  • Today, almost any fruit is available to us at any time of the year, and if you want to cook something fresh and summery in the middle of winter, then you can easily do it. This also applies to desserts, so when I recently wanted to bake a cherry pie, I simply took the berries out of the freezer, and literally an hour later I had a delicious dessert on my table.

    Making cherry pie is very simple, but it turns out incredibly tasty. You can see this for yourself by reading and repeating the recipes below.

    How to choose the right ingredients

    • If you buy cherries in a store, buy them without pits right away so you don’t have to deal with them later.
    • Frozen cherries should be separated from one another and should be without ice.
    • Use good butter for the dough, not a spread, so that the baked goods turn out delicious.

    Cooking process

    Preparing the dough

    1. Place 150 g butter, 2 tbsp. l. sugar and a quarter spoon of salt.

    2. Separate the yolks from the whites and add to the butter. Beat everything until lightly fluffy with a mixer.

    3. Sift 1 tsp. baking powder along with two glasses of flour and, adding to the butter in parts, knead a soft elastic dough.

    4. Stretch it on the table with your hands and transfer it to the mold.

    5. Form the bottom and sides of the pie by gently stretching the dough with your hands.

    I chose one of the simplest types of dough, namely shortbread, since you don’t need to knead it for a long time and wait for it to rise, but can be used immediately. And there is no need to carry out unnecessary manipulations with the cherries, since I have them immediately pitted, and I only need to defrost them.

    Filling

    1. Mix 0.5 kg of cherries with 1 tbsp. l. starch and 2 tbsp. l. Sahara.

    2. Pour the filling into the pie and smooth it out.

    3. Place the pie in an oven preheated to 180°C for 20 minutes.

    Meringue

    1. Beat the egg whites with a mixer until fluffy. Adding 2/3 cup. sugar, continue beating until stiff peaks form.

    2. Spoon the mixture onto the baked pie.

    3. Reduce the oven temperature to 150°C and bake the pie for another 15 minutes.


    4. Turn off the oven and let the cake sit in it for another 10 minutes.

    With added cottage cheese

    An open pie with curd and cherry filling is a delicate dessert that family and friends will appreciate.

    • 2 eggs for dough and 2 for filling;
    • 3 tbsp. l. sugar for dough and 120 g for filling;
    • 100 g plums. oils;
    • 2 tsp. baking powder;
    • 300 g flour;
    • packaging of curd cream;
    • 300 grams of pitted cherries;
    • 500 grams of granular cottage cheese;
    • stack sour cream.

    Rinse the berries in advance.

    Grind the butter and sugar, then add the eggs and mix again.

    Then sift the flour along with the baking powder and mix well.

    Lightly grease the mold, spread the dough along the bottom and form sides to a height of 2-3 cm.

    Combine all the dairy products in one bowl, beat in the eggs, add sugar. Work well with a blender. Spread the cottage cheese mixture over the base and evenly spread the berries on top.

    Bake at 180 degrees. 50 minutes. Then let it cool, and only then remove it from the mold.

    Cooking process

    Dough

    1. Mix 300 g of soft butter with 225 g of sugar and three eggs until smooth.

    2. Add flour (450 g), knead a soft dough and stretch it with your hands to the size of the mold.

    3. Cover the pan with baking paper and grease the sides with vegetable oil.

    4. Form the dough into sides and bottom. Prick them several times with a fork.

    5. Place it in an oven preheated to 180°C for a quarter of an hour.


    Filling

    1. Mix 300 ml of cream with three eggs, 150 g of sugar and 1.5 tbsp. l. flour. Stir until smooth.
    2. Place 600 g of cherries into the baked dough, smooth it out and fill with the prepared mixture.

    3. Return the pie to the oven for another half hour.

    Canadian recipe

    Shortbread dough:

    • drain butter - 150 g;
    • sugar - 2 table. l.;
    • yolk - 3;
    • salt (pinch);
    • baking powder - 1 tsp;
    • flour - 2 cups.

    Filling:

    • cherry - 500 gr;
    • starch - 1 tbsp. l.;
    • sugar - 2 table. l.

    Meringue:

    • egg whites - 3;
    • sugar - ⅔ cup.

    First of all, prepare the shortbread dough by rubbing the dry ingredients with butter into crumbs. Then mix with the yolks. The resulting shortbread dough is similar to the previous versions. We put the base in the mold and form the sides.

    Mix the cherries with sugar and place on the base. We send it to bake a little in the oven at 190 degrees for 15 minutes.

    A few minutes before the end of baking the base and berries, we begin to make the meringue. First, beat the whites, then add sugar and beat the mixture until stiff peaks form. Spread the meringue over the berries. We turn the temperature up to 150 degrees. and bake the pie for another 15 minutes. The meringue will brown. Leave for another 10 minutes after turning off the heat, then remove from the oven, then from the mold.

    • vanilla extract - 2-3 drops;
    • almond flakes/crushed nuts - 2 tablespoons. l.
    • Beat eggs, butter and sugar together. Then add the sifted flour, baking powder and salt, pour in the extract. Knead the dough.

      Grease the mold with oil. If desired, you can sprinkle with flaked almonds or crushed walnuts. Spread the dough out in an even layer. Distribute the washed cherries on top, lightly immersing the berries in the dough. Bake for half an hour at 180-190 degrees.

    How to decorate and what to serve with

    • If you are preparing a closed pie, the easiest way is to decorate it with the same cherries that you use for the filling. Or sprinkle it with powder, jam or topping.
    • The pie, with meringue or open, turns out beautiful as it is, and it doesn’t need any extra decorations.
    • This dessert is best served with sweet tea or juice to balance the sourness in the pie. But if you like sour things, you can simply brew black, green or herbal tea, pour yourself a cup of coffee or brew cocoa.
    • Even mulled wine or grog would go well with this pie on a cold evening. And if you don’t want to drink alcohol, you can replace it with a cup of warm milk.

    This pastry is named so for good reason. It perfectly combines delicate soft dough, aromatic cherries and a sugar crust. This pie is worth baking.

    Recipe description:

    1. Break eggs into a cup, add granulated sugar and vanilla sugar. Beat with a mixer until fluffy foam is obtained. Add melted, but not hot, butter, milk and beat again with a mixer.

    2. Mix flour with baking powder and salt, add to the egg-cream mixture. Mix with a mixer to form a smooth dough.

    3. Line a baking tray with baking paper. Pour the dough and smooth it over the entire surface. Place cherries on top in 1 row.

    4. To prepare sugar crumbs, you need to combine pieces of soft butter, flour and sugar. Rub well with your hands and pour over the pie.

    5. Place in an oven preheated to 180 degrees and bake for 35-40 minutes. Remove from the oven and transfer the pie from the baking sheet to a wire rack.

    Some tips

    • If the dough comes out runny, don't be afraid to add a little flour. It all depends on the products themselves, so it’s better to regulate the amount yourself rather than strictly follow the recommendations.
    • To remove excess juice from cherries, you can add a little starch to them. It will absorb any juice or water left after freezing so your cake won't be soggy.
    • If you use frozen cherries, be sure to defrost them beforehand. If you put cherries in a pie with ice, they will melt and release juice, which can ruin your pie and make it soggy.
    • Let the fresh cherries sit in cold water for a while so that all possible worms come out of them.
    • The easiest way to remove the pits from cherries is with the eye of a pin.
    • Sprinkle the table and hands with flour when you work with the dough, then you will definitely knead it well and not tear it.

    • 3 tablespoons sugar;
