You will see the blush yourself and will take out the potatoes when you are satisfied with their color. You should not keep the potatoes in oil until they are completely brown - remember that even after they are taken out, they continue to cook inside for some time.
Only when the potatoes are fried and laid out on paper towels to absorb the oil, then they can be salted. Previously, it was impossible - the salt immediately releases water from the potatoes and your oil will start shooting and exploding like a terrorist.
