To preserve its original taste during baking, it is best to surround the berry not with dough, but with a soft curd and sour cream filling. In this case, the thin crumbly dough will act as a form that can hold the filling.
Base ingredients:
- Flour – 250 g;
- Sugar – 75 g;
- Butter – 100 g;
- Egg – 1 piece;
- Salt – 3 g;
- Baking powder – ½ tsp;
- Vanillin – 5 g.
For filling:
- Blueberries – 400 g;
- Cottage cheese – 300 g;
- Sour cream – 150 g;
- Egg – 1 piece;
- Powdered sugar – 100 g;
- Lemon zest – 1 tsp.
The finished cake will be quite fragile, so it is better not to use deep or silicone molds for baking. It is better to choose a springform pan of a suitable diameter and grease it thoroughly before baking. This way you can get the finished product without damaging its appearance.
Preparation of jellied blueberry pie with cottage cheese:
- Combine all the ingredients for the base, mix them long and thoroughly until you end up with a homogeneous plastic mass.
- Turn on the oven to heat up, setting the temperature to 200° C.
- Grease the mold with butter, place the dough in it, and make high sides. To prevent the dough from sticking, it is recommended to moisten your hands a little with cold water.
- Wash the blueberries, place the berries in a colander to drain off excess liquid.
- To prepare the filling, mix all ingredients except blueberries.
- Pour the berries onto the prepared base, then pour the liquid curd and sour cream mixture over them.
- The preparatory work is completed - you can send the cake to the oven.
The finished blueberry pie is somewhat reminiscent of a cottage cheese casserole. Wait until the cake cools completely so that the filling sets properly and does not spread when cutting. You can even cool the pie at room temperature, and then keep it in the refrigerator for 30-40 minutes - it will be even tastier. Those with a sweet tooth can sprinkle the dessert with powdered sugar when serving.
Step by step recipe
For the first stage you will need: flour, half sugar (about 100 g), baking powder, 2 eggs, butter, a third of cottage cheese (100-120 g), vanillin.
- Mix baking powder with flour, beat in eggs and sugar.
- Soften the butter or spread at room temperature, add it to the dough, mix the mixture thoroughly, add vanillin.
- Add cottage cheese into the dough, mix thoroughly. If you take grainy cottage cheese, rub it through a sieve.
For the second stage you need blueberries, two thirds of cottage cheese (200-240 g), half sugar (about 120 g), one egg.
- Set the dough aside and make the filling. It's best to use fresh berries - the baked goods will be juicier and more flavorful than a pie with frozen blueberries.
- Wash the berries and let them dry. Mix blueberries with the yolk of the remaining egg (no white required), cottage cheese and sugar.
- Whisk the mixture thoroughly.
The third stage is “assembling” the pie.
- Grease the pan with a piece of butter or olive oil.
- Spread the dough over it, leaving small “sides”.
- Pour in the filling and place the pie in the oven preheated to 180 degrees.
- It bakes for about 40 minutes.
How to make Blueberry Pie with Cottage Cheese
Mix flour, baking powder, eggs, vanillin, sugar and butter in a saucepan. You can mix with your hands, but more effectively - with a special dough attachment.
At first you will end up with this crumb-like mass.
However, gradually the mixture will become softer. When this happens, use your hands to knead the mixture into a dough.
Next, directly with our hands (our wife usually manages this process), we begin to compact the resulting dough in a baking dish. Pre-line the pan with pastry paper.
We form the dough for the pie, not forgetting to form the edges - otherwise the filling will spread. We pierce the dough with a fork and put it in the oven for 10-12 minutes at 180 degrees.
While the dough is in the oven, let's make the filling. Again, it’s incredibly simple to prepare: mix cottage cheese, vanillin, sugar, sour cream and blueberries. Mix with a whisk.
Remove the slightly baked dough from the oven. Pour the prepared filling onto it. Place back in the oven for another 30 minutes at the same temperature.

How to decorate a pie
It is worth emphasizing that such pastries are very beautiful in themselves , so if I bake this cake just for tea, I don’t bother with decoration. But if this is a holiday option, then I remember about the protein (remember, we separated it when we prepared the filling?). I whip it into a strong foam, add a little sugar, bake small meringues from it, which I use to decorate the pie.
Another option (the kids liked it) is to fill the top with chocolate glaze . To do this, mix 3 tablespoons of sugar, 2 sour cream, 1 cocoa, and boil. At the end, add a piece (50 grams) of butter.

If you have the same opportunity, take advantage of it, and then you can bake delicious pies at least every day, without tiring yourself with preparing dough. If you don’t like store-bought, make it yourself. Either way, the blueberry pie will be delicious.
To prepare we will need:
- Puff pastry – 500 g.
- Brown sugar – 5-6 tbsp. spoons
- Starch - 2 tbsp. spoons
- Egg – 1 pc.
- Blueberries – 2 cups
1. Thaw the dough for an hour at room temperature and then roll it out on baking paper. Usually there are two layers in the pack, one will become the bottom for the pie, and from the second we will form the sides.
2. Wash the blueberries, sort them, add sugar, starch, and mix.
3. Place the filling on the dough. Place strips of dough on top of the filling and brush them with egg.
4. Place in an oven preheated to 200 degrees for 15-20 minutes.

- You can use wheat flour, but to give an unusual taste, experiment with whole grain or rice flour . Remember that not all flour contains gluten, so some types must be mixed with wheat.
- If you don’t have baking powder at home, mix baking soda with citric acid in a 2:1 ratio and add this mixture to the dough.
Cooking and filling options
Try making blueberry shortcake for a more crumbly texture. For those who are on a diet, you can safely replace butter in the recipe with olive oil (two or three tablespoons is enough), use a sweetener instead of sugar, and use cottage cheese and sour cream with minimal fat content.
