Potatoes with ribs

Country-style potatoes in this case are a multi-component dish. It turns out so satisfying that it is worth preparing it either for a large company or for the hungriest.

Required:

  • pork ribs - 4 pcs.;
  • potatoes - 8 pcs.;
  • sour cream - 4 tbsp. l.;
  • onion - 2 pcs.;
  • garlic cloves - 4 pcs.;
  • hard cheese - 100 g;
  • walnut - 2 pcs.;
  • salt, spices, herbs, pepper - to taste.

Cooking steps:

  1. The onion is cut into half rings and then fried in oil until the vegetable becomes soft.
  2. Add the ribs to the onions and fry until they turn golden brown.
  3. The potatoes are peeled, cut into strips and placed in a frying pan. Fried.
  4. Place the entire contents of the pan in a baking dish.
  5. Only now salt, spices and pepper are added.
  6. Place the pan in the oven, preheated to 180°C and bake for a quarter of an hour.
  7. While the dish is baking, prepare the sauce. Mix grated cheese, sour cream, walnut crumbs, and salt.
  8. The finished dish is poured with sauce and sprinkled with herbs.

Grandma's country-style potatoes

Almost any of our grandmothers can share this recipe for delicious, fried potatoes in a frying pan. The dish is quite high in calories, but its rich taste makes you forget about any diet.

Ingredients:

  • Potatoes – 600 g
  • Garlic – 3 cloves
  • Lard or vegetable oil – 5 tbsp.
  • Wheat flour – 1 tbsp.
  • Salt – 1 tsp. no slide
  • Ground black and red pepper - ½ tsp each.
  • Basil, rosemary, oregano - 1 pinch each, to taste
  • Green onions – 2-3 stalks

Preparation:

Carefully wash the potato tubers, which are approximately the same size, and use a washcloth or brush to clean them. We cut each fruit with peel into 4 or 6 parts, depending on our own preferences.

Place the slices in a saucepan and pour boiling water over them. Boil for about 5 minutes, add salt and immediately drain the water.

By giving the starch to the water during active boiling, the potato pieces will not “stick together” during frying. Thanks to pre-cooking, the vegetables will not remain raw in the middle.

Finally, we remove excess moisture from the potatoes and lightly dust them with flour to make the crust perfect. Melt lard in a large cast-iron frying pan; it gives the potatoes a unique taste. But you can use sunflower or olive oil. Lay out the potatoes. We don’t touch it at all for about 5 minutes so that the crust underneath is thoroughly set. Cook over high heat without a lid, turn occasionally, but not partially.

As soon as the potatoes are browned, add crushed garlic, pepper and herbs. Stir and remove from heat. Decorate the dish with chopped green onions.

Country-style potatoes in the oven with skins - step-by-step recipe

This recipe is basic, one might say classic. Here the queen of the ball is the potato, which is sprinkled with spices for taste and baked in the oven until a very appetizing golden brown crust. Having tried this method of cooking, you no longer want to fry it, because baking uses less fat and retains more nutrients.

The set of spices can be different; there cannot be strict rules. Use what you have in the house, experiment and find your favorite taste. And garlic-cheese sauce is ideal for such crispy outside and soft inside pieces. It will perfectly complement the taste and enhance it. I will also write the sauce recipe.

Ingredients:

  • potatoes - 750 gr.
  • unrefined vegetable oil - 60 ml
  • salt - 1 tsp.
  • dry basil - 1 tsp.
  • dried thyme - 1 tsp.
  • red sweet paprika - 2 tsp.
  • dry granulated garlic - 3 tsp.

For the sauce:

  • sour cream 20% - 250 gr.
  • hard cheese - 100 gr.
  • parsley - to taste
  • garlic - 1 clove large

Cooking method:

1. Since potatoes are baked in their skins, the first thing you need to do is wash them well. It is better to use a brush for this. If there is damage on the surface, it must be cut out. Probably, it is washing the main product that takes the most time. Then everything is done very quickly and simply.

2.Immediately turn on the oven to preheat.

How many degrees do you need? Set at 190º, normal mode, without convection (otherwise it will burn and not bake).

3.Cut the tubers into slices. First cut a medium potato in half, and then each half into 4 more pieces lengthwise.

Use vegetables of the same size for this dish so they cook at the same time.

4.Take a container with a lid. Place all the slices in it and tuck it in. Salt, add dry garlic (fresh can burn in 40 minutes of baking), paprika, thyme and basil, pour in sunflower or olive oil. Close the lid and shake the container well to mix everything evenly. You can also mix in a bag, in a saucepan with a lid, or just with your hands.

You can replace paprika with turmeric - it will give a golden color, and paprika gives a red tint. Choose for yourself what color you want your food to be.

5.Take a non-stick baking sheet and place all the potatoes on it. This moment also has its own nuances. The pieces should not lie in a heap, but stand with the skin down at a short distance from each other.

If the baking sheet is uncoated, cover it with parchment or grease it with additional vegetable oil.

