  6. At the next stage, you need to take out the dough and quickly roll it out into a thin layer. It is better to divide the dough ball in half, leaving one part in the refrigerator so that the mass does not have time to heat up. Forming products from a warm product is very problematic.
  7. Now you should cut out small circles in the formed sheet using a glass or a special shape.

  8. Then you have to take one donut, dip it in granulated sugar, lightly press the product against it, then fold it in half, place the donut again in the sweet composition, then fold the “ear” again, treat the top of the future cookie with sugar.
  9. In this way, you have to arrange all the blanks, placing them on a baking sheet covered with parchment paper.

All that remains is to send the baking sheet for 20 minutes. into an oven preheated to 180°C. To prevent the dough from burning during baking, you need to place a bowl of water in the lower part of the oven.

What can I add?

To obtain several types of cookies, it is recommended to supplement the dessert recipe with cane sugar or fruit jam. Such components will not only provide a varied color of the treat, but will also allow you to obtain a special taste of the treat.

Decoration

Curd ears

If the cottage cheese is dry or sour for your taste, use it on cookies.

— 700-800 g of cottage cheese; — 250 grams of butter; - 3-4 glasses of flour; - 1 teaspoon of soda; - sugar for sprinkling.

Place the cottage cheese in a bowl, mash with a fork if it is grainy.

Grate the butter and place in a bowl with the cottage cheese. Pour in flour, add soda.

Rub all ingredients into homogeneous crumbs with your hands.

This is my favorite childhood pastry, simple and affordable. If you like sweets, be sure to prepare ear cookies according to this recipe with margarine.


This recipe contains no butter, margarine is used. The main thing is to take high-quality, without harmful additives such as palm oil.

Ingredients:

  • 400 g cottage cheese;
  • 200 g margarine;
  • 480 gr wheat flour;
  • sugar to taste;
  • 1/2 teaspoon soda;
  • salt.

Knead the dough: chop the margarine. Then grate on a coarse grater, mix with grated cottage cheese, and add salt.

I use a food processor for mixing.

Mix the curd mass with flour and soda. Knead soft, tender dough.

Roll out the cottage cheese mixture, cut out circles for the cottage cheese cookies.

Dip each curd circle into granulated sugar.

After this, fold the circle in half so that the sweet is inside.

By the way, you can put berries or thick jam inside.

Dip the resulting semicircle into sweet sand again, bend it in half again, with the sugar inside.

The result will be a quartered circle with a sweet outside.

To give the ears of cottage cheese cookies a more interesting shape, you can lightly cut its edges, or you don’t have to cut them.

  2. In the meantime, you need to sift the flour along with baking powder and salt into a convenient bowl, then grind the pre-cooled butter here, passing it through the small cells of a grater. In order for the butter shavings to immediately turn into separate crumbs, the fat must be dipped into flour, and only then run the piece along the sharp teeth.
  3. Now you should add processed cottage cheese, mayonnaise, vanillin and sour cream to the flour mixture.
  4. The resulting mixture must be quickly kneaded to the structure of a not very stiff dough, then wrap the molded ball in cling film, then send the product for about 15–20 minutes. into the freezer.
  5. While the cookie base is cooling, you need to prepare the cream. To do this, you need to place egg whites, powdered sugar and lemon juice into a blender bowl, then thoroughly beat the mixture until you obtain a thick and homogeneous mass that holds its shape.

  6. When the dough has cooled well, you need to roll it into a thin rectangular layer, spread a layer of coconut flakes over it, and use a rolling pin to easily press the white curls into the formed crumpet.
  7. After this, you need to lubricate the surface of the sheet with the resulting cream, then roll both ends into tubes, directing them to the middle of the layer.

  3. Now you need to mix the creamy mixture with vanilla sugar, a pinch of salt, cottage cheese or homemade cottage cheese, rubbed through a sieve.

