Zucchini with soft skin, do not peel. Unpeeled ones will have an irresistible appearance. Just wash and cut them into circles 5 - 7 millimeters thick. Place in a bowl and sprinkle with salt.

We make zucchini in batter: roll each circle on both sides in flour.

1. Rinse the zucchini with cold water. Trim the edges and cut the vegetables into centimeter-thick rings.

2. Grate the cheese on a medium grater, grate the garlic on the finest grater.

3. Combine sour cream with grated cheese. Add garlic, add a little salt and mix thoroughly.

4. Line a roasting pan with parchment and place the zucchini rings on it. Spread the cheese sauce on each circle and place the dish in the preheated oven.

5. Remove when the top is nicely browned, about 20 minutes.

6. When serving, sprinkle the dish with finely chopped herbs.

Secrets and subtleties of cooking

  1. Of course, young zucchini is preferable for this dish.
  2. If the zucchini already has a thick skin, then you need to cut it off and carefully check the pulp - there may be large seeds there. They need to be removed.
  3. You can cut them into thin circles so that when fried they turn out crispy, like chips, or thicker, about 1 cm, then the taste of the zucchini will be felt well.
  4. The garlic itself is not fried in this recipe; we will need it to prepare a delicious spicy sauce. Whether or not to add tomatoes to a recipe is a matter of taste.

Dietary recipe for zucchini with cottage cheese without oil

At the very beginning, I wrote a recipe for zucchini boats with meat filling. Now I propose to make a dietary filling from cottage cheese with garlic. The calorie content of such a dish is only 113 kcal per 100 grams.

Ingredients:

  • zucchini - 3 pcs. (950 gr.)
  • cottage cheese 5% - 300 gr.
  • egg - 1 pc.
  • garlic - 3-5 cloves
  • salt - 1.5 tsp.
  • dried oregano - 0.5 tsp.
  • dill - 15 gr.
  • hard cheese 45% - 100 gr.

How to cook:

1. Cut the washed zucchini lengthwise and use a spoon to remove the pulp and seeds. Take young fruits, they will turn out tastier and more tender. You should get a boat with sides and a bottom of 1 cm.

2. Cover a baking sheet with parchment and place the zucchini halves on it. Lightly salt and sprinkle with oregano or other spices to taste. Place in an oven preheated to 200º to bake for 15 minutes.

3. It's time to prepare the filling. Using an immersion blender, puree the remaining zucchini center. Place the resulting mass on a sieve and strain the juice.

4.Add the resulting thick puree, salt, garlic squeezed through a press, egg, and finely chopped dill to the cottage cheese. And stir until smooth.

5.Remove the boats from the oven; do not turn off the heat. Fill the halves with the curd filling and bake them again for another 30 minutes.

6. 10 minutes before readiness, take out the baking sheet and sprinkle the zucchini with grated hard cheese. Let the dish cook for the last 10 minutes, during which time the cheese will melt.

7.Hot appetizer is ready! It can be a full dinner or breakfast, especially since you can eat quite a lot of it, given the low calorie content. I highly recommend trying this combination of products.

In summer, simple vegetable dishes are especially popular. That's why I decided to share with you a new recipe - cooking fried zucchini with mayonnaise and garlic. They turn out golden brown, with a crispy crust, tender and juicy center, and what a flavor!

For this recipe, I advise you to choose young zucchini, small in size (I have 350 grams each), with thin skin and unformed seeds. Large fruits are also quite suitable, but then you should remove the thick peel from them, remove the seeds along with the fibrous interior, and then cut the pulp into rings, half rings or thin random pieces.

You can adjust the amount of garlic for this simple and quick recipe to your taste, as well as the options for fresh herbs. I recommend making your own mayonnaise – it’s done in a matter of minutes. Fortunately, I have a variety of recipes for this cold sauce on my website:

Cooking step by step:

To prepare this simple and tasty dish, we will need zucchini, refined vegetable (I use sunflower) oil, wheat flour of any grade (in my case, premium), mayonnaise, fresh garlic, dill (or any other herbs), salt and ground pepper.

