Pie “Burenka”: recipe, proportions, baking time

They will certainly like the tender and aromatic “Burenka” pie, with a sweet but not at all cloying taste, with a curd filling slightly reminiscent of a soufflé!

Why is the delicacy called this? The fact is that different recipes for this delicacy use dairy products - cottage cheese, milk, including condensed milk, as well as kefir. In addition, on the surface of the dessert and in its cut you can see a beautiful chocolate-white pattern, reminiscent of the spotted pattern on the sides of the notorious Burenka. Adults will not refuse to enjoy this delicacy if you invite them for a cup of tea with a piece of this surprisingly light and at the same time satisfying and healthy dessert. Cottage cheese pie “Cow Burenka”.

Ingredients for the dough:

  • Butter/margarine 200 g
  • Sugar 150 g
  • Egg 1 piece
  • Flour 350 g
  • Egg 1 piece
  • Cocoa powder 50 g
  • Baking powder 10 g
  • Low-fat cottage cheese 600 g
  • Butter 100 g
  • Sugar 150 g
  • Vanillin 1 tsp.

In a deep bowl, mix 200 g of butter (you can use margarine), 150 g of sugar, mash well.

  • Add 1 egg, 350 g of sifted flour, mix. Beat in 1 more egg, add 50 g of cocoa powder, 10 g of baking powder, mix thoroughly.
  • Grease a baking pan with butter, separate a small piece from the dough, place the rest in the pan, distribute evenly over the entire surface, form small sides.
  • Prepare the filling. To do this, in a deep bowl, mix 600 g of cottage cheese, 100 g of butter, 150 g of sugar, 1 tsp. vanilla, beat well with a mixer, add 1.5 tbsp. starch.
  • Add 4 eggs one at a time, stirring each time, then lightly beat the mixture with a mixer. Pour the prepared filling onto the dough base and distribute evenly.
  • Form small spots from the remaining amount of chocolate dough and distribute them over the surface of the cake.
  • Preheat the oven to 170 degrees, bake the cake for 50 minutes. Remove the finished cake from the oven, transfer to a beautiful dish, cool completely at room temperature, and place in the refrigerator for 3 hours to soak. Can be served.

Curd pie “Burenka” is essentially similar to a casserole.

In any case, children, as well as all cottage cheese lovers, will love the dessert. It resembles the skin of a cow, which is why it got its name. It turns out unusually tender and tasty.

Features of the technology

They work like this:

  1. First, prepare the chocolate dough: grind butter (softened) with sugar. Next, add the eggs one at a time, beating them with a mixer.
  2. Then melt the chocolate in a water bath.
  3. Melted chocolate is added to the dough. According to the recipe, add a little soda (slaked with vinegar) or baking powder and mix.
  4. Add flour little by little, stirring constantly. Once the delicious chocolate dough is ready, you can start preparing the curd dough. To do this, knead the cottage cheese manually into fine crumbs, add eggs and further knead using a fork.
  5. Pour in condensed milk, add flour and mix.
  6. Next, cover the springform baking pan with parchment and begin to lay out the dough in an artistic manner, imitating the most spotted black and white pattern on the sides of the “burenka”. First, you should evenly distribute one third of the chocolate dough over the bottom of the mold. Then use a spoon to spread out six to seven “spots” of curd dough. Place one spoon of brown chocolate dough in the middle of the white curd spots.
  7. Then, alternating, pour out layer after layer of light and dark dough.
  8. Place the pie in the oven and bake over low heat (at 180 °C) for an hour. Since the product is quite tall and contains curd filling, it takes a lot of time to bake. The duration of the process, as well as the level of temperature used, vary according to the size of the mold and the features of the oven. In any case, housewives recommend periodically checking the readiness of the pie using a wooden stick. As soon as it is dry, the pie is ready.

After the product has cooled slightly, the mold is opened and the baked goods are placed on a plate.

Recipe Pie "Burenka"

Preparation:

First you need to prepare the shortbread dough: grind the butter with sugar. Mix the mixture with the egg. Then add flour, cocoa, baking powder and salt.

Mix the dough into crumbs, which then need to be collected into a ball. If the crumbs are too dry, add a little ice water.

Place the dough in the refrigerator while the filling is prepared.

The dough can be cooled in two ways: simply in a bag or container, but I prefer to distribute the dough into the mold in which the pie will be baked and place it directly in the refrigerator.

Don't forget to separate a small piece of dough for future decoration - specks.

For the filling, in a large bowl, combine cottage cheese, softened butter, eggs, sugar, vanilla sugar, starch or flour, such as rice, into a homogeneous mixture.

You can combine the ingredients manually, but the mass will not be so homogeneous, and a blender also saves time.

Add sour cream to the mixture. Place the filling on the dough in the form and smooth it out.

