We take out the pan, check how baked the potatoes are and, if they are almost ready, sprinkle the top with cheese, leave the pan in the oven for about 5 more minutes if we want to get just melted cheese, or for 7-10 minutes, during which it will get a golden brown crust.
After a few minutes, when the casserole has cooled slightly, divide into portions and distribute onto plates using a wide spatula.
Bon appetit!
There are legends that this recipe was invented by a certain Dubois, the cook of Count Orlov. However, in fact, Monsieur Dubois has almost the same attitude towards French meat as Monsieur Olivier has towards the well-known salad. The dish that Dubois came up with did not contain vegetables or cheese, and only bechamel was used as a sauce. But is it worth discussing this now? The fact remains: the French meat recipe lives on, develops, changes and improves. This is really worth talking about.
Basic recipe
According to reviews from those who have already tried this recipe, it is basic. Based on it, you can come up with many dishes, for example, by adding vegetables or spices.
A delicious dish is prepared from a minimum of ingredients. Have to take:
- A kilogram of potatoes.
- 600 grams of minced meat (better than pork).
- Two onions.
- 150 grams of cheese.
- One hundred grams of mayonnaise.
- Salt and spices to taste.
French-style meat with potatoes in the oven, the recipe for which is described below, will appeal to many. Despite the simple products, the result is very tasty.
French-style potatoes with minced meat in the oven in layers
Anyone, even a novice cook, can handle cooking potatoes with meat in the oven. The dish is very simple to make, and you will need the most common products:
- potatoes – 1 kg;
- minced meat (pork and beef is best) – 500 g;
- cheese – 200 g;
- onion – 2 heads;
- mayonnaise sauce - 3 tablespoons;
- greens, pepper, salt - to taste.
Cut the peeled potato tubers into slices. It is advisable that the thickness does not exceed half a centimeter. Place the potato mugs in the dish in which the dish will be baked, add sauce, salt and pepper, then mix everything thoroughly. We must try to ensure that each slice of potato is covered with the mayonnaise mixture. Leave the bowl with root vegetables for 10 minutes to marinate.
Cut the onion into halves and place on top of the potatoes. Spread the minced meat evenly over the onion. This layer should be lightly salted and greased with a thin layer of mayonnaise sauce. Cover the minced meat with a thick layer of cheese grated on a shredder.
Cover the pan with a lid or foil and bake in a preheated oven, the temperature in which by this time should be about 180°C. Bake the potatoes with minced meat for 45 to 50 minutes. If desired, the lid (or foil) can be removed 15 minutes before the end of cooking. In this case, the cheese will have time to brown a little.
Before serving the casserole, you can sprinkle it with finely chopped herbs, preferably dill.
Spicy meat in French
French-style meat with potatoes and minced meat with tomatoes and spicy sauce is a dish for those who love chili and garlic. A distinctive feature of the spicy dish is the homemade sauce and “decoration” of the meat and minced meat.
Composition of ingredients
To prepare the dish you need:
- 1 kg pork;
- 2.5 kg of fresh potatoes;
- 3 medium sized carrots;
- 2-3 pieces of onions;
- 1 tsp red pepper;
- 2-3 tbsp. vegetable oil;
- Black pepper and salt – as needed;
- 3-4 medium-sized tomatoes;
- 200 grams of hard cheese;
- 3 cloves of garlic.
You will also need curry sauce for cooking.
It will require:
- 2 pcs onions;
- 2 tbsp. olive oil;
- 350 ml chicken broth;
- 1 tbsp (200 ml) water;
- 5 cloves of garlic;
- 4 tsp turmeric;
- 1 tsp chopped fennel;
- 4 tsp paprika;
- 150 g ginger root;
- 100 g prunes;
- 1 tbsp. coriander;
- ½ tsp each cumin, nutmeg and cloves;
- 1 tsp anise;
- 2 tbsp. granulated sugar;
- 1 pod of hot pepper;
- 3 cinnamon sticks.
Because of the cumin, “Curry” has a yellow tint, so the sauce tends to color the food.
Step-by-step cooking process
First you need to prepare the sauce:
- Prunes need to be soaked in hot water for 2 hours. When time has passed, you need to place the swollen prunes in a blender and add 2-3 tbsp. water in which the product was located. The consistency should be similar to puree.
