- One cup (250 g) ground almonds. You can buy almonds immediately ground, but it is better to grind them yourself using a food processor.
- Half a teaspoon of ground cinnamon.
- Sugar (one third of a glass).
- Almond essence (teaspoon).
- White of two eggs.
- Several almonds, grated and whole, for decoration.
Preheat oven to 120°. Half of the prepared sugar must be mixed with almonds and cinnamon. In a large bowl, beat the egg whites. As soon as the white begins to change color, increase the beating speed and gradually add the remaining sugar. It is better to do this with a mixer, at the light speed stage. Next, place the whipped whites in a large bowl, continue to beat them, but by hand, adding in a thin stream the mixture of almonds with sugar and cinnamon, and also adding the essence.
On a baking sheet lined with baking parchment, carefully place the baking mixture in a contented manner. The top of the cookies can be decorated with whole or grated almonds. Bake for about 30 minutes, until golden brown.
Recipe 5: Macaroons flakes (with photo)
Nothing complicated, it takes very little time to prepare, and you are guaranteed to enjoy it. Immediately after baking, the cookies are soft, but very quickly become crispy and crumbly. This is if you bake on a baking sheet. If you use ramekins, the edges will be crispy, but the middle will remain soft (this will increase the baking time).
- 170 grams of almonds
- 3 eggs
- 4 tbsp. spoons of sugar
- 40 grams of flour

If you, like me, have unpeeled almonds, then you need to pour boiling water over them for 3-4 minutes.
After that, drain the water, now press on the nut - it peels off the skin very easily. The almonds need to be dried, easier in the oven for 6-8 minutes at 60 degrees.
Grind almonds using a blender. Be sure to add a little sugar so that the fatty crumbs do not stick together into lumps.
The finer you grind, the more uniform the cookie structure will be.
Take the eggs and separate the whites from the yolks. Beat the yolks well with sugar.
Combine the yolk mass with almond flour and mix thoroughly.
Add flour and mix well again.
Beat the whites and carefully combine with the almond-yolk mixture.
The consistency of the dough is fluid, but not liquid. Using a pastry bag or simply using a spoon, place small balls of dough onto a baking sheet (preferably on greased parchment). Leave more space between the cookies - the dough will spread.
I put some of the dough into molds. Sprinkle almond flakes on top.
Preheat the oven to 180 degrees and bake for 30-40 minutes. The longer you bake, the drier the cookies will be.

Cooking process
Let's start with the test. Pour the sugar into a small saucepan, add 40 milliliters of water and cook the caramel syrup. In a deep bowl, mix almonds with zest and wheat flour. Pour in the caramel syrup and mix until it forms coarse crumbs. Place the bowl in the refrigerator for two hours. After this, turn on the oven to 110 degrees and continue preparing the dough. Beat the egg whites with 120 grams of powdered sugar and add them to the cooled almond-sugar mixture. Add baking powder and mix. Combine corn flour with the remaining powdered sugar, form cookies with a spoon and roll them in this mixture. Grease a baking tray with oil or cover with parchment paper. Place cookies on it and place in the oven. It should be baked for about 40-45 minutes. Let the finished almond cookies cool slightly and remove from the baking sheet. It turns out crumbly, tasty and has a pronounced citrus aroma.
Shortbread macaroons with raspberry jam
Ingredients:
- Raspberry jam - 250 gr.
- Flour - 225 gr.
- Butter (softened) - 250 gr.
- Ground almonds - 125 gr.
- Sugar - 100 g + 2 tbsp. l.
- Vanilla extract - 1 tsp.
General information:
- Cooking time: 75 minutes ;

Cooking method:
- In a large bowl, beat the butter with 100g sugar and vanilla extract until creamy. Continuing to beat at low speed, add flour and ground almonds to the butter mixture.
- Form the dough into a ball, place in a clean bowl, cover with cling film and place in the refrigerator for 30 minutes.
- Turn on the oven to preheat to 170 degrees. Line two baking sheets with parchment.
- On a floured surface, roll out the dough to a thickness of 3 mm. Use a flower cutter to cut out shapes from the dough. Cut out a small round center from half the flowers.
- Place the pieces on prepared baking sheets at a distance of 2.5 cm from each other, sprinkle with 2 tbsp. spoons of sugar, place in a preheated oven, bake the cookies until golden brown, about 10–15 minutes.
- Remove the finished cookies from the oven and let cool completely. Place a little jam on the whole flowers, cover with the flowers without the middle, and press down lightly.

This delicious dessert will not leave anyone indifferent. So even ladies on a strict diet will not resist the temptation to try such baked goods. Let's find out how to make these tiny, delicious macaroons. The calorie content of such a dessert will be about 400-420 kilocalories per 100 grams of product. Moreover, the weight of one product is about 30-35 grams.
So, if you decide to prepare such a dessert, then make sure you have the following ingredients in the kitchen: almond flour - 180-200 grams, 100 grams of granulated sugar, one egg, zest of one orange, five drops of vanilla essence and a little powdered sugar for sprinkling.
