General principles
You can prepare cottage cheese pie with apples using different recipes. Cottage cheese can be added to both the dough and the filling; both cooking options give excellent results. The main thing is to choose the right ingredients for baking.
Cottage cheese must be fresh; do not try to “reanimate” a stale product by adding it and pies. The dessert will turn out tasteless, and the effort and food will be wasted. To ensure that the filling or cottage cheese dough is homogeneous, it is recommended to rub the product through a sieve. And if you have a blender at hand, then it is better to use this technique to get rid of grains.
You can choose the fat content of cottage cheese at your discretion; the optimal solution would be a product with a fat content of 5-9%. Low-fat cottage cheese is less healthy, and if you take a very fatty product, the baked goods will turn out to be very high in calories.
It is best to take apples with a sweet and sour taste; they will most harmoniously complement the taste of baked goods.
Cottage cheese pie with apples
The baked goods made from dough made from cottage cheese are fluffy and soft. Let's make a pie using a simple recipe.
For baking we will prepare:
- 250-300 gr. flour;
- 150 gr. Sahara;
- 200 gr. cottage cheese;
- 2 eggs;
- 200 gr. butter;
- 1.5 teaspoons baking powder;
- 2 tablespoons starch;
- 3 apples;
- sugar and cinnamon are added to the filling to taste;
- a little semolina and butter to prepare the mold.
Let the butter sit on the kitchen counter until it becomes pliable. To make this happen faster, cut the butter into small cubes. Add granulated sugar, rub well with a spoon or beat with a mixer.
Add the eggs, continuously whisking the mixture until smooth and fluffy. Next you need to add cottage cheese to the mixture.
In a separate container, mix the remaining dry ingredients - flour, starch and baking powder. Sift this mixture through a sieve into a bowl with the prepared curd-butter mixture. Knead the dough, soft in consistency, and place it in the refrigerator for about half an hour.
While the dough is cooling, you need to preheat the oven to 190 °C, prepare the mold and make the filling. The baking dish should be greased with oil and the bottom and walls should be sprinkled with semolina.
The filling is prepared as simply as possible ; peel the fruit and cut it into slices or slices. You can also use grated fruit. Sprinkle apple slices with sugar mixed with cinnamon.
Take out the chilled curd dough and divide it in half. Roll out one part to the size of the baking dish, lay the prepared apple slices on top of the dough layer. Bake in the oven for about 50 minutes.

Let's prepare a pie with a triple filling - with bananas, apples and cottage cheese.
Required Products:
- 500 gr. ready-made yeast-free puff pastry;
- 500 gr. cottage cheese;
- 2 apples;

Roll out the dough into a layer on a silicone mat or baking paper. Grind cottage cheese with egg and sugar, you can add vanillin. Grate the apples, season with cinnamon, add sugar if necessary. Cut bananas into circles.
Place a layer of cottage cheese in the form of a rectangle in the center of the rolled out layer. Place banana slices and grated apples on the cottage cheese. Cut the dough on both sides of the filling into strips 3-4 cm wide, the cuts should be placed at an angle of 45 degrees. We begin to place the cut strips of dough on the filling one by one, first on one side, then on the other. As a result, we will get a “braid”. Place the pie in the oven for 45 minutes at 190 degrees.

