We associate Georgia more with barbecue and khachapuri, but if you go deeper, you can find so much delicious food here that no gourmet can resist. I just recently found out and immediately tried the recipe for what turned out to be a very popular “Tbilisi” salad and was pleasantly surprised. All the ingredients in it are so harmoniously combined that you don’t want to change or add anything to its classic recipe.
So, let's find out what this vaunted Tbilisi salad is like and how to prepare it.
Classic recipe for Tbilisi salad with beef

Ingredients

Step by step recipe
- Peel and cut the red onion into half rings. If you don't have red, you can use regular one. Place it in a deep bowl or mug, pour in 100 g of hot boiled water and 1 tbsp. l. vinegar. Let stand for 10 minutes and drain the marinade.
- Cut 250 g of boiled beef into pieces and place in a deep salad bowl.
- Then wash, dry and chop half a bunch of cilantro, which should be sent to the meat.
- Now you need to take 50 g of walnuts, chop them and put them in a salad bowl. If you wish, you can toast them for a couple of minutes in a dry frying pan to get crispy nuts.
- Wash the bell pepper, remove the stem and seeds, cut into thin strips and add to the dish. You can use half a red and a yellow pepper to add some color to the dish.
- Finely chop half the chili pepper. You can omit it if you are not a fan of spicy foods. Chili also needs to be added to the salad. Open the canned red beans, place them in a sieve and allow excess liquid to drain. If you wish, you can rinse it a little. Send the beans to the salad, add pickled onions, salt, pepper, a teaspoon of khmeli-suneli and two chopped cloves of garlic.
- Season the salad with 30 g of olive oil and 1 tbsp. l. 6% apple or grape cider vinegar. Mix everything and can be served.
...and fish and vegetables
The Tbilisi salad recipe without meat is an excellent solution for those who do not consume animal products or adhere to a diet or fasting diet. We replace the main ingredient with fish or prepare an appetizer from only vegetables, spices and seasonings. Add more greens. Season with lemon juice, apple or wine vinegar, and vegetable oil. Decorate with pomegranate kernels, olives, olives. Before serving, we can sprinkle the top with crackers.
With green beans
Peculiarities . Instead of traditional red beans, use fresh or frozen green beans. It goes well not only with vegetables, but also with spices. The dish turns out to be rich in vitamins, healthy and tasty. We serve it with meat, fish, and side dishes.
- 150-200 g green beans;
- one can of canned corn;
- one bell pepper;
- one sweet onion;
- two garlic cloves;
- two tomatoes;
- a bunch of parsley;
- 75 ml sunflower oil;
- 45 ml vinegar (apple or wine);
- 45 ml liquid mustard;
- 30 ml honey;
- salt, pepper, hops-suneli.
- Cook green beans in salted water.
- Drain the marinade from the corn.
- Chop the pepper, tomatoes, and onion into squares.
- Chop the greens.
- Prepare the sauce separately. Mix the oil with vinegar, honey and mustard, chopped garlic. Mix the dressing well.
- Mix everything, pour the sauce over the salad mixture, add spices and seasonings.
With cucumbers and gherkins
Peculiarities . In the recipe you can use both a store-bought product and homemade preparations. Small cucumbers should be crispy and not too salty or sour. Be sure to taste the appetizer to adjust the amount of salt.
- 100 g pickled gherkins;
- one can of canned tuna;
- one can of red beans;
- one red onion;
- one bell pepper;
- 50 g walnuts;
- one small hot chili pepper;
- greenery;
- 60 ml olive oil;
- 15 ml lemon juice.
- Cut the cucumbers into halves, the onion into half rings or cubes, the bell pepper into strips, the hot pepper into very small pieces.
- Chop the greens - parsley, basil or cilantro.
- Prepare the sauce: combine lemon juice with oil and spices.
- Mix the ingredients and season them with sauce.
- Add tuna to salad mixture before serving.
Lean
Peculiarities . Georgian salad “Tbilisi” without meat ingredient is a dish that we prepare for fasting or for a diet. The savory snack is suitable not only for breakfasts and lunches, but also for light dinners.
- 150 g red beans;
- one can of pitted olives;
- two red onions;
- three garlic cloves;
- cilantro, lettuce leaves;
- spices and seasonings;
- 45 ml sunflower oil.
- Boil the beans and cool them.
- Cut the olives into rings and the onion into half rings.
- Chop the greens and garlic.
- Using your hands, tear the lettuce leaves into small pieces.
- Mix the ingredients, season with oil and add spices.
Recommendations for preparation
- Using the same classic recipe, you can prepare Tbilisi salad with chicken, replacing beef with it. This dish can be combined with absolutely any type of meat, try it and get an unusual dish in your own way.
- Do not use 9% table vinegar for salad dressing. With it you can ruin its entire taste. A substitute for 6% apple cider vinegar can be freshly squeezed lemon juice or wine vinegar.
- Take bell peppers that are fleshy so that they taste good in the salad. Multi-colored peppers will add color to the finished dish.
- Tbilisi salad is always prepared with canned red beans, which are indicated in the recipe. It can be purchased at any supermarket at an affordable price.
Georgian salad with walnuts and feta cheese

