On YouTube you can see many recipes with pita bread, mainly in the form of rolls or envelopes.
Without in any way detracting from the deliciousness of pita rolls with the same mashed potatoes or some other filling, I would still like to talk about a similar option for a quick snack, which not only helps out very often, but is also really tasty and nutritious.
In principle, lavash with mashed potatoes in the form of rolls is an alternative version of the same pancakes filled with mashed potatoes, only replacing the pancake, which takes a certain time to prepare, with ready-made lavash. A large amount of time is immediately and significantly reduced. And this is the main and big plus!
Step-by-step recipe with photos
Let's start with potatoes. Peel, wash and prepare regular puree according to your homemade recipe! I add milk, butter and 1 egg to the puree (so the potatoes turn out tender, aromatic, fluffy with a slight yellow tint);
Grate the cheese on a coarse grater, then mix the puree with chopped garlic, cheese, your favorite spices and finely chopped herbs. Mix thoroughly. The filling is ready!
We lay out a sheet of pita bread and cut it into approximately equal pieces of a suitable size for rolling tubes (I have 6 servings for this amount of ingredients, if you wish, you can double, triple, etc., accordingly). Place the filling on the edge of each “square” and roll up the rolls;
Grease a baking sheet with oil or line it with parchment paper or foil. Lay out the resulting rolls and brush them with egg. Place the baking sheet in a preheated oven for 20 minutes (until our favorite golden crust forms) at 200 degrees;
Recipe for “Rulets with potatoes in pita bread”:
Take the pita bread and distribute the puree evenly over the entire surface. On top of the potato layer, spread ham on one side, sprinkle cheese on top and roll into a tight roll. My pita bread was huge, I cut it in half. You can use any cheese; mozzarella is perfect. For meat, you can also use thinly sliced smoked loin or any other delicacy you like.
Beat the eggs into a bowl, add a little salt, and stir with a fork. Heat a frying pan with vegetable oil over medium heat, dip our pieces into the batter and place them in the frying pan, frying until nicely crusted.
Place the fried rolls on paper towels and then onto a plate.
Our delicious treat is ready.

Lavash with mashed potatoes, ham and cheese - a hearty snack that is easy to prepare
Surely, every housewife's culinary notebook contains a considerable collection of original and tasty snacks, the basis of which is lavash. It has a neutral taste, which makes it great with many foods. The fillings can be as simple as grated cheese, or as complex as in the recipe below.
Lavash with mashed potatoes, ham and cheese is a hot appetizer, very filling and quite easy to prepare. The bread part harmonizes perfectly with tender ham and piquant cheese, and sweet paprika subtly sets off the taste of the dish. If you wish, you can add any greens to the filling.
How to cook:
Wash, peel and cook the potatoes in salted water until tender.
Mash the hot potatoes into a puree. Add butter, paprika and salt to taste.
Instead of paprika, you can use freshly ground black pepper.
Grate the cheese on a fine grater.
Cut the ham into thin strips.
Divide the puree, cheese and ham into 6 parts. Place mashed potatoes on each pita bread and spread it thoroughly in a thin layer over the entire surface, leaving 1.5 cm free at the edges.
If you use a large sheet of pita bread, you will need to cut it into squares about 15x15 cm in size.
Sprinkle with grated cheese.
The dish will be very tasty if you replace the ham with sausages. You will need 6 of them. There is no need to cut the sausages. Place one sausage at a time on the edge of the pita bread (on top of the cheese) and roll into a tight roll.
Roll the pita bread into tight rolls.
Heat a little sunflower oil in a frying pan. Place the pita bread seam side down and fry. Then turn over and fry until golden brown.
Place pita breads on a paper towel to remove excess oil.
Lavash with mashed potatoes, ham and cheese is ready. Serve crispy pita bread, garnished with parsley leaves and sprinkled with ground paprika.

Even a novice cook can make quick and tasty pita bread pies with potatoes. Some useful tips to help make the process of making lavash pies enjoyable:
- when purchasing, pay attention to the composition: real Armenian lavash should contain only flour, water, salt (it is not recommended to purchase yeast or with baking powder);
- You can optionally add vegetables to cheese fillings (preferably those that cook quickly), onions should first be fried until soft, so they will lose their bitterness;
- The density of the filling can be easily increased by adding a raw chicken egg or a little hard cheese, grated on a fine grater;
- if the lavash sheet is a little dry, it should be used for baking: after greasing with water, mayonnaise or sour cream, after 5-7 minutes, wrap the filling in the softened lavash and place the pies in a preheated oven;
- Boiled meat or ham cut into small cubes will add richness to the pies, especially when combined with cheese;
- a golden brown crust is formed if, before frying, the surface of the pies is greased with pre-melted butter, or a chicken egg beaten with a pinch of sugar or a couple of drops of honey (you can do without sweet ingredients);
- the edges of the pies should be pressed very carefully so that they do not open during frying and the filling remains inside;
- Sour cream or mayonnaise sauce with the addition of garlic, hot pepper and seasonings will help make the flatbread more aromatic and softer, which should be used to coat the inside of the pita bread before laying out the filling;
- Lavash pies are served hot; they can be decorated with crushed sunflower seeds, pumpkin seeds, and sesame seeds.

Recipe for “Pita bread rolls with potato filling”:
Grate the cheese, chop the herbs and garlic.
Add chopped garlic, cheese, salt and chopped herbs to the puree. Mix thoroughly.
Take the pita bread, cut it into pieces, put the filling on the edge of each rectangle.

Preparation
1. Place eggs into a deep container, add salt and beat with a fork or whisk into a fluffy foam for about 1-2 minutes.
2. Press the boiled potatoes with a fork or a special press in a deep container with a few pinches of salt and ground black pepper. Using a fine-mesh grater, grate any type of hard cheese or soft cheese into the same container: feta, feta cheese, mozzarella. Mix thoroughly. At this stage, you can add chopped parsley or dill, previously washed, to the filling.
3. Unroll a long sheet of lavash and apply potato filling to one half of it. If you have more filling, then coat the entire pita bread with it.
4. Wrap the remaining half over the filling and roll everything into a roll.
5. Using a knife, cut the prepared roll into pieces no more than 1.5-2 cm thick, otherwise they will have to be fried not only from the bottom and top, but also from the sides. We will use a sharp knife to ensure accurate cutting.
6. Dip the sliced lavash with filling into the egg mixture on all sides.
7. Heat a frying pan with oil and place the workpieces in it, reduce the heat to minimum. Fry for about 1-2 minutes.
8. Then turn it over to the other side and fry for the same amount of time until golden brown.
9. Place on a plate lined with a paper towel to remove excess fat.
10. Then transfer to another plate and serve immediately while they are hot, not forgetting about the tea.
