How to cook

Step-by-step cooking recipe

Grind 3 yolks with a glass of sugar. sand

Add sour cream, 4 tbsp. spoons of cocoa, 1 tbsp. flour, baking powder. Mix everything thoroughly.

  • 500 ml kefir;
  • 2 cups flour (sifted);
  • 1 cup of sugar;
  • 8 tablespoons (slightly heaped) cocoa;
  • 2 eggs;
  • 2 teaspoons of soda.
    For cream :
  • 1 can of boiled condensed milk;
  • 200 grams of butter;
  • 100 grams of dark, seedless raisins (I used the Jumbo variety).
    For impregnation :
  • 1/3 cup currant jam syrup;
  • 3 tablespoons sugar;
  • 0.5 glasses of water.
  • Additionally : - vegetable oil for lubricating the mold; - Sprinkle with peeled seeds, chocolate or confectionery sprinkles on top.

How to bake chocolate cake “Night”

Step 1. Make the dough for chocolate cakes.

Heat the kefir a little until warm. The main thing is not to overdo it, otherwise it will collapse! Add 2 teaspoons of soda directly to the kefir and mix. Then we start adding sugar, eggs, cocoa and flour. Whisk everything together. The dough should turn out runny, like thick sour cream.

To bake the cakes, I used an ordinary cast-iron frying pan, but it needs to be well greased with vegetable oil - because the dough sticks very strongly when baking. I poured 1-2 tablespoons of oil and spread it with a silicone brush.

Step 2. Bake the cakes.

Preheat the oven well. Pour a little dough into the mold (so that it covers the entire bottom) and put it in the oven. We bake until done, which we check with a wooden match: we poke the dough, it should remain dry. Remove the finished cake very carefully! It's very brittle! Place the crust aside (I laid them out on a wooden board for rolling out the dough and covered them with a towel to prevent them from getting airy).

So we bake 4 cakes. The last one turned out a little thicker than the others, and I used it for the bottom crust.

Step 3. Make the cream for the cake.

Take the butter - it should be at room temperature and soft in consistency. Place butter and condensed milk into a cup and whisk everything together. Once everything is mixed, stop whisking. Don't overdo it - it may curdle.

Advice: If, despite all your efforts, the cream still curdles, don’t be upset! You can warm it up slightly and when the lumps melt, beat again.

Either apply the finished cream immediately or put it in the refrigerator; it melts at room temperature.

Soak the raisins in hot water for 15 minutes, then place them in a colander and let them drain. Finally, dry it with a paper towel.

Step 4. Make the impregnation and chocolate cake :)

Place all ingredients for soaking in a saucepan and heat (you can bring to a boil). It is best to apply the impregnation to the cake while it is hot, so it is better absorbed. I apply the stain with a pastry brush.

Lubricate the cakes with impregnation. Wait 1 minute and apply the cream, sprinkle raisins on top.

And so we lay out all the cakes.

Coat the sides of the cake well. I also lightly sprinkled them with crumbs that remained after baking the cakes. On top, in the center of the cake, I put some raisins and sprinkled peeled seeds around. You can also pour uneven strips of melted chocolate on top. In general, imagination is welcome here. Considering that the cream is oil-based, mastic should lie well on it, so good luck in your creativity;)

    Indeed, what birthday would be complete without a cake? I baked my first cake for my husband’s birthday using a recipe known as “Anechka”. The combination of honey and nuts is found in many cake recipes; Anechka also successfully combines these products, giving the cake a unique taste and aroma.

    The cream is made from ordinary, most importantly fresh, store-bought sour cream, whipped with powdered sugar (you can also add sugar). A lot of walnuts are added to both the dough and the cream. They do not need to be crushed into crumbs, just chop them with a knife into fairly large pieces.

    You can simply decorate the top of the cake with nut crumbs. I like to cover it with chocolate glaze, it will turn out more festive, but this is up to your discretion.