6.Place the baking sheet in the oven for about 40 minutes. After half an hour, keep an eye on your country-style potatoes so they don’t turn black. The cooking time will depend on the type of tubers and their youth (young ones, of course, will become soft earlier). Try with a knife or fork; the slices should pierce easily.

7.While the aromatic appetizer is baking, prepare the sauce. This is done one-two-three times. Grate the cheese on a fine grater and place in a bowl. Squeeze the garlic there, add finely chopped parsley and season with sour cream. Mix everything thoroughly and let it brew for 15 minutes.

  • Potatoes – 1 kg
  • Garlic – 3 cloves
  • Seasoning for potatoes – 1 tsp.
  • Salt – 1 tsp.
  • Ground black pepper – 1 tsp.
  • Paprika – 1 tsp.
  • Vegetable oil – 50 ml

Preparation:

We choose small tubers so that when we cut it into 4 parts, we get uniform, neat slices. We don’t peel the vegetables, just wash them thoroughly, set them aside to dry, and chop them.

Place the vegetables in a plastic bag. Pour all the spices there. We tie it tightly and carefully shake it. Pour in the oil and shake the bag a few more times.

Line a baking sheet with foil and lightly spray with vegetable oil. Place the potatoes in rows, leaving a minimum distance between the slices. Place in an oven preheated to 200 degrees for 30 minutes.

Ingredients:

  • small potatoes - 1.2 kg
  • olive oil - 50 - 60 ml (can be replaced with another)
  • spices: dried herbs (rosemary, thyme or herbs de Provence), dried garlic, paprika, ground hot red pepper
  • fresh garlic - 7 - 8 cloves
  • salt

Step-by-step cooking recipe:

In this recipe, the potatoes are baked whole, so we use small tubers. To make it not dry, but soft and tender inside, with a crispy crust on the outside, you must first boil it a little.

  1. Prepare the tubers - wash, peel, place in a saucepan, cover with cold water. Add a little salt and cook.

  2. After boiling for 10 minutes, drain the water through a colander and leave the potatoes there to dry.
  3. In the meantime, let's make the dressing: pour a little olive oil into a bowl. Can be replaced with any other refined vegetable oil. Add salt, dry garlic, ground red pepper, paprika.

  4. Place the potatoes back into the pan, pour in the dressing, cover with a lid and shake the pan so that the dressing is evenly distributed over the tubers.
  5. Line a baking tray with baking paper and place the potatoes so that they lie in one layer. The oven must be preheated to 190 degrees and a baking sheet placed in the preheated one. Bake for 25 minutes.

  6. While the dish is cooking, prepare another dressing. Wash the garlic cloves and, without removing the peel, press them with a knife.

  7. Place in a bowl, add dried rosemary and thyme leaves. Toss with a little olive oil to release the flavor of the garlic and herbs.

  8. Remove the baking sheet from the oven, arrange the garlic and herbs among the potatoes and return to the oven. Bake for about 15 minutes until crispy.

Tip: for this recipe you need to use potatoes that do not get soft when cooked.

Rustic potato pots

Country-style potatoes cooked in a clay or ceramic pot will absorb all the flavors of the onions and seasonings. A crispy crust is ensured even without a large amount of vegetable oil.

Ingredients:

  • Potatoes – 700 g
  • Onion – 250 g
  • Butter – 50 g
  • Mayonnaise – 150 g
  • Breadcrumbs – 50 g
  • Salt and ground black pepper - to taste

Preparation:

We clean the vegetables thoroughly. Cut the potatoes into slices, the onion into half rings. Grease the inside of four medium-sized pots with butter and sprinkle the bottom and sides with breadcrumbs.

Divide the prepared vegetables in half. Divide one half of the potatoes evenly among the pots, sprinkle with half the onion. Add a little salt and cover with mayonnaise. In the same way we repeat the laying out of the third and fourth layers. Salt and pepper to taste.

Place in the oven preheated to 200 degrees. Bake for 45 minutes.

Country-style potatoes "Like McDonald's"

Country-style potatoes have been on the McDonald's menu for a very long time and have successfully competed with the already slightly boring French fries. Preparing such a side dish at home is quite simple, and the cost of food is minimal.

Ingredients:

  • Potatoes – 1 kg
  • Vegetable oil – 300 g
  • Dill greens – ½ bunch
  • Parsley – ½ bunch
  • Garlic – 4 cloves
  • Ground black pepper – ½ tsp.
  • Salt to taste

Preparation:

A great opportunity to slightly diversify the menu from the long-awaited new potatoes. Let's prepare it a little differently, adding a crispy crust and garlicky piquancy.

Ingredients:

  • New potatoes – 1 kg
  • Garlic – 2-3 cloves
  • Parsley – ½ bunch
  • Vegetable oil – 3 tbsp.
  • Ground black pepper, salt - to taste

Preparation:

Scrape the new potatoes with a knife.

Young fruits are much better cleaned if they are kept in cold water for several minutes.

You don’t have to clean it, but simply wash it thoroughly using a special brush. Pierce each dried potato with a fork.

