Combining healthy ingredients in a fun way. This is a simple and interesting recipe for making delicious curd pastries. An ideal treat for the whole family to accompany their morning cup of coffee or glass of milk.

Thanks to reader Katyusha for the idea of ​​a sweet snail with cherries and cottage cheese! It was she who came up with this version of spiral cottage cheese, and I realized the idea, since the combination of cottage cheese and cherries is very tasty!

I decided to make snail pie with cottage cheese and cherries from shortbread yeast dough. Why? Because the puff pastry may seem underbaked due to the cherry juice. And we recently baked a pie with apples and poppy seeds using rich yeast dough.

The choice turned out to be successful: the fluffy, tiny dough went well with the cherry and curd filling.

Description of preparation:

For the filling, choose well-pressed cottage cheese.
Dry the greens and then add them to the filling. The filling should not be very wet, so that the snail bakes even faster, use the “Convection” mode. Choose greens for filling according to your taste. Spinach, green onions, dill and parsley will do. You can also add a little sorrel, cilantro or basil. How to bake snail pie with cherries and cottage cheese:

Grind the yeast with sugar, add warmed milk and mix.

Rub the butter and flour with your hands, add the egg.

Pour the yeast and milk into the flour and knead into a soft dough.

Place the dough in the refrigerator for 1 hour.

Prepare the curd filling: mix the cottage cheese with simple and vanilla sugar.

And put the cherries in a colander to drain the juice.

Take the dough out of the refrigerator and divide it into 2 parts. Sprinkle the table with flour and roll out one part into a rectangle 3-4 mm thick. We cut it into two strips 10-12 cm wide, the edges can be trimmed, and then molded and rolled out again. After crushing the strips with starch, place the cherries in the middle and sprinkle a little sugar. Then we wrap the edge of the dough and seal it carefully to make a tube with cherries.

We make tubes with cottage cheese from the second half of the dough in the same way. I made a few more bagels from the leftover dough.

We cover the round shape with parchment, grease the bottom and sides with sunflower oil, and lay out the tubes, forming a snail. Starting from the center, we roll the tubes in a spiral, alternating: with cherries, with cottage cheese, again with cherries, again with cottage cheese.

After letting the cake cool a little, open the pan and transfer it to a plate, where we generously rub powdered sugar through a strainer.

How to cook “Curd snails”

First of all, put the apples in the oven at 190 degrees. Mix sifted flour, soft butter and cottage cheese with sugar and yolks.

Add soda and a pinch of salt, knead the dough. It should turn out soft. Place the dough in the freezer for 10 minutes.

Cook the apples in the oven until soft. Then let’s cool them a little and take out the pulp. Make a puree using a fork, which is then mixed with sugar and cinnamon.

Divide the chilled dough into 4 parts. Roll out each part on a floured table into a rectangular layer. Lubricate it with a thin layer of filling.

Roll up the roll and cut it into small pieces.

The baking sheet must be covered with paper, on which we will then place the future “snails”.

Place the pan in the preheated oven for 20 minutes. Or less, check your oven, but the “snails” should be browned.

Step-by-step recipe with photos

Snail pie with cherries is made from unsweetened dough without adding eggs. The sweetness of the baked goods comes from filling and dusting with powdered sugar. It is advisable to “free” cherries (fresh or frozen) from juice as much as possible. Leave it in the strainer for an hour and a half to drain.

Prepare the basic ingredients for making “snail”.

Sift the flour into a bowl, combine with baking powder and salt. Stir. Add soft butter, grind flour and butter into crumbs.

Pour kefir into the dough and knead into a soft dough. If necessary, you can add a little more flour.

Roll out the dough into a layer 3 mm thick. Cut into strips 7-8 cm wide and 20 cm long.

Place sugar and cherries on the strips.

Pinch each strip tightly, including the ends.

Place all the “strips” in a spiral, starting from the edge, in a greased pan.

In a round mold with a diameter of 20 cm, 4 “strips” are placed along the bottom. There is enough dough and filling for about 7 “strips”.

Place the pan in a preheated oven and bake the snail pie with cherries at 180 degrees for about half an hour, taking into account the characteristics of the oven.

When the cake has cooled, dust it with powdered sugar.

Serve the snail pie by cutting it into portions.

