Charlotte without sugar with kefir
Another sugar-free charlotte recipe is very similar to the first, but it turns out more satisfying and fluffy. The fact is that the dough contains kefir. The rest of the ingredients are the same. The cooking procedure is also similar. The difference is that when kneading the dough, some honey is added to it. Otherwise, apples are soaked in honey in the same way.
The charlotte is laid in the same way. First the dough, then the apples and honey.
Kefir dough with the addition of honey will be more fluffy and rich, and will double in size when baked. Due to this, the fruits placed on top will seem to drown in the rising dough, and you will get a single mass of pie.
Some substitutions and exceptions
You can omit butter from the recipe altogether. No one will notice the absence of such a product. You can add fermented milk products such as kefir to the dessert. To lubricate the mold, it is preferable to use vegetable oil and generously dust the surface with semolina. When working in the kitchen, imagination and common sense are very useful. With the help of such qualities, any, even inexperienced, housewife will be able to make charlotte with apples without sugar, the recipe of which will be begged by grateful guests.
Recipe without sugar and flour
You can also make charlotte not only without sugar, but also without flour - a dream for women losing weight. In this recipe, flour will be replaced with semolina. Semolina, as you know, swells in liquid when heated, so it is required for a pie several times less than the same flour.
So, you will need:
- several apples, preferably tougher and juicier ones;
- a glass of semolina;
- a glass of kefir;
- one egg;
- three tablespoons of honey.
Cooking process:
- Knead a liquid dough like sour cream from semolina, flour, eggs, kefir and honey. You can add half a teaspoon of baking soda or baking powder.
- Pour chopped apples or pears into the dough and stir until they are evenly distributed in the mass.
- Pour the resulting dough with fruit into the mold prepared in a well-known way and bake in the same way as the previous options.

A recipe for a sweet pie that is prepared completely without sugar. It should not be confused with low-calorie options, as honey itself has a high energy value. It is very important to add baking powder, which will maintain the weak consistency of the dough without sugar. In addition to the pleasant taste, a special feature of this pie will be the amazing aroma of baked apples and honey.
Ingredients
- 100 g honey;
- 3 eggs;
- 130 g flour;
- 8 g ripper;
- 350 g apples.
Step-by-step recipe for classic charlotte without sugar
There is no need to melt the honey for the dough. It will still break in the eggs. But if the product is very thick and even hard, it is better to warm it up a little. You can keep it in the microwave for a few seconds or just put it in a jar in hot water and collect the melted mass. Then transfer to the separated egg yolks and beat for a couple of minutes.
Beat the whites separately until stiff and fluffy. Since they do not contain sugar, this is done very quickly, two minutes is enough.
Cut the apples into cubes, but do not cut them coarsely. The dough according to this recipe is light, large pieces will fall to the bottom, and the bottom of the pie will be wet.
Mix the yolks with whites and flour, season the mixture with baking powder. Transfer the honey dough into a mold previously lined with a piece of parchment or simply well greased.
Preheat the oven to 180. Bake the pie without sugar for about 30 minutes. The time may vary slightly depending on the diameter of the mold used.
It should be borne in mind that dough with the addition of honey always bakes faster and turns out darker than a classic sponge cake with sugar. Therefore, there is no need to set the temperature to high. Also, you should not remove the charlotte when a light golden crust appears, it can be deceptive, it is better to check the readiness with a stick.

But this does not mean that sweet pastries should be excluded from the diet. Charlotte without sugar exists. Moreover, it is really tasty!
Those for whom sugar is contraindicated for health reasons will be happy to treat themselves to dietary baked goods. Or those who strive for a slim figure. A sugar-free charlotte recipe usually includes honey, fructose or other sweeteners. As a result, the dish is in no way inferior in taste to regular charlotte; on the contrary, honey adds a unique aroma.
Quick recipe for charlotte without sugar (low-calorie pie with substitute)
For such a pie, a sugar substitute in tablets is used, but you can use any other type, for example, the natural herb stevia or the popular fit parade. Everything is mixed and baked very quickly, the process will take about half an hour.