Chop the peeled garlic and washed herbs with a knife as finely as possible. In a large bowl or saucepan, prepare a kind of sauce for dipping the potatoes. Combine oil, garlic and herbs, salt and pepper generously. Place the potatoes in a container and mix the vegetables and sauce thoroughly.

Let's prepare the sleeve for baking by cutting off the required rectangle from the roll and tying it securely on one side with thread. Ingredients:

  • Potatoes – 600 g
  • Onion – 150 g
  • Dried mushrooms – 50 g, or fresh mushrooms – 400 g
  • Butter – 100 g
  • Dill – 1 bunch
  • Salt, ground black pepper - to taste

Preparation:

If dried mushrooms are used, soak them in purified drinking water a few hours before cooking. Then cut into neat pieces. Fresh mushrooms are simply cleaned and washed.

Melt half the butter in a frying pan and fry the finely diced onion until golden brown. Add mushrooms, fry for about 10 minutes. Transfer the onions and mushrooms into a fireproof casserole.

In the same frying pan, heat the remaining oil and thoroughly fry the potatoes, previously peeled and cut into large slices. The sides of the potato slices should be just slightly golden brown.

Mix all the ingredients in a cauldron, add salt, season with black pepper and place in the oven for 30 minutes. Before serving, decorate the dish with chopped dill.

Potatoes "Bavarian village"

Appetizing potato slices with Bavarian beer sauce, baked in heat-resistant pots in the oven, will not leave anyone indifferent. An excellent side dish for steaks, garlic sausages or baked fish.

Ingredients:

  • Potatoes – 1 kg
  • Onion – 250 g
  • Light beer – 300 ml
  • Cream – 250 ml
  • Butter – 100 g
  • Hard cheese – 100 g
  • Nutmeg – ¼ tsp.
  • Salt, ground black pepper - to taste

Preparation:

Peel and cut the onion into thin rings. Melt 50 g of butter in a frying pan and sauté the onion in it until transparent.

Cut potatoes without skin into thin slices. Grease the pots with the remaining butter and place thin layers in them, alternating potatoes and onions.

Using a whisk, mix cream, beer and grated cheese. Season the mixture with salt, pepper and nutmeg. Distribute the sauce evenly among the filled pots.

Place the semi-finished product in an oven preheated to 200 degrees for approximately 1 hour. You can start tasting!

Country-style orange potatoes

A standard recipe, supplemented with the incredibly healthy spice turmeric, without the use of vegetable oil.

Ingredients:

  • Potatoes – 500 g
  • Turmeric – 1 tsp. with a slide
  • Paprika – ½ tsp.
  • Salt - ½ tsp.
  • Black pepper – ½ tsp.
  • Sour cream – 200 ml

Preparation:

Carefully peel the potatoes and remove any black spots. Cut into slices about 1 cm wide at the base. We randomly fill a small baking sheet with sides, without pre-lubricating it with anything.

Sprinkle the potatoes with salt, ground black pepper, paprika and turmeric and mix gently. Add sour cream and continue stirring. It is necessary that the sour cream and spices completely envelop the potatoes. Place in an oven preheated to 200 degrees for approximately 40 minutes. We take out an incredibly tasty and healthy orange side dish and serve it on the table.

How to make a presentation beautiful?

Country-style potatoes with meat are good on their own, but you can serve them beautifully to whet your appetite even more.

The most common way to serve it is to remove it from the oven and place it directly on the baking sheet, still steaming, and serve. That’s why it’s called “country-style” - straight from the oven to the table, without any serving.

If the baking sheet is too large or has lost its “marketable” appearance over time, you can simply put the potatoes and meat on a common plate, first sprinkled with herbs. Everyone will take as much as they can handle.

“Country-style frying pan” with potatoes, chicken and mushrooms

Appetizing country-style potatoes in the company of juicy chicken and mushrooms are a hearty treat for family and friends in a hurry.

Ingredients:

  • Potatoes – 600 g
  • Champignons – 500 g
  • Chicken thighs – 400 g
  • Onion – 100 g
  • Garlic – 4 cloves
  • Bacon – 200 g
  • Vegetable oil – 50 g
  • Paprika – 1 tsp.
  • Bay leaf – 2 pcs.
  • Salt, ground black pepper - to taste

Preparation:

We cut the peeled potatoes quite large - into 4-6 slices, depending on the size of the fruit. We clean the mushrooms. Large ones - cut into 4 parts, small ones can be left whole.

Using a sharp knife, cut the chicken meat from the thigh bones. Cut it so that the pieces are the size of potato wedges. Chop the onion into a fairly large cube, cut each clove of garlic into 5-6 pieces.

Place all the chopped ingredients in one large container, add bacon, cut into medium slices. Season generously with salt and pepper, sprinkle with paprika and pour over vegetable oil. Mix everything thoroughly so that the spices are distributed evenly, add a couple of bay leaves.

Fill the baking sleeve, tie the edges tightly and place in the oven for 1 hour, preheated to 180 degrees. After this time, cut the sleeve at the top and leave it in the oven for another 10 minutes. We put a delicious dinner on a large platter and invite everyone to the table.