    To prepare the dough we need:

    100 grams of butter 1 cup of sugar 1 egg 100 grams of honey 2 cups of flour 2 tbsp. spoons of sour cream 1 tbsp. walnuts 0.5 teaspoon soda

    For cream:

    1.5 cups sour cream 100 grams of powdered sugar 1 tbsp. walnuts

    For the glaze:

    100 grams of dark chocolate 1 tbsp. spoon of butter 3 tbsp. spoons of milk 1 tbsp. spoon of sugar

    Short version of preparation:

    Let's start by preparing the dough. Melt the butter, add sugar. Mix well.


    Beat in the egg, add a couple of tablespoons of sour cream and mix again.


    Add honey.


    Gradually add flour combined with soda.


    For the cream, beat sour cream with powdered sugar.


    Add fairly coarsely chopped walnuts.


    Grease the finished cakes with cream.


    All that remains is to prepare the chocolate glaze. Melt the chocolate in a water bath.


    Add a spoonful of butter. Heat milk with sugar. As soon as the sugar has dissolved, pour it into the chocolate in a thin stream and mix thoroughly. All that remains is to grease the top and sides of our cake with chocolate glaze. You can sprinkle some nut crumbs on top...

    Preparing chocolate custard

    On the Internet, “Night” can be different. Well, this is understandable, it is not the same for everyone. Therefore, do not limit yourself in your imagination.

    The chocolate cream from this recipe goes very well with this dough. But, you can make it lighter by reducing the amount of butter. The technology and recipe for chocolate custard is as follows:

    1. Pour milk into a saucepan - 1 cup.
    2. Add 0.5 tbsp. sugar, 1 egg, 1.5 tbsp. spoons of flour, 1.5 tbsp. spoons of cocoa, cinnamon on the tip of a knife, mix thoroughly.
    3. Place on heat and cook until thick.
    4. Cool and add 40-50 g of butter, mix.

    It is quite appropriate to diversify it by adding ground walnuts.

    Chocolate cream is ready.

    Good memories are like chocolate: you won’t be full of them, but they sweeten our existence.

    Spread the cut layers of dough with cream. I also lubricate the top with cream (that amount is quite enough). I grate chocolate on top of the cream. I grated white chocolate onto the “cake”, it was also delicious.

    The dough turns out quite moist, the cream is well soaked. After resting in the refrigerator for at least one night, our “Nochka” will be moderately juicy, aromatic and tasty. This cake can be served without standing.

    Products needed to prepare the sponge cake: Flour - 150 gr., + egg yolks - 6 pcs., + sugar - 150 gr., + baking powder - 1 teaspoon, + cocoa powder - 2 - 3 tbsp. spoons, if you want a “Fairytale Night”, and if you want a “Fairytale Day”, then you don’t have to add it.

    Products needed for decoration: Your favorite ice cream - 800 - 1000 gr., + egg whites - 6 pcs., + cognac or rum - 50 gr., + sugar - 50 gr., + powdered sugar - 150 gr.

    Recipe for the “Fairytale Night” cake: For the cake, you can take a ready-made sponge cake, or prepare it yourself, according to the products indicated above.

    Mix all the ingredients for the biscuit. Pour the resulting dough into a greased form. It is better to cover the pan with baking paper before greasing. Bake in the oven at 220 degrees for 15 minutes.

    This skin can be prepared a day or two before the day when you intend to fully cook it and serve it. But in any case, it should be cold when we make the cake itself.

    Beat the whites until foamy with a pinch of salt. Gradually add powdered sugar.

    About 15 minutes before serving, place the ice cream in a mound. You can alternate layers of ice cream or take a regular ice cream. Brush the top with the protein mixture. Place on a baking sheet and place in a well-heated oven for 5 - 10 minutes. Check the degree of readiness by the color of the proteins. They should be the same as you see in the photo. The whites turn into meringue.

    And you can serve it on the table. For greater effect, you can do the following. Sprinkle powdered sugar on a dish around the ice cream cake, put sugar soaked in cognac or rum, refined sugar cubes are very suitable for this, set fire and serve immediately. You can set fire in the presence of guests. The impressions of the guests are VERY high, verified!

    PS It seems absolutely incredible: put the ice cream in a well-heated oven for 5 - 10 minutes. But it’s a fact: if the ice cream is covered with beaten eggs, it doesn’t have time to melt, only the whites turn into meringue!

    Chocolate cookies “Nochka”

    Cut the chocolate bar into small pieces.