- In a separate bowl, mix cloves, cumin, coriander, cardamom and fennel. The mixture must be stirred well and heated in a frying pan without oil for 3 minutes. This way the spices release the flavor better. Then you need to place the spices in a bowl and crush.
- Place a little olive oil in a heated frying pan, then add a whole hot pepper pod. You also need to add anise, cinnamon and a little nutmeg.
- The onion needs to be peeled and chopped. Add chopped onion to the spices in the pan and pour in the remaining olive oil. Spices must be fried for 5 minutes.
- You need to add the previously crushed spices to the pan. And simmer for 2-3 minutes.
- Ginger root needs to be peeled and chopped on a fine grater.
- The garlic also needs to be peeled and crushed under pressure. Products must be added to the pan and fried.
- Add 85 ml of broth to the pan and simmer covered for 5 minutes.
- Add prune puree with sugar to the pan and mix thoroughly. Pour the remaining broth into the pan, mix thoroughly and simmer for about 10 minutes.
- The finished sauce should stand for about 25 minutes, after which it must be passed through a sieve.
- The ground sauce should be placed in a container and put on fire. The dish must be boiled, stirring thoroughly.
Add paprika to the finished sauce and mix thoroughly. Now you can start cooking meat in French with potatoes and minced meat.
Step-by-step cooking process:
- First you need to prepare the meat and minced meat. If desired, you can add minced meat and meat to the dish in a 1:1 ratio.
- The pork needs to be divided in half - one part will be used for whole pieces, and the other for minced meat. Minced meat must be minced twice with salt and black pepper added. You can also make minced meat, which will take a little longer to cook.
- The meat should be divided into medium-sized pieces.
- In a separate bowl, mix olive oil, paprika and aromatic seasonings to add a pleasant aroma.
- Each piece of pre-washed meat should be rubbed with a mixture of olive oil and seasonings.
- Pieces of meat and minced meat must be distributed over the baking tray so that there is no free space left.
- The carrots need to be peeled and grated on a coarse grater. Fresh onions also need to be peeled and cut into half rings, and then disassembled.
- The remaining garlic also needs to be peeled and passed through a press.
- In a separate bowl, you need to mix the carrots, garlic and onions, and then distribute the resulting vegetable mass over the baking sheet.
- Next you need to prepare the tomatoes. First you need to remove the skin from the tomato. To do this, you need to remove the stalks and scald each tomato. Warm tomatoes need to be quickly peeled.
- Peeled tomatoes should be cut into rings and placed on top of the vegetable mixture.
- Potatoes need to be peeled and cut into thin rings. The cut rings should be rinsed in cold water and placed on a clean towel. Place the finished chopped potatoes on a baking sheet. Top the dish with curry sauce.
- The finished dish must be sprinkled with warm hard cheese. If desired, you can grease the surface of the potato layer with mayonnaise.
- The dish must be wrapped in foil and placed in the oven. The dish should be cooked for 20 minutes at a temperature of 200-260 °C. Then you need to remove the foil and bake the potatoes for 15 minutes.
French-style meat with potatoes and minced meat is a simple recipe.
The finished dish must be served hot. Also during the process it is necessary to regulate the amount of sauce in the dish - it should be enough to add flavor to the dish, but the food should not be cooked during the cooking process.
What can I add?
The finished dish has a pronounced meaty taste.
For variety you can add:
- Mushrooms . Fresh champignons will give a rich mushroom flavor if cut into large pieces.
- Fresh greens . Rich greens can not only decorate the finished dish, but also add it to the composition. Parsley, dill, basil or rosemary can be placed in a separate layer in front of the potatoes, or mashed into porridge using a blender and added to olive oil to coat the meat.
- Brussels sprouts . The vegetable can be boiled and finely chopped, and then placed as one of the layers of the dish. A distinctive feature of Brussels sprouts is their bitterness, which adds a rich flavor to the dish.
You can also add a variety of peppers, mixtures and herbs to the dish.
How to serve a dish
The finished dish must be served hot. Each serving must contain a piece of meat. The finished dish can be sprinkled with fresh parsley sprigs and a little lemon. The dish can be served with sliced fresh vegetables: tomatoes, cucumbers and sweet bell peppers. Bran bread, toast and garlic croutons are also suitable.
