A unique and versatile way to quickly bake homemade pastries is to buy puff pastry. You can use it to make a variety of delicious baked goods, including your childhood favorite ears.
Product formation process
Cookies made from puff pastry called “Ears” are formed quite simply. To do this, the purchased yeast-free base must be thawed (only at room temperature), and then rolled out into a large rectangular layer. It is advisable to bake sweet products at a temperature of 205 degrees for 32 minutes. During this time, the “Ears” should increase in size, become soft and fluffy.
Serve a layered homemade dessert to the table
As you can see, there is nothing easier than making your own puff pastry cookies. After the products are baked in the oven, they should be carefully removed and placed on a large plate. It is advisable to serve the finished delicacy to the table along with tea or other hot drink.
It should be especially noted that “Ears” cookies made from puff pastry can be prepared not only using regular sugar, but also, for example, with nuts, lemon zest and dried fruits. In this case, the above ingredients must first be crushed into a paste, and only then applied to the base.
Classic cookies “Ears” made from cottage cheese
Cookies "Ears" are often called "Crow's feet" or cookies "Triangles". But in any of the three options you get a simple, easy-to-prepare delicacy. The main conditions are the combination of a soft structure and a crispy crust with a sprinkle of sugar in one dish.
Prepare the following ingredients for mixing the cookie dough:
- 450 g cottage cheese;
- 225 g butter or spread;
- 345 g flour;
- 3.5 g baking powder;
- a bag of vanillin or 10 g of vanilla sugar;
- a pinch of salt;
- sugar for rolling cookies.
Approximate calorie content of the finished dish: 350 kcal.
Total cooking time: 80 minutes.
Let’s start preparing the dough for the curd cookies “Ears”:
- Cottage cheese and butter - grind with a fork until smooth and creamy. Which cottage cheese should I choose? Let's be honest: there are no exact indications of the fat content of the product. However, it is worth considering that the higher the fat content of the cottage cheese, the more the calorie content of the dish increases. And vice versa - low-fat cottage cheese makes cookies closer to dietary dishes.
- Combine all bulk products, everything except sugar, in a separate bowl. Is the amount of flour indicated in the ingredients list accurate? This question is quite difficult to answer: it all depends on the flour that is available. Most often, recipes are based on the weight of durum wheat flour. Therefore, each brand and manufacturer will have its own mass fraction of flour in each recipe. Focus on your feelings and everything will work out.
- Mix the butter-curd and bulk mixtures. Do not delay - after all, oil tends to flow, which means that more flour may be required.
- The dough should be slightly sticky and very soft. To ensure that it rolls out well and does not stick to the surface, sprinkle the table with flour. We also pre-divide the dough into 2 or 3 parts - this will make the rolling process easier. In this case, we store the parts that are not involved in the process in the refrigerator.
- Using a mug or a special round mold, cut out future cookies from a rolled out sheet of dough no more than 0.5 cm thick.
- You may have noticed that the sugar is missing from the recipe. This is not entirely true: we will use it to sprinkle circles of dough. It is convenient to do this by simply pouring sugar into a plate and rolling the dough circles on each side, gradually folding in half until a triangle is formed.
- Place the resulting quarters on a sheet of parchment and place in the oven for 10-20 minutes at 180°C.

Cookies have their own history: this is where the traditional shape and method of serving the filling in an open form came from.
For 5 servings take:
- 180 g butter;
- 85 g powdered sugar;
- 260 g flour;
- egg;
- yolk;
- 35 g corn starch;
- 1/2 tsp. baking powder;
- a drop of vanilla essence;
- 100 g jam.
Making a homemade treat
We talked about how to make “Ears” cookies from puff pastry. But if you need a higher-calorie dessert, you should use a yeast base. It must be thawed (only at room temperature), and then rolled out into a rectangular and very thin layer of large size. After this, the dough must be generously greased with boiled condensed milk or thick jam. Next, the puff-yeast base should be wrapped in a tight roll and cut into pieces 2 centimeters thick.
Making puff pastries with raisins and dry cottage cheese
There are quite a few recipes, thanks to which you can bake delicious cookies yourself from simple store-bought puff pastry. One of the most popular desserts among fans of sweets are puff pastries with cottage cheese and raisins. They are made quite quickly, and turn out incredibly tender and tasty.