- beef - 300g;
- canned red beans - 350g;
- red onion - 1 piece (large);
- bell red pepper - 1 piece;
- walnuts - 50g;
- garlic - 1-2 cloves;
- cilantro - 1 bunch;
- olive oil - 3-4 tbsp;
- wine vinegar 6% - 1 tbsp;
- hops-suneli - 0.5-1.5 tsp;
- hot and black pepper, salt to taste.
There is no need to add or exclude components, otherwise you won’t get a classic dish. But the proportions may vary depending on individual taste preferences.
Before directly implementing the Tbilisi salad recipe, you need to prepare the ingredients for mixing.
Beef
Meat is an integral component of this dish and, perhaps, the longest stage of food preparation. The beef must be washed, cooked over medium heat in pre-salted water and allowed to cool. It is recommended to first clean it of fat and veins. The finished product can be divided into fibers or cut into strips. The meat will look and taste more harmonious if the straw is thin.
Beans
You can’t do without beans here, take them out of the jar and rinse them thoroughly under running water. The presence of legumes makes the salad very filling and healthy.
It is better to use red varieties, they are more tender, do not have a sharp taste and do not taste bitter. Peel the onion and cut into half rings.
If you don't have red onions on hand, you can use regular white onions. But first you should pour boiling water over it to reduce its inherent pungency, then its taste will no longer be so intrusive.
bell pepper
Wash the product, separate the stalk, cut it in half and clean out the seeds. It is better to cut off thick partitions, and cut the vegetable itself into thin strips, like beef.
For spiciness, you can add chili pepper, which should be cut into very small pieces. After working with such a spicy product, you should thoroughly wash your hands and kitchen utensils that came into contact with it.
Nuts
Peel the walnuts (if any), cut them into small pieces or put them through a blender. In order to give the Georgian salad with beans a twist, you can fry the nuts in a frying pan without oil, then they will become crispy.
Seasonings and herbs
Peel the garlic and chop it with a knife. It is better to use only the leaves of cilantro, since the stems are a bit harsh; we wash the grass well and chop it. If you couldn’t get fresh cilantro, you can easily replace it with coriander.
Instead of olive oil, you can use regular vegetable oil if necessary. Mix it with wine vinegar (preferably red), add salt, pepper and suneli hops. The resulting mixture will be used as a dressing for our bean salad.
Preparation
The preparation of the salad itself consists only of mixing the ingredients. To do this, you need to use a deep bowl or plate, place beef, beans, onions, bell peppers in it, sprinkle with crunchy nuts, add cilantro and garlic. Mix the ingredients and add a dressing based on oil and vinegar, mix thoroughly and leave to brew for half an hour.