Ingredients:
- three eggs;
- 130 g flour;
- four apples;
- 5 g ripper;
- 25 ml oil (refined vegetable);
- sugar substitute.
How to quickly prepare charlotte without sugar
Separate 1.5 tablespoons of flour and a little butter, five milliliters is enough. Grease the pan and sprinkle with flour. Immediately turn on the oven and let it preheat to 180.
Wash the apples and cut into large pieces. You can simply divide each fruit into eight parts and carefully cut off a corner. There is no need to clean anything. Place immediately into the mold.
Place the eggs in a bowl. Add sugar substitute to taste. For a medium-sweet cake, add the equivalent of 12 tsp. Usually it is equal to one tablet. If you are not using powder, be sure to crush it in a mortar before use. Beat the eggs with a mixer for about five minutes.
Add the baking powder and flour to the dough, knead, and add the remaining butter at the end.
Pour the dough over the apples that were previously placed in the mold and bake. At 180 degrees, sugar-free charlotte will cook for about 25 minutes.

Video recipe for charlotte without sugar and butter:
Charlotte without sugar with honey and semolina
The simplest recipe for charlotte without sugar, which is similar to manna. Honey is added for a pleasant taste. Another feature of the recipe is the infusion of the dough, this will take a little more time, but you don’t need to beat anything.
Ingredients:
- a glass of semolina;
- three apples;
- three spoons of honey;
- a glass of kefir;
- 5 g soda;
- one egg;
- cinnamon.
How to cook
Mix kefir with cereal. It is advisable to use a warm fermented milk product or at least at room temperature. But you also need to be careful when heating, since kefir can easily curl into cottage cheese and the whey will come off.
While the semolina is infusing, mix honey with one egg and grind well until smooth. If necessary, you can melt it a little first.
As soon as the semolina swells in kefir, add soda to it, stir, and only then add the honey mixture with the egg. Stir the dough again, let it sit a little longer while the apples are prepared.
Wash the fruit and cut into long slices. You can immediately put them in the mold, then fill them with dough, but it’s better to do the opposite. That is, pour out the dough, lay out the apples and sprinkle with cinnamon powder. If not all the slices fit, some can be “drowned”.
Bake the charlotte on semolina without sugar for about 35-40 minutes at 180 degrees.
If the dough is prepared with semolina, then it can also be used to sprinkle the greased form. As a result, a fairly dense and crispy crust will appear on the bottom and sides of the charlotte.
Making charlotte for diabetics without sugar
Diabetics also want to eat tasty, albeit not very healthy, food. One of these recipes is charlotte - a delicious pie that is quite simple to prepare. However, before consuming charlotte for type 2 diabetics, it is recommended that you familiarize yourself with the general rules for preparing this pie, as well as with the various recipe variations.
Rules for baking for diabetes
Baking for diabetics must meet two rules: be healthy and tasty. In order to achieve this, you will need to follow a number of rules. First of all, wheat flour is replaced with rye flour, because the use of low-grade and coarse flour does not affect glucose levels in any way. Making charlotte without sugar involves:
- refusal to use chicken eggs for kneading dough or reducing their quantity to a minimum. However, when boiled, their addition as a filling is acceptable;
- butter is replaced with vegetable oil or, for example, margarine. The lower the concentration of fats, the better;
- Instead of sugar, it is recommended to use any substitute: stevia, fructose. The more natural the product is, the better;
- The ingredients for the filling must be selected especially carefully. For example, it should not be sweet fruits, berries, or other high-calorie foods that can cause an increase in sugar levels.
An important rule is to control the calorie content and glycemic index of baked goods directly during the cooking process (this is very important for type 2 diabetes). It is also advisable to avoid preparing large portions, which will prevent overeating and consumption of stale foods.
Charlotte with apples
To prepare the most common charlotte with apple, use one egg, four apples, 90 g. margarine, cinnamon (half a tsp). We should not forget about the four tbsp. l. honey, 10 gr. baking powder and one glass of flour.
