A very original recipe, which consists of zucchini cakes and three types of filling! The deliciousness is simply indescribable. As a meat ingredient, you can take what you like or have on hand - boiled or smoked meat, chicken, ham or other delicacy. The main thing is that the product is completely ready for use. It will be delicious in any case! And it’s very easy to prepare! See for yourself!

Ingredients:

Cakes:

  • Zucchini – 2 pcs. (about half a kilo)
  • Eggs – 4 pcs.
  • Onion – 1 pc.
  • Flour – 5 tbsp. with a slide
  • Salt – 1 tsp.
  • Ground black pepper – 0.5. tsp
  • Vegetable oil for frying

Filling No. 1:

  • Boiled meat – 300 gr.
  • Mayonnaise – 2-3 tbsp.
  • Garlic – 2 cloves

Filling No. 2:

  • Boiled eggs – 4-5 pcs., depending on size
  • Mayonnaise – 3-4 tbsp.
  • Garlic – 2 cloves

Filling No. 3:

  • Large carrots – 1 pc. (approximately 200 gr.)
  • Garlic – 2 cloves
  • Hard cheese – 200 gr.
  • Mayonnaise – 2-4 tbsp.

Also:

  • A little grated cheese
  • Greenery

Preparation:

1. Let's start with the basics. Peel the zucchini and remove the seeds (if necessary). Grate them with a coarse grater into a large bowl. Add a little salt and stir. Leave for 5 minutes and then squeeze out the juice.

2. Add raw eggs and finely chopped onion to the squeezed zucchini. We also add ground pepper and flour. Mix everything until smooth and soft.

3. Pour 2 tbsp into the pan. vegetable oil. We heat it here and pour in some of the dough. Spread with a medium-thick pancake.

4. Turn the heat to medium and cover with a lid. Fry for about 2 minutes. After that, turn it over and cook on the second side. There were 4 cakes in total. If necessary, you can add a little oil.

5. Let's move on to the filling. Grate the hard-boiled eggs with a coarse grater and place in a separate bowl. Pour mayonnaise into them and pass the garlic through a press. Mix.

6. On a fine grater, grate raw carrots with garlic and cheese. Combine them in one bowl, add mayonnaise. Stir.

7. You can take any meat. Pork, chicken, beef - boiled, smoked, dried! You decide. Grind the product into small pieces and place in a separate bowl. Add garlic through a press or grater and pour in mayonnaise. Mix.

8. It's time to assemble our structure. To make the cake even, you can take a split ring, place it on a plate and place the first pancake in the center. Lubricate it with half of the carrot mixture.

9. Cover with the second cake layer, covering it with the entire amount of meat filling at once. Then we lay it out in the following sequence:

  • Cake crust, leftover carrot mixture;
  • Crust, egg filling and add a little salt.

10. Sprinkle grated cheese on top and decorate the edges with finely chopped herbs.

With minced meat in the oven

Meat lovers will love this dish. It is filling, although the main component is vegetables. The method of preparing cakes is very convenient; it can be used for any of the recipes given. The good thing about it is that you don’t have to stand over the frying pan for a long time and wait for the zucchini pancakes to cook.

Ingredients

  • zucchini – 2 pcs.;
  • minced meat – 0.5 kg;
  • flour – 1 glass;
  • kefir – 1 glass;
  • egg – 3 pcs.;
  • sour cream – 3 tbsp;
  • onion – 1 pc.;
  • sunflower oil – 5 tbsp;
  • greens – 1 bunch;
  • cherry tomatoes - a few pieces to decorate the dish;
  • salt, spices - 2-3 pinches each.

Step-by-step preparation

  1. Rinse the zucchini and grate coarsely.
  2. Add chopped herbs to it and beat in eggs, season with salt and spices.
  3. Pour kefir into this mixture and stir. Add flour, knead the dough not too thick.
  4. Grease a baking tray with oil and spread the dough over its surface.
  5. Bake in the oven (200 degrees) for 25-30 minutes.
  6. Cut the finished cake into 4 parts.
  7. Pour 2 tbsp into the pan. oil, sauté the onion in it until it becomes transparent. Add the minced meat, salt and pepper it, and fry for about half an hour.
  8. Cool the filling and mix with sour cream.
  9. Grease each cake with the resulting mixture.
  10. Assemble the cake and place it in the oven for 10 minutes.
  11. Garnish the dish with cherry tomatoes cut in half.

The cooking time for the meat filling depends on the type of minced meat. Chicken cooks faster, pork or beef takes longer.

If there are zucchini left, then in the oven preheated after preparing the pancakes, we suggest making delicious caviar. Just throw everything into a sleeve or bag. Forget about frying vegetables and constantly standing at the stove with a spoon - the squash caviar will “come” without your participation.

Advice

Before putting the assembled cake in the oven, you can cover it with shavings of processed cheese. But in this version the dish will be even higher in calories.
