  4. Melt the butter until liquid, brush the rolled out layer with it, leaving the edges a centimeter and a half dry so that you can seal the edges of the pie.

  5. Sprinkle the buttered layer with breading.

  6. Place the previously prepared filling onto 1/3-1/4 of the layer.

  1. Pour the flour into a bowl or onto the table.
  2. Grate the cooled part of the butter (about 100 g) into flour, mix everything.
  3. Mix cold water, salt and vinegar, add to flour and butter and knead the dough.
  4. Form a ball and place it, covered with plastic or cling film, in the refrigerator for 30 minutes.
  5. Take out the dough and roll it out into a cross-shaped layer, not particularly touching the middle. Distribute the remaining grated butter in the center, fold the edges of the cross towards the center and roll out the dough again, but in a rectangular shape. Leave in the cold for 20 minutes.
  6. Fold the edges towards the center again and roll out again. Leave in the refrigerator for 15-20 minutes.
  7. Roll out again and leave for 30 minutes.

With apple

Puff pastry puffs with cottage cheese and apple are one of the popular puff pastry options. For variety, you can combine a sour apple and a sweet pear in the filling.