The process of making charlotte with apples without sugar is extremely simple: margarine is melted and mixed with preheated honey. Then eggs are beaten into the margarine, baking powder is added, as well as ingredients such as cinnamon and flour - this is necessary to obtain the dough. Simultaneously:
- apples are peeled and cut into slices;
- Place the fruits in a suitable baking dish and pour in the dietary dough;
- The charlotte should be cooked in the oven for 40 minutes. It is advisable that the temperature be no more than 180 degrees.
Considering that there is no stage of beating sugar and eggs, the apple charlotte will not turn out quite fluffy. Despite this, it will be 100% tasty due to its aroma and freshness.
Pie with kefir and cottage cheese
A variation of the classic charlotte recipe for diabetics is baking with the addition of cottage cheese and kefir. For this we use: three apples, 100 gr. flour, 30 gr. honey, 200 gr. cottage cheese (5% fat is the best option). Additional ingredients are 120 ml of low-fat kefir, one egg and 80 g. margarine.
You can prepare this delicious recipe as follows: peel the apples and cut them into slices. Then they are fried with the addition of butter and honey. This must be done in a frying pan that is suitable for baking. Frying should take no more than five to seven minutes.
The dough is prepared from ingredients such as cottage cheese, kefir, flour and egg, which are beaten with a mixer. Next, the fried fruits are poured into the dough and the charlotte is baked in the oven. It is recommended to do this for no longer than 30 minutes at temperatures of no more than 200 degrees.
Baking with rye flour
Sugar-free charlotte can also be prepared with rye flour. As you know, the latter is healthier than wheat due to the fact that its glycemic index is lower.
Nutritionists recommend using 50% rye and 50% regular flour when preparing baked goods, but this ratio can be 70 to 30 or even more.
To prepare the pie, a diabetic will need to use:
- 100 gr. rye flour and an arbitrary amount of wheat;
- one chicken egg, which can be replaced with quail eggs (no more than three);
- 100 gr. fructose;
- four apples;
- a small amount of margarine for greasing.
The cooking process begins by whisking eggs and fructose for five minutes. Then sifted flour is poured into this composition. At the same time, the apples are peeled and cut into small pieces, which are mixed with the dough. The greased form is filled with dough. The temperature should be no more than 180 degrees, and the baking time should be about 45 minutes.
Multicooker recipe
A diabetic diet may include charlotte, which is cooked not in the oven, but in a slow cooker. This non-standard recipe will allow a diabetic to save time and also diversify the diet. Another feature of baking in this case is the use of oatmeal, which can act as a complete replacement for flour.
The ingredients for making this charlotte are: five sugar substitute tablets, four apples, one protein, 10 tbsp. l. oatmeal. Also use a small amount of flour and margarine for greasing.
The cooking process is as follows:
- the whites are cooled and whipped together with a sugar substitute until foamy;
- apples are peeled and cut into slices;
- flour and oatmeal are added to the proteins and mixed carefully;
- Combine the dough and apples and place in a pre-greased bowl.
To fully prepare baked goods, the multicooker must be programmed to the “baking” mode. Usually 50 minutes are enough for this, after which it is recommended to wait for the pie to cool. Only after this will it be completely ready for use.
How to properly consume such pies?
For people with diabetes, baked goods, even those prepared with the addition of healthy ingredients, should be consumed in minimal quantities. For example, one medium piece (about 120 grams) per day will be more than enough. At the same time, charlotte should not be consumed in the morning or before bedtime, so the ideal time for this is lunch or an afternoon snack.
Nutritionists and endocrinologists recommend consuming this type of baked goods along with unsweetened tea, a small amount of milk, and other healthy drinks (for example, natural juices). This will replenish energy reserves, as well as fill the body with vitamins and mineral components.
If, after eating charlotte, a diabetic experiences a deterioration in health and other unpleasant symptoms, it is recommended to check the sugar level. It is possible that this type of baking has a negative effect on the glucose ratio, in which case it is advisable to avoid it.

