  • Many people are still convinced that capelin can only be fried and eaten that way. I don’t really like the process of frying it because of the smell, but I often buy capelin for pies. It’s very easy to cook with it: you can either take raw fillet, which will quickly bake, or boil it in a minute. Of course, I make pies with other fish, but why overpay if you can buy cheap capelin and get the same wonderful dish as, for example, hake?

    If you have the dough, then you can prepare such a pie very quickly, and you will not encounter any difficulties. Everyone eats with pleasure, and I cook. So check out a couple of my favorite recipes and give them a try too.

    Pie with capelin and onion

    Kitchen utensils and equipment: baking sheet, knife, meat grinder, saucepan, frying pan, spoon, oven, scissors, rolling pin, bowl.

    Ingredients

    capelin600-700 g
    Milk300 ml
    Dry yeast1.5 tbsp. l.
    Sugar1.5 tbsp. l.
    Vegetable oil5 tbsp. l.
    Flour4-4.5 stacks.
    Boiled eggs4-5 pcs.
    Onion1.5 pcs.
    Salt1/2 tsp.
    Egg yolk1 PC

    Cooking process

    1. Pour 150 ml of milk into a bowl, add one and a half tablespoons of yeast and sugar. Leave for 20 minutes.

    2. Pour in the second part of the milk, 4-5 large spoons of butter and stir.

    3. Sifting the flour in parts, knead the dough, transfer to a bowl, cover and leave for 40-60 minutes.

    4. Coarsely chop one and a half onions into pieces convenient for you and fry with a tablespoon of oil in a frying pan until half cooked. Fill the pan halfway with water and, when it boils, add 600-700 g of capelin. Boil for a minute and place on a plate.

    5. Remove the meat from the fish and grind it in a meat grinder along with fried onions and 4-5 boiled eggs.

    6. Add salt, spices and stir.

    7. Divide the dough into two slightly different sized parts. Roll out the smaller part on parchment and form it into a fish.

    8. Pour in all the filling, distributing evenly. Roll out the second part so that it is slightly larger than the first, and cover the filling with it. Fold the edges in to create a fish.

    9. Using scissors, make scale-shaped cuts in the dough, separate the mouth, tail, and make an eye.

    10. Cover the pie with egg yolk.

    11. Bake for 25-30 minutes in an oven heated to 180-190°C

    Pie with capelin and rice made from yeast dough

    Yeast baking with capelin and rice in the oven is done very simply and, most importantly, quickly. To do this, you don’t have to be an experienced cook and you can always whip it up for the arrival of unexpected guests. You can prepare it even faster if you use store-bought ready-made puff pastry. This dish is quite suitable both on its own and with tea.

    You will need:

    For the test:

    • 4 tbsp. flour
    • 1 pack of yeast
    • 2 chicken eggs
    • 1 tbsp. milk (can be replaced with water)
    • 50 ml. vegetable oil
    • 2 large spoons of caxap half a tsp. salt

    Filling:

    • 2 onions
    • 1/2 kg. capelin
    • 2 tbsp. ready rice
    • 4 potatoes
    • salt, pepper, spices

    Cooking process:

    1. We are preparing yeast dough for fish pie. Dissolve the yeast in warm water. In a separate bowl, beat the eggs. Pour the yeast into it. Add caxap, salt, flour. Stir. Add oil. Leave the yeast dough in a warm place for an hour. We are preparing the filling for fish pie with capelin and rice. We wash the fish, cut off the heads, and remove the spine. We salt the fish.
    2. Boil the rice. Peel and wash the onions and potatoes. Cut the onion into rings. Potatoes - thin slices.
    3. It's time for the yeast dough. We bake a delicious fish pie with capelin in the oven. Knead the dough thoroughly. We divide into two parts, the first is smaller, the second is larger. We roll out most of it and place it on a baking sheet coated with oil.
    4. Place half of the potatoes on a baking sheet. Next - half the rice and half the onion. Add a little salt to each layer. We lay out the fish, then the remaining onions, rice and potatoes. Cover the fish pie with the 2nd rolled piece of dough. We pinch the edges. Grease the pie with capelin filling with yolk or mayonnaise.
    5. Also, it wouldn’t hurt to sprinkle the pie with grated cheese. Place in the oven for 50 minutes. We bake at a temperature of 180 degrees. A fragrant and tasty fish pie with capelin and rice is ready. Invite your guests!

    Cooking process

    1. In a bowl with 450 g of rice, grind 4-5 eggs on a fine grater and add 15 g of finely chopped onion and spices. Stir.

    2. Roll out 750g of dough until it covers the bottom of the tin and leaves an edge when you transfer it.

    3. After placing the dough in the mold, fill it with filling and smooth it out. Place 450 g capelin fillet in an even layer. Add spices.

    4. Fold the edges of the pie over and brush them with raw egg.

    5. Bake for 25-30 minutes in an oven heated to 180°C.

    Next, step by step, we prepare our pie:

    1. Mix: yeast, sugar, flour, water, sunflower oil and salt. The dough should be elastic and soft. After kneading, put it to rise in a warm place.
    2. Clean the capelin from the entrails and head. Clean the meat well from unnecessary parts.
    3. Cut the onion into rings or half rings, depending on what you like.
    4. Preheat the oven to 180C, since at a higher temperature the dough may burn and not bake inside.
    5. Grease a baking sheet with butter and place the first layer of dough on it. Then put fish (already salted and peppered) and onion on top of the dough, cover with a second layer of dough. Brush the pie with egg yolk and make a hole in the middle of the pie. It is needed for the fish to cook well. Be sure to check that the edges are sealed well, otherwise the cake will simply fall apart.
    6. Place in the middle of the oven to bake for about an hour.
