Add half the flour to the butter beaten with sugar, egg and zest and mix. Combine the remaining flour with soda, potato starch and knead the dough. Divide the dough into two unequal balls and chill for 20 minutes.

Roll out a large ball to form a base for a high-sided pie. Next, you need to cut the peeled apples in half, freeing them from seeds and partitions.

Place a little jelly and almonds in each apple center, sprinkle with sugar and raisins. Roll out the other half of the dough thinly and cover the apples on top, pressing down lightly. Prick with a fork, brush with egg white and sprinkle with grated almonds.

  • Egg yolk - 2 pcs
  • Vanillin
  • Starch - 15 g

To prepare this version of the pie, you need to mix the butter and sugar with a mixer, gradually adding the egg, flour in parts and slaked soda. Knead the shortbread dough. Put it in the cold and make the curd filling: thoroughly mix the cottage cheese, sugar, yolks, vanillin, starch and lemon juice. Add milk and mix well.

Then take the mold and spread the dough in a thin layer, forming a high edge. Pour the filling onto the pie and bake for 30 minutes at 170 degrees Celsius. Prepare the meringue: beat the whites with salt until stiff, gradually adding sugar. Spread the meringue beautifully on the pie and bake for another 10 minutes at 160 degrees. If desired, decorate the pie with almond shavings or berries.