  3. Sprinkle the entire surface of one layer with sugar, the amount of which depends on taste preferences.

  4. Place a second, thinly rolled layer on top and press it tightly against the first.

  5. Sprinkle the entire surface with granulated sugar, determining the amount to taste.

  6. Fold the sprinkled layers in half.

  8. We begin to roll up the layer, forming a roll on both sides, reaching the middle.

  9. We press the resulting double roll a little and begin to cut off small pieces (1-2 cm wide) - the future cookies.

  10. Place each piece in a vertical position and roll it out lightly until a cookie is about 0.7 cm thick.

  1. Prepare the oven: preheat it to 200 degrees. Place the formed ears on a baking sheet lined with parchment paper.

  2. Sprinkle the products on top with a small amount of sugar, which forms a caramel crust when baked.

  3. The resulting mass must be mixed well, then add sifted flour to it in portions.

  4. Now you should thoroughly knead the soft and tender dough, keep it under a cotton cloth for about 15–20 minutes, and then roll out the product into a layer approximately 4 mm thick.
  5. For those who want to get a sweeter dessert, the surface of the sheet can be sprinkled with erythritol, which is an excellent substitute for regular granulated sugar.

  3. We don’t worry when the flour runs out and the dough is still quite liquid - that’s how it should be.
  4. Place 1 teaspoon of the finished dough on a baking sheet greased with butter.
  5. The process of placing the products in the oven will take 7-10 minutes. The main thing is to dry it out. Otherwise, the cookies will not take the desired shape.
  6. The cookies, barely taken out of the oven, are lifted with a spatula and the sides are fastened according to the principle of an ear or a calla lily flower. We do this quickly, as the dough cools quickly and becomes brittle.

  6. Next, you need to roll out the molded ball into a thin layer, up to about 5–7 mm, and cut out small “ears” in it using a mold.

The hot baked goods should be cooled slightly, placed on a serving dish, and the cookies should be sprinkled with powdered sugar and almond flakes. You can also decorate the treat with sprigs of red currants, the berries of which contrast perfectly with the ruddy delicacy.

The method of preparing the presented baked goods is not particularly difficult even for novice cooks, if you take into account the following useful recommendations:

  • The “ears” will turn out to be very airy and pleasantly tender if you use a high-fat dairy product as the basis for the curd dough—approximately 9–15%. At 0%, the finished treat will acquire a “rubbery” taste.
  • The butter included in the baking should not have any additives or odors uncharacteristic of a natural product. In addition, this component can, but is not advisable, be replaced with spread or margarine.

  • You should not skimp on the amount of cottage cheese - the more of it included in the dough, the more crumbly the baked pastry will be.
  • To create “Ears” with a variety of flavors, you should choose as additional components such additives as candied fruits, cinnamon, poppy seeds, vanilla, and seeds that can be combined with cottage cheese.
  • Practical advice from experienced confectioners will help you obtain soft products: place a fireproof dish with water on the bottom of the oven. To create cookies with a crumbly texture, this technique is not necessary. A bowl of liquid placed in the oven will also perform a second function - it will prevent the baked goods from burning.
  • If you still failed to follow the process of heat treatment of the workpieces, and such a mistake happened as a slightly burnt baked goods, do not be upset, as another life hack will come to the rescue - you need to lightly rub the blackened side of the products through the small cells of a grater.

The simplest option for which you don’t have to prepare the dough. This recipe will come to the rescue when guests are on the doorstep and you want to surprise them with your culinary skills. Using poppy seeds and chocolate you can make cookies more spectacular and more tasty.

Peanuts must first be crushed. To do this, put it in a plastic bag and go over it with a rolling pin. You can use a coffee grinder to grind, but if you miss the moment, the nuts will turn into powder.

Required:

  • Puff pastry – 1 layer.
  • Butter – 20 g.
  • Peanut.
  • Sugar – 40 g.
  • Poppy – 20 g.
  • Sprinkles.
  • Chocolate bar – 50 g.

Step by step process:

Remove the dough from the freezer. Leave in the refrigerator until completely thawed. Defrosting in the microwave is strictly prohibited. It will lose its structure and the cookies will turn out wooden.

Roll it out. The thickness of the layer should be no more than 3 mm. Sprinkle with sugar, then poppy seeds.

Press down. Bend the edges towards the middle.

Sprinkle with sugar and poppy seeds again. Fold in half again.

Cut into rolls. Try to make the size the same. Thickness 1 cm.

Line a baking tray with baking paper. Lay out the blanks.

Preheat the oven. Temperature 180°C.

Place the baking sheet with the ears. Bake for 20 minutes.

Break the chocolate into pieces. Place in a small microwave safe bowl. Heat in pulses, stirring occasionally with a silicone spatula.

Add a piece of butter. Stir.

When the ears have cooled, use a silicone brush to brush the surface of the cookies with liquid chocolate.

Roll in confectionery sprinkles or chopped peanuts.