Cooking puff snails with cottage cheese and raisins

Recipe for “Snail Cherry Pie”:

Remove pits from cherries.

Sift the flour into a bowl, add a pinch of salt, baking powder, and mix. Add butter, grind with flour into crumbs. Pour in kefir and knead quickly.

Roll out the dough into a rectangular layer about 3 mm thick, cut into strips 7-8 wide. By no means Already! It is important! Otherwise, it will be impossible to seal the filling.

Place cherries in a row in the middle of the strips and sprinkle with sugar.

Carefully pinch into a sausage.

Grease a large baking tray. Arrange the sausages in a spiral, not too tightly.

Bake at 200*C for about 30-40 minutes until golden brown. Remove the cake from the mold, cool and sprinkle with powdered sugar. I didn’t have any sprinkles because I didn’t have any powdered sugar at the dacha. I hurried to remove the pie from the baking sheet and it broke a little. It needs to cool completely.


The pie turns out very big. I didn’t have room for all the sausages, so I baked another small pie in a frying pan. I took it to my neighbor as a thank you for the oven. I must say, they really liked the pie!

Ingredients

  • Pancakes-10-12 pcs.

For filling:

  • Cottage cheese 9% -500g.
  • Raisins-100g.
  • Eggs - 1 pc.
  • Zest of one orange (optional).
  • Sugar-3 tbsp (or to taste).

For filling:

  • Sour cream-15-20%-100g.
  • Eggs - 2 pcs.
  • Sugar-2 tbsp (or to taste)
  • Vanilla sugar-2 tsp.
  • Sesame seeds - 1 tbsp (optional).

STAGE 1

Let's prepare thin pancakes with starch.

STAGE 2

Wash the raisins and soak them in warm water for 15-20 minutes to swell. Then add water. Dry the raisins with a paper towel.

STAGE 3

Let's prepare the filling: Mix cottage cheese with raisins, egg, sugar and orange zest.

STAGE 4

Place the curd filling on the pancake.

STAGE 5

Roll the pancake into a tight roll.

Thus, we will prepare all the pancakes.

STAGE 6

Prepare the filling: Mix sour cream with eggs, sugar and vanilla sugar.

STAGE 7

Grease a round mold (I have a mold with a diameter of 27 cm) with butter.

Place the pancakes tightly in a spiral pattern.

It took me 11 pancakes.

STAGE 8

Fill the pancakes with the filling and sprinkle with sesame seeds.

STAGE 9

Bake in an oven preheated to 180 degrees for 30-35 minutes.

Thank you very much for the delicious pancake pie! I’ve made it for Maslenitsa more than once, my family really liked it. The kids loved the sweet one with cottage cheese, and the husband wanted the meat one. I made it with meat according to this recipe, but I didn’t add sugar to the filling. I don’t really like baking pies, but pancake pies are so easy and quick to make. So, I will cook it not only for Maslenitsa.

  • 3 g dry yeast
  • 100 g milk
  • 50 g sugar

  • 3.5 g salt

For filling:

  • 500 g cottage cheese
  • 1 egg
  • 100 g sugar

From this amount of products you will learn 20 curd curls with cottage cheese

  1. Heat the milk, add 1 tsp. sugar, 2 tsp. flour and dissolve the yeast. Leave for half an hour to form a dough.
  2. Add sugar, salt to the sifted flour and mix, add softened margarine and sour cream, grind into crumbs.
  3. Add the yeast dough and knead into a soft dough, but make sure it holds its shape.
  4. Let stand for 15 minutes and knead.
  5. Cover and place in a warm place until the volume doubles.
  6. For the curd filling, grind the cottage cheese with the egg and sugar into a homogeneous mass. If the cottage cheese is too wet, you may need to add a little semolina to the filling.
  7. The dough must be rolled out into a rectangle. thickness - no more than 1 cm, spread the filling and roll into a roll.
  8. Cut into pieces, place on a parchment-lined baking sheet and leave for 40 minutes. Leave some distance between the snails, as they will grow in volume (2-3 times).
  9. Brush with beaten egg before baking.
  10. Bake at 180 degrees until the snails are browned.
  11. To fill, mix sour cream with sugar. Immediately after baking, generously coat the curls with sour cream filling, cover tightly and leave to cool completely.
