To prepare shortcrust pastry, take a dry and clean bowl and sift the flour through a sieve.

Now you need to grind all the ingredients well.

Place the shortbread dough in the refrigerator for 1 hour, wrapping it in a plastic bag or cling film.
In the meantime, while the dough is cooling, let's prepare the whipped egg whites. To obtain a fluffy foam, the whites must be well cooled and whipped in a clean, dry enamel or ceramic bowl. Separate the yolks from the whites carefully, otherwise if a little yolk gets into the whites, there is a chance that they will not whip. For the cream, I use powdered sugar instead of sugar - it’s easy to whip and due to the fact that grains of sugar don’t need to dissolve, the foam turns out fluffy and strong.
Add a pinch of salt and a couple of drops of lemon juice to the whites. Beat with a whisk until you get an airy foam. If you are using a mixer, beat at the lowest speed first.
Next, add powdered sugar 1-2 tbsp. until you get a thick foam. The whipped egg white cream is ready.
Peel the apples and cut them into slices, slices or slices (as you like)
Let's take the dough out of the refrigerator. Spread 1/3 of the dough over the entire baking sheet lined with parchment paper.

Preparation:

- Return back, reduce temperature to 180, bake for another 25 minutes or just until golden brown.

- Roll out the dough, put it in the mold, be sure to make sides.
- Place apple slices on the base and sprinkle with cinnamon.
- Place in the oven. Bake at 180 degrees for 20-25 minutes.
- Beat the whites to stiff peaks, gradually add granulated sugar in parts. Beat until it is completely dissolved.
- Remove the pie pan, quickly coat the surface with the egg white cream, return to the oven and cook for another 10 minutes.
It is better to squeeze the whipped whites through a suitable nozzle of a pastry syringe or bag; this will help you quickly make a decorative top.
How to bake:
Grind the softened butter with powdered sugar and yolks, you should get a homogeneous mass similar to a smooth cream.
Add flour to the mixture and grind it into crumbs.
Pour 2 tbsp into the resulting mass. spoons of milk and knead a soft elastic dough. Try to knead the dough quickly, since if you knead for a long time, gluten will begin to form in the dough and the crust in the finished pie will turn out hard.

Attention! Before placing the shortbread in a cold place, prick it with a knife or fork. This will help prevent the dough from swelling and deforming during baking.
The next step in preparing apple meringue pie is preparing the filling.
Cut the apples into large pieces and sprinkle with lemon juice to prevent the flesh from darkening. Sprinkle with sugar and set aside - we want the apples to become softer and release excess juice, which we will later add salt. You can soften the apples a little by heating them in a saucepan with a piece of butter. In this case, we reduce the possibility that the apples will “flow” during baking.
Beat the whites into a dense mass, adding 100 grams of sugar, achieve a shiny snow-white glaze.
Note: avoid getting fat particles into the container in which you are whipping the meringue, otherwise the glaze may not whip up.

Winter and autumn fruits are covered with a thick peel, which it is advisable to get rid of. But summer fruits have a thin skin, which after heat treatment will not be felt.

- flour – 130 g;
- sour cream – 190 g;
- eggs – 3 pcs.;
- soda – 8 g;

Pour the curd filling on top. Bake the pie in an oven preheated to 180 degrees for 35-40 minutes. Be careful not to burn the bottom. The filling should set around the edges and become golden, while the center should still be jiggly.
Meanwhile, beat the whites with powdered sugar until stiff peaks form. When turning the container with proteins over, they should not spill out.
Remove the pie from the oven and place the egg whites on top. Place in the oven again for 15-20 minutes, first lowering the temperature to 150-160 degrees. The protein soufflé should turn golden.
