Brine from cucumbers, tomatoes or cabbage can be used not only for making soups, but also for various baked goods, such as pancakes, cookies and pies. When kneading dough based on this ingredient, the products are tender, crumbly and without a salty aftertaste. Therefore, the brine recipe can be used to prepare both sweet and savory baked goods in the oven.

Pickle pie, our family recipe

My mother told me the recipe for this wonderful pie.
I first tried it at the age of 7 years. I would never have guessed that it contained brine. The pie is very tasty and tender. It is easy and quick to prepare and requires a minimum of ingredients. I am sure that every housewife has them at home. This dish is well suited for treating guests or just for a pleasant family tea party.

I am happy to share the recipe for this amazing pie.

Banana pancakes

  • 2 bananas
  • 4 small eggs
  • A pinch of salt
  • A pinch of cinnamon, cardamom, vanilla (optional, to choose from)

Step 1. Mash the ripe bananas with a fork until smooth.

Step 2. Beat eggs, add mashed banana, beat everything together.

Step 3. Add spices and add a little salt.

Step 4. Fry in a frying pan greased with vegetable oil, like pancakes or pancakes.

Tip: You can wrap these pancakes with fruit filling, such as pieces of apples, tangerines or oranges.

Step-by-step recipe with photos:

Mix all ingredients except flour.

Mix everything using a blender, gradually adding flour. We monitor the consistency of the dough. It should be like sour cream. If it seems that there is not enough flour, then add more.

After adding all the flour, mix the dough thoroughly again. The mass should be homogeneous, without lumps.

Grease the baking pan with vegetable oil or butter. Lay out the dough.

Add fresh or thawed berries to the dough. You can take raspberries, cherries, black currants and others. To your taste.

The berries need to be laid out so that they drown in the dough.

Leave some berries to decorate the pie.

Place the dough in an oven preheated to 180 degrees for 25-30 minutes.

Check the readiness of the pie with a toothpick. Cooking time may vary depending on the power of your stove.

The result was a lush, very beautiful and tasty pie. You can't feel the brine in it at all.

If desired, you can decorate the pie with powdered sugar and fresh berries.

Useful tips and tricks

Brine pie (recipes in the oven and in a slow cooker have common preparation features) turns out crumbly and with the specified taste, provided that the following conditions are met during the baking process:

A pie made with brine turns out tender and without the aftertaste of spices, unlike dough prepared with a marinade. Therefore, it is not recommended to replace brine with marinade in a recipe. The most important condition for baking is maintaining the product's holding time in the oven.

How to make a brine pie with lemon zest:

Pour sugar into a bowl, beat in eggs. Beat the mixture with a mixer until smooth, similar to liquid cream. Pour in the brine and stir.

Add bulk ingredients: flour, soda, citric acid, ground tangerine peels. Instead of baking soda and citric acid, you can add baking powder.

Mix everything thoroughly so that the dough turns out the same as for charlotte.

Grease the pan with butter and lightly sprinkle with flour. Place the dough into it.

Place in an oven heated to 200°. After 5 minutes, reduce the temperature to 180° and bake for 40 minutes until a beautiful golden brown crust.

Remove the pie from the oven and cool slightly.

Separate the edges of the pie from the sides of the pan, pry the cake with a spatula. Turn it over on a towel. Leave until completely cool.

Place the cake on a plate and sprinkle with powdered sugar. Cut into portions.

Pie with berries: a bright dessert

For this option, take fresh berries. Otherwise, the recipe resembles the version with jam. For the test you need to take:

  • 500 grams of flour;
  • 85 ml sunflower oil;
  • 200 grams of sugar;
  • a third of a teaspoon of ground cinnamon;
  • a teaspoon of soda;
  • a teaspoon of vanilla sugar.

For the filling take:

  • one hundred grams of raspberries;
  • the same amount of red currants;
  • 50 grams of black currant;
  • 12 grams of starch;
  • 150 grams of sugar.

The berries are covered with sugar and left for thirty minutes. The brine is filtered, sugar is added to it and heated, but not brought to a boil. Add oil. The flour is divided into three parts. Two of them are mixed with vanilla sugar, cinnamon and soda. Add to brine. Knead the dough, gradually adding the remaining flour. Cover with film for twenty minutes. Then take two-thirds of the dough and roll out the fin.

Grease the baking dish with oil. Then spread the dough and form the sides. Pierce the thick mass with a fork in several places. The berries are filtered, placed on the pie and sprinkled with starch. The remaining dough is rolled out and cut into strips. They decorate the pie. A spoonful of sugar is dissolved in warm water. The resulting syrup is used to lubricate the sides of the pie, as well as the lattice. The berries are also sprinkled with sugar. Bake the pie for about 40 minutes in the oven at 180 degrees.

Pancakes with brine

Pancakes are probably the most economical flour dish, because baking them requires very little flour, and milk can be diluted in half with water, use only water, and even knead the dough with brine from cucumbers or tomatoes. But the brine should not be spicy, very salty or sour due to the large amount of vinegar. The taste of pancakes depends on the spices that are in the brine. But in ready-made pancakes they are not so pronounced. Therefore, you don’t have to worry that brined pancakes will smell strongly of dill or garlic. Only a slight piquancy will remind you of brine. The pancakes turn out thin, soft, with lacy edges. These pancakes can be stuffed with savory filling or eaten with sour cream.