Dietary charlotte without sugar with rolled oats
To make this pie you will need oatmeal. In this case, the calorie content of baked goods will not decrease much, but the benefits will increase. The option is not very sweet, but a little honey is still added to the dough. If you wish, you can use a sugar substitute, as in one of the recipes above.
Ingredients:
- 70 g flour;
- 0.5 cups of rolled oats;
- 2 eggs;
- 100 ml kefir;
- 2-3 apples;
- 1 tbsp. l. honey;
- 0.5 tsp. soda
Step by step recipe
Mix the flakes with kefir, add soda to them. Leave for twenty minutes. You can pre-grind the flakes or roll them with a rolling pin, this will shorten the swelling time.
Add honey to the eggs and whisk everything together until completely dissolved. If you get foam, it will be even better.
Pour the eggs into a bowl with swollen oatmeal and kefir, stir.
Add flour to the dough, knead with a spoon. Then leave for another five minutes so that everything stands together.
For now, you can prepare and cut the apples. Make small cubes or slices of about a couple of centimeters. Pour into the dough, stir.
Transfer the charlotte into the mold. Place the pie in the oven and cook at 170 degrees. After 30 minutes, check the dough with a toothpick. If necessary, increase the time.
In addition to oatmeal, different types of flour are often used in dietary baking: buckwheat, corn, rye. They help make your diet healthier, diversify your daily menu, and eat baked goods without harming your figure. Now you can easily find whole grain flour or a mixture of several types on sale, which are also worth paying attention to.
Diet pie recipe
Diet charlotte - this phrase may seem strange. But, nevertheless, every housewife can prepare a tasty pie that is not harmful to the figure. In addition to the fact that this recipe contains no sugar, it also replaces some of the flour with oatmeal, the benefits of which are known to every housewife.
Required ingredients:
- ½ tbsp. premium wheat flour;
- ½ tbsp. oatmeal;
- two chicken eggs;
- ½ tsp. baking powder;
- 1-2 tbsp. l. honey;
- 3-5 apples;
- vanilla;
- cinnamon.
We start cooking by breaking the chicken eggs.
Breaking eggs
Beat the eggs with a whisk until a homogeneous mass is obtained; it should almost double in volume.
Beating eggs
To make the foam rise higher, you need to add a pinch of salt to the protein mass. Salt will not affect the taste of the pie, but will allow you to quickly achieve the required thickness of the protein foam.
After this, gradually add flour, oatmeal (ground), baking powder and also gently mix with a spatula, lifting the mass in one direction from bottom to top. This is necessary so that the mass does not lose its airiness. Otherwise, the dough will not rise, and the charlotte according to this recipe may not work out.
The apples must be prepared in advance so that the dough does not have time to settle while you are slicing the fruit. The apples are cut into thin slices, but you can choose any cutting method if you wish. So, chopped apples must be placed in honey. If you only have candied and thick honey, then it should be preheated in a water bath.
After this, apples are placed in slightly cooled but liquid honey. This is necessary so that they are lubricated evenly. Add vanilla to the honey-apple mixture. If you wish, you can add more cinnamon, or you can do without it. The recipe is good without cinnamon, as vanilla adds the necessary aroma and taste.
Grease a baking dish with a small amount of vegetable oil and place the dough on the bottom.
Pour over the honey that contained the fruit. All that remains is to send the form to the oven, which must be preheated to 180 0C . The pie is baked according to this recipe for about 25-30 minutes.
Place the charlotte on a plate only after it has cooled.
Ingredients needed for cooking
- large apples – 3 pcs.;
- wheat flour – 100 g;
- cottage cheese Kneading dough
In standard recipes, sponge dough is prepared consisting of only three ingredients - sugar, eggs and flour. But since our pie is special, you will need much more products. And although honey takes the place of sugar, there is no need to add it to the dough. For it we only need eggs, flour, kefir and cottage cheese. All this needs to be mixed. But since we need a very tender mass, we will do it in a special way.