Roll out the reserved piece of chocolate shortcrust pastry into a thin layer, tear it into pieces of different sizes and place them on the surface of the curd filling in any order.

Cooking according to recipe

Margarine is softened and beaten together with sugar. Add the remaining ingredients and knead the dough. Next, coat the multicooker bowl with a piece of margarine and place the dough on it, separating a small part from it. Place the filling on top of the dough layer. A flatbread is molded from the separated dough and torn into not too small pieces, which are laid on top of the filling. Select the “Baking” program in the device. The product should be cooked in a slow cooker for 65 minutes.

After the beep sounds about the end of the program, the multicooker lid is opened and the finished pie is cooled. The cooled product is transferred to a wire rack and placed in the refrigerator, where it should be kept for about three to four hours.

Step-by-step cooking recipe

Dough. Grind the butter with sugar, add all the other products on the list, kneading thoroughly. I did this with a mixer using a dough attachment. Using your hands, spread the dough along the bottom and sides of the pan, leaving a small piece of dough for the spots for the cow.

Filling. Beat cottage cheese + butter with sugar and vanilla. Add starch. Reduce mixer speed to lowest. Add the eggs one at a time and then beat for as long as possible, just until the eggs are completely incorporated. Pour the filling onto the dough.

Next, from the remaining piece of dough we form arbitrary spot cakes and distribute them on top of the cottage cheese. It was convenient for me to sculpt them on a sheet of parchment with my hands.

Bake the pie at 175 degrees. 40-50 min.

Let cool completely at room temperature. And then put it in the refrigerator (for 3 hours).

How to prepare dessert?

They work like this:

  1. Sugar is ground with margarine (softened), the remaining products are gradually added and stirred until a lump of brown dough is obtained.
  2. Then the cottage cheese is combined with the remaining ingredients and mixed until a fairly liquid mass is obtained. To make the mixture even more homogeneous, it can be ground in a blender.
  3. Next, pinch off a small piece of the dough, and the rest is distributed into a baking dish (split).
  4. Then cottage cheese is poured into the mold, and pieces are plucked from a piece of dough (the remaining one), imitating the spotted skin of a cow. Next, the workpiece is sent to the oven, heated to 180 degrees. Bake the Burenka pie for one hour.

Step-by-step recipe with photos

There are many recipes for cottage cheese pies, and many of them are probably familiar to you. However, there is always room for creativity, so I offer you a recipe for a cottage cheese pie with a special decoration. It turns out very tasty and original. I made the recipe for the Home Restaurant magazine.

In order to prepare the “Burenka” pie with cottage cheese, first knead the dough. For this we need such products.

Mix flour with sugar, add baking powder and eggs. Then melted butter. Let's knead the dough.

Now we need to divide the dough into the following parts, that is, we take a piece of the dough (about 1/4 part) and divide it into two equal parts. Mix one part with cocoa.

Take a 26 cm mold and cover it with paper. Place most of the dough on paper and roll it out, making high sides. And put it in the refrigerator. We also wrap the remaining pieces of dough in cellophane and put them in the cold.

Preparing a pie with cottage cheese and condensed milk

  • potato starch - 2 tbsp. l;

  • vanillin – 1 g.

Recipe for “Cow-Burenka” curd pie:

For the dough, mix butter, egg, sugar, cocoa and flour with baking powder. Place in a greased pan, leaving a small piece of dough for the “specks”.

Now beat cottage cheese, eggs, sugar, butter, vanilla and starch. Place it on the dough and, on top of the curd filling, make “specks” out of the dough.

Recipe for making “Koroka Burenka” cake in a slow cooker

Ingredients for the dough:

  • Butter – 200 gr.
  • Sugar – 1 multi-cup (per 160 ml)
  • Flour – 4 multi-cups
  • Eggs – 1 pc.
  • Cocoa – 2 tbsp.
  • Baking powder – 1.5 tsp.

Filling ingredients:

  • Cottage cheese – 250 gr.
  • Sour cream – 250 gr.
  • Eggs – 2 pcs.
  • Sugar – 1 multi-cup
  • Starch – 2 tbsp.
  • Vanillin

Grind butter softened at room temperature with sugar, add cocoa, egg, gradually add flour mixed with baking powder, knead soft dough, put it in the refrigerator for 1 hour.

For the filling, grind the cottage cheese with sour cream, sugar, starch, vanillin and eggs in a blender (the filling turns out to be quite liquid).

Divide the dough into two parts of unequal size. Place most of the dough (about 2/3) into a multicooker bowl, previously well greased with oil, level it along the bottom with your fingers and form sides 4-5 cm high.

Pour the curd filling onto the dough.

Roll the remaining dough into balls of different sizes, give them the desired shape and place on the filling, pressing them in slightly.

Set the “Baking” mode for 1 hour 40 minutes.

After the beep, turn off the multicooker, do not open the lid, and leave the pie for 1 hour.