First of all, let's prepare the zucchini (I have 2 fruits, 350 grams each) - they need to be salted and thereby remove excess moisture. Wash the fruits, dry them, cut off the ends on both sides. We cut the zucchini itself into circles, approximately 1-1.5 centimeters thick.

Place the vegetable pieces in a bowl and add salt (I use 0.5 teaspoon). Leave the zucchini to salt for 15 minutes at room temperature. I recommend keeping old zucchini for about half an hour.

During this time, prepare garlic mayonnaise: simply peel a couple of medium cloves of garlic and pass them through a garlic press (you can chop them on a fine grater). Add garlic to mayonnaise. Pepper to taste.

Mix everything thoroughly. If you want, you can add chopped fresh herbs to the sauce right at this stage.

When the zucchini sits, they release quite a bit of juice - pour it out.

Sift wheat flour into a plate and bread the zucchini slices on all sides.

For frying, take a suitable dish (I have a deep frying pan with a diameter of 26 centimeters) and pour all the odorless vegetable oil into it at once. Place floured zucchini in hot oil and fry over medium heat until the underside is browned.

When the underside of the zucchini turns a nice golden color, carefully turn them over and continue frying in oil. Personally, during the frying process, I turn the rounds over several times so that they are evenly covered with a golden brown crust and do not burn.

Place the finished fried zucchini on a flat dish, which I recommend covering with paper napkins (they will absorb excess oil). Similarly, fry the remaining vegetables breaded in flour.

Spread garlic mayonnaise on warm zucchini.

Decorate with sprigs of fresh herbs - I like dill best.

Serve warm, tender, rosy and very aromatic fried zucchini with garlic and mayonnaise. By the way, they are also good cold, but they will hardly survive until they cool down. Cook for your health, friends, and bon appetit!

Zucchini with cheese in the oven - “Mushroom boats”

• two large zucchini;

• 200 gr. forest mushrooms (champignons are also acceptable);

• 100 gr. smoked cheese.

1. Wash the zucchini and cut each one in half lengthwise. Take a sharp knife or large spoon and carefully select the middle of the vegetable halves. Then rub the inside of each part with Vegetable Spice and set aside.

2. Chop the onion into small pieces and place in a frying pan with heated sunflower oil. Fry at medium temperature for 3 minutes, add mushrooms cut into strips and chopped zucchini pulp, selected from the vegetable. There is no need to add seeds, if they are large. When all the moisture has evaporated, place the minced mushrooms from the pan into a separate bowl.

3. Fill the zucchini halves with minced meat and place them on a baking sheet. Be sure to grease the roasting pan with oil before doing this.

4. Grate the smoked cheese into a coarse grater and sprinkle over the stuffed vegetables.

5. Bake the “boats” for 40 minutes.

How to deliciously cook fried zucchini with garlic

Zucchini has so confidently taken its place in our diet that behind the apparent simplicity and accessibility of this vegetable (although, from a botanical point of view, it is a berry), we sometimes undeservedly forget about its amazing usefulness. Potassium, iron, organic acids, vitamins B, C, PP.

And all this with a low calorie content, which makes it mega-popular among our lovely women striving for physical perfection. Zucchini fills us up without adding worrying extra inches to our waist.

On the contrary, they are easily digested and remove toxins and cholesterol from our body.

Especially in the summer, zucchini dishes are a hit on our table. They are delicious in any recipe. But my favorite option since childhood is fried zucchini.

So, inspired by such an optimistic start, let's move on to practice. Preparing such dishes is very simple and quick, and the result is the delight of family and friends.

Cooking quick and tasty zucchini with potatoes

You can also make a delicious casserole from this vegetable by adding potatoes and tomatoes. Don't forget about sour cream sauce and grated cheese!

Ingredients:

  • Zucchini - 1 pc.;
  • Tomato - 2 pcs.;
  • Potatoes - 2 pcs.;
  • Garlic - 2-3 cloves;
  • Sour cream - 50-70 ml;
  • Cheese - 150 gr.;
  • Salt - to taste;
  • Vegetable oil - 1 tbsp. spoon;
  • Greens - to taste.