Grandma's Pie
To return to childhood for a moment, you should prepare a delicious pie with pumpkin, apples and cottage cheese. This old grandmother’s recipe can be slightly “modified”, adapting it to modern realities. So, let's start preparing the grated pie with curd and fruit filling.
Let's prepare all the ingredients so that we don't get distracted during the cooking process:
- 300 gr. flour;
- 3 eggs;
- 100 gr. butter;
- 6 tablespoons of sour cream;
- 8 tablespoons sugar;
- 300 gr. apples;
- 350 peeled pumpkin;
- 350 gr. cottage cheese;
- 6 tablespoons potato starch;
- 1.5 teaspoons baking powder.
We start by kneading the dough, since it will need to rest before baking. Grind 1 egg with 3 tablespoons of sugar, add soft butter, beat. Then add sour cream, baking powder and sifted flour. Mix everything quickly and divide into unequal parts. Place a small part (about a quarter of the total volume) in the bag in the freezer. The larger one is placed in the refrigerator for 40 minutes.
While the dough is chilling, let's make the filling. Cut the pumpkin into cubes and boil in a small amount of water or in a double boiler. Drain the water and grind the cooked pumpkin into puree using a blender. Grate the apples. Mix pumpkin puree and apples, add 3 tablespoons of starch and 2 tablespoons of sugar, mix. For the curd layer, you need to beat the cottage cheese with 2 eggs and the remaining sugar and starch.
The consistency of the curd and curd filling should be approximately the same.
Turn on the oven, it should have time to warm up to 180 degrees. Remove the dough from the refrigerator and place it in a greased pan, spreading it over the bottom in an even layer and forming high sides.
On curd dough with meringue
Let's make a delicious meringue pie. This dessert has a delicate taste and amazing aroma. In addition, it looks beautiful, so it can be prepared for the holiday table.
We will prepare products according to the following list:
- 200 gr. cottage cheese;
- 70 gr. sour cream;
- 260 gr. sugar (we use 90 grams of sand for the dough, 120 grams for the meringue, and 50 grams for the filling)
- 2 eggs - the yolks will be used to prepare the dough, and the whites will be used for baking meringues;
- 250 gr. flour;
- 1.5 teaspoons baking powder;
- 400 gr. already peeled apples;
- a pinch of vanillin;
- 0.5-1 teaspoons of cinnamon.
Place cottage cheese, sugar and yolks in a large bowl, grind until smooth, add a little vanilla to taste. Add sour cream, baking powder and sift the flour. Mix. The dough turns out soft and slightly sticky.
We take out a mold with a diameter of 25-26 cm, and place a circle cut out of baking paper on the bottom. Lubricate it with oil. We put the prepared curd dough in the mold and with our fingers, which we will periodically “dip” into the flour, distribute it along the bottom, making small sides.
The layer of dough will be thin, don’t be alarmed, the cake will rise during baking.
Cut the apples into arbitrary, but not thick, pieces. Mix fruit with sugar and cinnamon. Place the fruit on top of the dough and smooth it out. Place the cake in a hot (180°C) oven for 25-35 minutes.
Towards the end of the baking time, we begin to prepare the meringue. To do this, beat the egg whites with a mixer, gradually adding granulated sugar. You need to beat the mixture to a fluffy, stable foam. If desired, you can add a little lemon juice or a few crystals of citric acid to the whipped whites.
Advice! When preparing meringue, it is better to use sugar not in the form of sand, but in the form of powder. So, it will dissolve better, and the meringue will turn out more fluffy.
We take out the blank of our pie and turn the oven temperature control to 160 degrees. Place the meringue on the surface. You can spoon it out and simply smooth it out, or you can use a pastry bag and pipe the meringue into small pyramids, placing them close to each other. We send the workpiece to bake for another 50 = - 20 minutes, it is important that the whipped whites in the top part of the pie are browned, but not burnt.

Peel apples (preferably the same size) from skins and seeds, cut into 2 halves. Place a date half in the middle of each half. Instead of dates, you can add any nuts, dried apricots, or prunes to taste.
Remove the dough from the refrigerator, divide into two parts, one of which needs to be made a little larger than the other. Roll out a smaller portion of the dough to fit the mold. Line the pan with parchment and lay out the rolled out dough. Place apples on the dough, center down.
Lightly sprinkle apples with brown or regular sugar and cinnamon (optional). Roll out the rest of the dough and cover the apples with it. Carefully pinch the edges. Using a pastry brush, brush the top of the pie with milk. Place the formed pie with apples in an oven preheated to 180 ºC and bake until done for about 50 minutes. The pie with cottage cheese and apples is ready in the oven!
If the top of the pie gets too brown at the end of cooking, you can cover it with foil. When serving, sprinkle the finished curd pie with apples with powdered sugar.
