  • Potatoes – 2 kg.
  • Minced pork – 500 gr.
  • Vegetable oil – 150 ml.
  • Onions – 100 gr.
  • Water – 300 ml.
  • Garlic – 1 clove.
  • Dill – 5 bunches.
  • Seasoning for potatoes – 1 tsp.
  • Seasoning for minced meat – 1 tsp.
  • Salt – 1 tsp.
  • Ground black pepper – 1 pinch.

Cooking method:

  1. First, let's prepare minced meat for the sorcerers. Put the minced meat in a bowl, add seasoning to it, if you want, salt and pepper to taste, finely chopped fresh dill, as well as onions and garlic, which need to be chopped in any convenient way. Mix everything thoroughly. Taste for salt and add more salt if necessary.
  2. Meanwhile, peel and wash the potatoes. After that, grind it on the finest shingle grater. Potato shingles need to be squeezed out. The squeezed mashed potatoes should not be too dry - there should be some moisture in them. But at the same time, the base for potato dough should not be liquid.
  3. Add potato seasoning and salt. Mix everything thoroughly with your hands so that the seasoning and salt are distributed evenly throughout the potato dough. Divide the potato mixture into equally sized pieces. We also divide the minced meat, which has already had time to rest in the refrigerator, into equal portions according to the number of potato preparations.
  4. Then we begin to make flat cakes, in the center of which you need to put a little minced meat. Use your palms to compact the workpiece so that it becomes smooth and even. This is how we form all the potato sorcerers.
  5. Pour vegetable oil into a frying pan and heat it thoroughly. Place the first portion of sorcerers so that they do not touch each other and fry over medium heat until a beautiful and golden brown bottom crust forms. This will take 5-6 minutes. Then we turn the sorcerers over with a spatula and brown the other side in the same way. Remove from the pan and cook the rest of the sorcerers in the same way.
  6. The minced meat inside remained raw, so the Belarusian sorcerers need to be brought to readiness. This can be done directly on the stove (stew the sorcerers in a duck pot or cauldron) or in the oven. To do this, transfer the cutlets into a baking dish in one layer or into another suitable container. Pour a glass of boiling water (you can use vegetable, chicken or meat broth) - this way the sorcerers will not have time to cool down and will cook much faster.
  7. Cover the pan with foil and place in a hot oven (turn it on to warm half an hour beforehand) on a medium level. We cook Belarusian sorcerers at 200 degrees under foil for 20–25 minutes, then remove the foil and bake them for another 10–15 minutes.

  • Vegetable oil - 2 tbsp. l.;
  • Dried mushrooms, for minced meat - 30 g;

  1. Grate raw potatoes on a fine grater and squeeze. Leave the juice remaining after squeezing along with the starch for a few minutes until the starch settles, then drain the liquid. Mix the starch with the potato mixture, adding salt and pepper to taste.
  2. For minced meat, soak the mushrooms in cold water, then boil in the same water. Strain the broth. Wash the mushrooms, chop finely, fry in oil, combine with chopped and fried onions, salt and pepper.
  3. Form flat cakes from the prepared potato mass, place a little minced meat in the center of each, connect the edges, giving the products a ball shape.
  4. Bread the sorcerers in flour, fry in oil until golden brown, then transfer to a roasting pan or on a baking sheet, pour over the mushroom broth and bake in the oven for 30–40 minutes. Bon appetit!

Consider a vegetarian recipe for a dish that can be used as an independent side dish. The prepared products will yield 2-3 servings.

Ingredients:

  • 5 potatoes;
  • egg;
  • 3 tbsp. spoons of flour;
  • 1/4 head of cabbage;
  • onion;
  • carrots;
  • salt;
  • pepper.

Cooking method:

  1. First, make the filling, for which finely chop the cabbage and fry it in oil.
  2. Chop the onions and carrots, and then add them to the cabbage and mix everything.
  3. Add spices to taste and pour water.
  4. Simmer, closing the lid, until soft. If necessary, add water, but do not overdo it.

  6. Add the egg, salt and flour, and then mix everything.

  • Chicken egg (in minced potatoes) - 1 pc.

  • Flax seeds (in minced potatoes) - 1 tbsp. l.
  • Flour (for minced potatoes) - 4 tbsp. l.
  • Sour cream (for sauce) - 150 gr.
  • Mushrooms (for sauce) - 150 gr.

Cooking method:

  1. For this dish we will need 2 types of minced meat and vegetable. Minced meat can be made from beef; it is better to use lean parts, onions, and garlic. Grind the meat with onions and garlic in a meat grinder. Salt and pepper the minced meat, add liquid to make the minced meat juicy. Mix the minced meat well until smooth.
  2. Prepare minced vegetables. Potatoes and carrots must be peeled. Grate potatoes with carrots. The size of the grater depends on your preference. Do you like a fine or coarse grater? Squeeze out excess juice through cheesecloth, or place in a mesh colander to drain excess liquid.
  3. Mix grated vegetables with flour, egg, flax seed, and salt. Knead well and roll the minced vegetable into 8 balls. Mash the potato balls into flat cakes, place the meat filling in the center of each and close the edges so that the filling is inside.
  4. Turn on the “Baking” program on the multicooker. Heat the multicooker, pour in just a little vegetable oil. Add the sorcerers and fry. First, on the one hand. Then we turn it over and cook it on the other side.
  5. The sorcerers were both fried and steamed in their own juice, which is very convenient. We will make the second batch of sorcerers in sour cream and mushroom sauce. The sorcerers must first be fried on both sides using the “Frying” program. Then switch the multicooker to the “Stew” mode. Add mushrooms, simmer for 5 minutes. Add sour cream, add a little salt.   • 8 medium potatoes;
  • 300 gr. fatty pork;
  • 350 gr. lean veal;
  • 2 large onions;
  • 2 eggs;
  • 200 gr. sour cream + 1 tbsp. l.;
  • rendered lard;
  • salt, freshly ground black pepper.

Cooking method:

  1. Cut the pork and veal into medium pieces and grind in a meat grinder. Peel 1 onion, chop and mix with meat. Season with salt and pepper, knead thoroughly with your hands, cover with film and refrigerate.
  2. Peel the potatoes, grate them on a medium grater, and place in a sieve. Place the sieve in a bowl and leave for 10-15 minutes. – let the excess liquid drain.
  3. Peel and finely grate the second onion and place in a bowl. Add potatoes and 1 tbsp. l. sour cream, stir.
  4. Lightly beat the eggs, add to the potato mixture, pepper, salt and stir. Now mix the potato mixture with the minced meat.
  5. With wet hands, form small cutlets from the resulting mass. Fry them in heated lard over high heat on both sides until golden brown. Use a frying pan with a heat-resistant handle.
  6. Mix 200 g of sour cream with 0.5 cups of water, season with salt. Fill the lazy sorcerers with sour cream dressing and place in an oven preheated to 180°C for 15–20 minutes. Serve hot.