Champagne jelly with grapes and tangerines

  • 2 glasses of sparkling white wine (instead of champagne, you can take clarified fruit juice, grape or apple, you can use syrup from canned pineapples, but it is better to dilute it with water)
  • 200 g seedless grapes
  • 2 tangerines
  • 1 packet of gelatin
  • Powdered sugar to taste

Step 1. Wash the grapes and remove the ridges.

Step 3. Place the fruit in a cake pan or any other shape, you can use muffin tins or bowls.

Step 4. Pour gelatin with a small amount of water and leave to swell. Then heat until completely dissolved.

Step 5. Mix gelatin with sparkling wine. Add powdered sugar to taste.

Step 6. Pour the gelatin mixture over the fruit. Leave it in the refrigerator for several hours until it hardens.

Step 7. Before serving, turn the jelly onto a plate.

Preparation:

Pour sugar into a saucepan and break the eggs. Using a whisk, beat the mixture until foam appears. Pour in the brine.

Continuing to beat, add flour one spoon at a time. Thanks to this method of kneading, you will have a lump-free dough. The dosage of flour is approximate, so focus not on the number of spoons, but on the consistency of the dough. Add citric acid and soda.

Stir until bubbles appear. Pour in vegetable oil and stir. The dough should be quite liquid.

Now start baking pancakes.

Grease the frying pan with oil and heat it well. Reduce heat to medium. Pour half a ladle of dough into the middle of the pan. Tilt the pan in different directions until the dough takes the shape of a circle.

If the pancake is not completely smooth, do not add more batter. Leave it as is. When the bottom side of the pancake is browned and the top is slightly dry, carefully turn it over to the other side and cook until done.

Stack the pancakes and serve.

Chocolate pie

This cake has a dense texture, a bright chocolate color and a delicate vanilla aroma. For this baking option you need to take the following products:

  • a glass of brine;
  • a couple of tablespoons of cocoa;
  • 2.5 cups flour;
  • a glass of sugar;
  • a third of a glass of vegetable oil;
  • a teaspoon of soda;
  • two grams of vanillin.

Brine, vanillin, sugar and butter are mixed in a bowl. Add more soda, cocoa and sifted flour. Knead the dough. The result is a thick chocolate mass. Pour a little oil into the multicooker bowl. Set the “Baking” mode. The pie takes a little over an hour to prepare. The readiness of the dessert is checked using a match. The finished dessert is allowed to cool slightly in the bowl, after which it is taken out and cut into pieces. The easiest way to decorate is to sprinkle with powdered sugar. To ensure that it lies evenly, you need to sprinkle it through a strainer.

Delicious pies can be prepared using brine. It is not felt at all in the butter dough, but gives it a porous structure. Moreover, such dough can be shortbread. Prepare a pie with cucumber or tomato brine. The main thing is that no herbs or other spices from the jar get into the dough.

Multicooker pie

This pickle pie recipe is perfect for the slow cooker. It's easy and quick to prepare. The ingredients used are also the simplest. To prepare the baked goods you need to take:

  • a glass of brine;
  • a glass of sugar;
  • a third of a glass of vegetable oil;
  • a teaspoon of soda;
  • three glasses of flour;
  • a little vanilla sugar.

Mix brine, butter, and both types of sugar in a cup. Beat with a mixer. Add soda and flour, knead again. You should get a thick dough. Place it in the multicooker bowl. Set the “Baking” mode and cook for an hour. Then you can turn the baked goods over. Then continue baking for another twenty minutes in the same mode. This will help ensure an evenly baked pie. If the multicooker is old, you can grease the bowl with a piece of butter.

Ingredients

Dough:

  • pickle from canned tomatoes 1.5 tbsp.
  • fresh pressed yeast 35-40 g
  • sugar 1.5-2 tbsp. spoons
  • sunflower oil 2 tbsp. spoons
  • flour (how much dough will take) approx. 300 g
  • salt a small pinch (note that the brine is salty)

Filling:

  • white cabbage 500 g
  • onion 1 head
  • carrots 1 pc.
  • tomato paste 50-60 g
  • salt, sugar to taste
  • vegetable oil
  • yolk and milk to cover the surface
  • flax seeds for sprinkling

Which filling should you choose?

...any! If we talk about lean ones, then it can be boiled apple, as in the recipe in the link, or apple with cinnamon (raw), potato - as for lean yeast pie, juicy cherry (you can use frozen berries), from any jam. You can also stew cabbage with carrots and onions, or combine mashed potatoes with mushrooms fried with onions, as I recently did for dumplings.

There are plenty of quick fillings too! Potato (with butter, onion and egg), with cabbage and egg, cottage cheese, meat, with rice and egg, with cheese and herbs... and many, many others! Open your refrigerator and use your imagination!

  • 250 g flour
  • 100 g sugar
  • 100 g butter
  • 100 g mayonnaise
  • 1 egg

Step 1. Rinse the raisins and dry.
