distribute 1/3 of the cream onto the base, then pears and fill with the remaining cream. Sprinkle pumpkin seeds and almonds on top. Bake for 1 hour 20 minutes. The finished pie will jiggle slightly in the center and brown around the edges. The pie should be cooled completely, and then only cut.

Final tips

Baked pears stuffed with ricotta can be prepared for 2-3 days. That's how long they last in the refrigerator. Just remember to cover the container with pears well before storing.

The carbohydrate content in the dessert cannot be called low, that is, it is better to eat such pears before lunch. Or at least after a good workout.