1. First, let's make cottage cheese. This product is usually sold in granular form. But we don't need grains. It is necessary to turn it into a soft, homogeneous curd mass. To do this, simply rub the cottage cheese through a metal sieve with a spoon.
You can use an immersion blender, which will instantly mix and grind the cottage cheese to a puree.

Baking charlotte in the oven
We have all the ingredients ready, even the mold is greased quite well.
1. We pour the dough on top of the fruit. Distribute it evenly.
2. Don't forget to preheat the oven to 200 degrees. It turns out that on top of the pie there will be translucent apple slices with a delicious caramel-colored crust. This charlotte will turn out very beautiful.
3. You don’t need to bake it for a long time; half an hour will be enough if you put it in a well-heated oven.
4. After the baking time has expired, you can remove the pan with the charlotte from the oven.
Let it cool slightly before removing from the pan. It is best to serve charlotte simply warm. It goes well with regular unsweetened tea and aromatic coffee.
This ends the recipe. As you can see, making charlotte without sugar is not so difficult. Just do this with good sweeteners. Honey is the best natural sugar substitute. To achieve a spicy taste, you can add a little cinnamon to it, although this is not described in the recipe. The combination of cinnamon and honey gives a very interesting aroma that awakens the appetite. In general, prepare your charlotte according to our recipe and enjoy sweet pastries without sugar.
Good luck with this, don't forget to leave a comment and bon appetit!

Recipe for making an open apple pie without sugar:
Mix all the ingredients for the dough except the flour, then gradually add it and knead the dough until it is elastic enough to roll out.
Prepare the filling: cut the apples into thin slices, add raisins.
Roll out about 2/3 of the dough and place it on a baking sheet. Place the filling on top in an even layer.
Sprinkle cinnamon over the filling and seal the edges of the pie.
Using the remaining 1/3 of the dough, make stripes to decorate the top of the pie.
Bake the apple pie at 200ºC for 12-15 minutes.
It turns out to be a very tasty pie, and most importantly - completely without sugar! Bon appetit to you and your children!
We are all accustomed to sweet pastries. Most recipes for sweet buns and pies call for both a sweet filling and a sweet dough. Therefore, a certain amount of sugar is added to each of these components. But what to do if you can’t consume sugar, but you still want to treat yourself to a piece of pie? Then our recipe comes to the rescue. Charlotte made without sugar is a great solution for you. Charlotte is loved by many housewives and has hundreds of cooking methods and recipes. We invite you to try one of the most delicious and tender. In addition, our recipe differs from the traditional one not only in the absence of sugar. A very interesting combination of products awaits you. So, let's look at the advantages of this particular recipe in order.
Firstly, no sugar. For many people watching their figure, this will be a huge plus. We will replace sugar with honey.
Many people know its beneficial properties. But not everyone knows that honey, being a natural fructose, is completely absorbed by the body. It breaks down into monosaccharides, and the body completely absorbs them without storing them in fat. But at the same time, honey is much sweeter than sugar, and also has a unique distinctive taste and aroma. Therefore, it must be taken in smaller quantities. This is not to say that this charlotte recipe is low-calorie. It uses completely low-fat ingredients, but quite a lot of oil. In general, it has moderate calories. Do you still want to know what's special about the combination of products? See for yourself!
Recipe Basics
I've run out of all the flour mixtures. And, since I decided to prepare baked goods based on shortcrust pastry, the question arose about what kind of flour to make it from. I decided to mix 1:1 rice and corn flour.
This time the apples were golden and idared, just sweet and sour, just what we needed. Only homemade cream 20%.
Filling like Tsvetaevsky pie: cream 15-20%, egg, honey, corn flour. You noticed that I replaced some components. I really like all sorts of natural fillings in baked goods. Adjust the sweetness yourself with honey, stevia extract, coconut or grape sugar.
I do without baking powder, because rice flour copes with this task successfully.