Cooking method:

1. Vegetables, that is, zucchini, tomatoes and potatoes, need to be washed and cut into slices. Remove the skins from the potatoes first.

2. In a separate bowl, prepare the sauce by mixing sour cream with chopped garlic and salt.

3. Take a baking sheet and grease it with vegetable oil. Arrange the chopped vegetables approximately as shown in the photo below.

4. Fill everything with sauce.

5. And top with grated cheese.

6. Place the preparation in an oven preheated to 170 degrees and simmer our stew for 20-30 minutes. Before serving, garnish everything with fresh herbs.

Recipe for spicy fried zucchini with garlic and tomatoes

What we will cook from:

  • 2 zucchini;
  • 3 tomatoes;
  • Salt pepper;
  • Vegetable oil;
  • 100 grams of mayonnaise;
  • Garlic – 3–4 cloves;
  • Dill, parsley, basil, cilantro.

  1. Remove the tops of the fruits and cut them into 5–10 mm slices. Add salt, then pepper as desired;
  2. We cut the tomatoes into slices of approximately the same thickness. We remove the attachment points of the cuttings;
  3. Fry the zucchini in layers on both sides until browned;
  4. Press the garlic cloves through a press and combine with mayonnaise. Sprinkle with salt and pepper to taste. To add additional flavors, we use dry or fresh herbs;
  5. Layer by layer apply the garlic mixture to the fried zucchini, sprinkle lightly with pepper and any garden seasonings;
  6. Place a tomato circle on top of the sauce on each zucchini circle and sprinkle with any garden seasonings.

How to deliciously bake zucchini fingers in breadcrumbs (like chips)

Zucchini makes an interesting snack that's crunchy on the outside and soft on the inside. It's like nuggets, only vegetable and baked. In addition to breadcrumbs, sour cream and mustard sauce will be used for breading, which will be the main flavor component.

Ingredients:

  • zucchini - 1 pc.
  • sour cream - 1 tbsp.
  • mustard - 1 tbsp.
  • onions - 1 pc.
  • vinegar 9% - 2 tsp.
  • honey - 2 tsp.
  • breadcrumbs - 1/2 tbsp.
  • hard cheese - 100 gr.
  • salt, pepper - to taste

Preparation:

1. You need to cut off the zucchini peel and remove the seeds. Cut them into thin strips, about 5-8 mm thick and 10 cm long.

2.Cut one onion into cubes and fry in vegetable oil until golden brown. Do this over high heat, stirring frequently so that the pieces become sweet without burning.

3. To prepare the sauce, place the onion, mustard, honey, vinegar, half a teaspoon of salt and a little ground black pepper into a blender bowl. Whisk these products to obtain a homogeneous mixture.

4.Pour the mixture into a bowl and add a glass of sour cream, stir with a spoon. This will be the sauce, try it. Add salt or other spices if necessary.

5.Now you need to make the breading. Pour half a glass of crackers (if you want to make a healthier dish, use bran) again into the blender bowl. Add grated cheese and black pepper to them. Grind to obtain a homogeneous mass.

6. Cover a baking sheet with parchment paper and you can form sticks. For convenience, use a fork. First, dip a piece of zucchini in sour cream sauce, and then in breadcrumbs and cheese. Place on the form.

7.Place in an oven preheated to 200º for 25 minutes. Then move the baking sheet to the upper level and turn the heat to 250º. Cook in this mode for another 5 minutes.

8.Take out the rosy zucchini sticks and you can serve them to the table. In the middle, the vegetables will bake and become soft, and on the outside, on the contrary, they will be crispy. This snack is perfect as a substitute for chips while watching a movie. And just perfect for a snack.

1. Grate the washed zucchini using the largest vegetable grater. If the vegetables you got are not the youngest, cut off the peel and select the seeds. Chop the onion into small slices and chop the garlic.

2. Pour one and a half tablespoons of oil into a thick-walled frying pan and lightly fry the zucchini over low heat. Then place on a sieve and leave in it to allow the juice to drain.

3. In a separate frying pan, sauté the onion and garlic until lightly browned.

4. Chop the Feta with a fork and finely chop the dill with a knife.