So, to prepare such a delicacy ourselves, we will need:
- purchased puff pastry (it is better to buy yeast-free dough) – about 1 kg;
- dry coarse-grained cottage cheese;
- raw country egg – 1 small pc.;
- seedless dark raisins – a couple of handfuls;
- fine granulated sugar - a few small spoons (add at your discretion).
Delicate “Magic Ears”
The magic of the ears lies in the unusually tender and tasty filling.
Required for the test:
- margarine – 200 g;
- flour – 3 tbsp;
- sour cream – 50 g;
- kefir – 50 g;
- soda – 1/2 tsp;
- egg yolk – 3 pcs.
For the filling we will prepare:
- protein – 3 pcs.;
- sugar – 1 tbsp.
Let's start kneading the dough:
- Mix yolk, sour cream, kefir and soda until smooth.
- Grind margarine with flour.
- Pour the liquid base into the dry mixture and knead the dough.
- Form the dough into small balls with a diameter of about 1.5-2 cm.
- Place them in the refrigerator for an hour.
At this time, let's make the filling:
- Beat the yolks with sugar. To speed up and facilitate the process, you can add a pinch of salt.
- Beat until it becomes a meringue.
Forming cookies:
- Taking the balls out of the refrigerator, roll them into thin cakes. Considering the original shape, the cakes should be in the shape of circles. Thickness no more than 0.5 cm.
- Place a teaspoon of meringue in the middle.
- We fold it twice until a triangle is formed: at the same time, we securely fix the edges of the cookies so that the filling does not run away.
- Place on a baking sheet and bake at 180° for 15 minutes.
Sprinkle the finished cookies with powdered sugar as soon as they are ready.
Preparing the filling
Before baking the products in the oven, you should prepare the sweet filling. To do this, you need to beat a country egg, add dry cottage cheese and a small amount of granulated sugar to it. After mixing the components, they need to be left aside. In the meantime, you can start processing dried fruits.
The raisins should be sorted, rinsed and kept in boiling water for about half an hour. Next, the product must be discarded in a colander, rinsed thoroughly and dried by placing it on a waffle towel. After this, you need to add the raisins to the egg-curd mass and mix thoroughly.
Cookies "Bear Ears"
The difference from the previously presented recipes is that the shape, due to which the delicacy received its name, is formed after baking in the oven.
What do we need to prepare?
- flour - a glass of 250 ml;
- eggs – 4;
- sugar – 2/3 tbsp.
Calorie content: 272 kcal per 100 g.
Time: 25 minutes.
Preparing the dough, and even the Bear Ears cookies themselves, will not take much time, as it consists of only a few steps:
- First of all, turn on the oven - 180°C.
- Add flour in portions to the eggs beaten with sugar.
- We don’t worry when the flour runs out and the dough is still quite liquid - that’s how it should be.
- Place 1 teaspoon of the finished dough on a baking sheet greased with butter.
- The process of placing the products in the oven will take 7-10 minutes. The main thing is to dry it out. Otherwise, the cookies will not take the desired shape.
- The cookies, barely taken out of the oven, are lifted with a spatula and the sides are fastened according to the principle of an ear or a calla lily flower. We do this quickly, as the dough cools quickly and becomes brittle.
Bear Ears cookies are also often called Calla Lilies cookies.
Forming and baking curd puff cookies
After the filling is completely ready and the dough is defrosted, it must be rolled out into a large layer and then cut into circles, using a glass with a diameter of 5-6 centimeters. Next, you need to place the curd mass in the center of each product, cover with the second part of the base and firmly seal the edges using a fork.
The finished semi-finished products must be placed on a baking sheet with baking paper and placed in the oven. It is advisable to bake puff pastries with curd filling at a temperature of 205 degrees for about 35 minutes. During this time, the dough should be baked well.
How to cook “Ears from puff pastry with sugar”
Roll out the puff pastry sheet thinly. To prevent the dough from sticking to the rolling pin, dust it with flour. Roll out the dough in one direction so that it has the correct shape and does not stretch in different directions.
Melt the butter. Using a pastry brush, brush one side of the dough with butter. Sprinkle generously with sugar.
Roll the dough from each edge into a tube and lightly press down on top.
