Cooking Hungarians:

Step 1: prepare the dough.


Mix wheat flour with sugar and salt. In a separate bowl, beat the eggs, then add milk first, then water and melted butter. Then gradually combine the liquid ingredients with flour and dry yeast, knead the dough.


After your dough becomes a homogeneous mass, you need to cover it with a kitchen towel and leave to rise in a warm place for 1 hour . If you are using a bread machine to knead, simply add the dry ingredients first, then pour in the wet ingredients and add the yeast. Set the device to the appropriate mode and wait for the yeast dough to arrive.

Step 2: prepare the filling.


Preparing the filling is simple. Combine all the ingredients and mix them very well. The only thing I would like to note here is: don’t be lazy and wash the raisins thoroughly, and then soak them in rum; then your filling and Hungarians, accordingly, will turn out even tastier. I'm telling you exactly. And adjust the amount of sugar to your taste.

Step 3: sculpt Hungarians in the classic way.


Roll out the risen dough into a rectangular layer with sides measuring 25 cm x 45 cm , approximately. And then cut the dough into squares with sides of 7 cm . You will end up with jagged edges on the sides. Cut them, punch them down, then roll them out and cut out two more squares. In total, about 20 blanks are obtained.


Take one of the blanks and place about a teaspoon of curd filling in its center.


Bring the opposite edges of the square together over the filling. Blind them tightly together.


Now connect the remaining edges of the dough in the same way and your Hungarian is molded! All that's left is to mold the remaining 19 pieces in exactly the same way. After sculpting, give the Hungarians 30 minutes to detune.

Step 4: sculpt unusual Hungarian women.


And if you want a little variety, here is another option for Hungarian women. We also need a square. Make cuts from the middle to each corner.


Now take the corner of one of the triangles and bend it inward, towards the center of the next triangle.


Fold the corner of the next triangle in the same way.

Set the oven to preheat at 200 degrees. We begin to form cheesecakes. We take our lumps out of the refrigerator after the time has passed and begin to create. My favorite moment)) I don’t use a rolling pin when working with dough, so I knead each one with my hands... not thinly... in a circle..

Then pour sugar over half the circle.. Whoever likes it for sweetness... you can add 1 tsp. less is possible.. I do it with 1/2 tsp.

We pinch the circle like a dumpling.. pressing the edges well and carefully..

And now we make a triangle out of the dumpling, folding it in half.. We also press the edges so that the sugar syrup does not leak out during baking. We form all the lumps in this way and place them on a lightly greased baking sheet. If the oven is standard, you get 2 baking sheets. Bake for 15 minutes until beautifully golden brown.

  3. Eggs need to be divided into yolks and whites. The latter will not be needed in this recipe, so they should be set aside. You need to remove the peel from the lemon and grind it in a blender.
  4. In a deep bowl you need to mix cottage cheese with yolks (2 pcs.). To this mass you need to add regular and vanilla sugar, lemon zest. All ingredients must be beaten with a mixer or blender until a homogeneous consistency is obtained.
  5. The dough must be thawed and rolled out on a sprinkled surface in a layer 1 cm thick. It should be cut into squares measuring 10*10 cm.
