For many centuries, mushrooms have been considered a healthy delicacy for humans. Various dishes made from this natural product, and especially fried mushroom salad, amaze with their exquisite taste. After all, they contain a huge amount of protein, which is not inferior to meat products, but is much cheaper. Often athletes and active people try to consume them at least once a week. To prevent food from becoming boring, chefs never cease to create new recipes for fried mushroom salad, which differ in taste and appearance.
Salad with fried mushrooms and chicken
A properly prepared salad with fried mushrooms and chicken can be the highlight of a festive feast, or it can be a dish for every day. This recipe offers the second option - easy to create, but very tasty, and also healthy due to the content of proteins and beneficial microelements.
Ingredients:
- mushrooms (champignons) – 300 gr.;
- chicken (fillet) – 300 gr.;
- pickled cucumbers – 3 pcs.;
- green onions (stems) – 3 pcs.
- tomato – 1 pc.;
- mayonnaise/yogurt – 1-2 tbsp. l.;
- spices - to taste.
Boil the fillet in salted water until tender, cool, then cut into large cubes. Chop the onion, chop the mushrooms coarsely, fry everything together until soft. Chop the cucumbers into small pieces, tomatoes into cubes. All ingredients need to be mixed, seasoned to taste with spices, salt, you can add a little mayonnaise or (this will be more healthy) yogurt.
Salad with mushrooms and crab sticks
This easy-to-implement recipe will help even inexperienced cooks create a tasty and quite original dish. A simple salad with mushrooms and crab sticks does not pretend to be the decoration of any table, but it will always find its connoisseurs.
Ingredients:
- mushrooms (champignons) – 300 gr.;
- crab sticks – 100 gr.;
- eggs – 2 pcs.;
- onion – 1 pc.;
- mayonnaise/yogurt – 1-2 tbsp. l.
- seasonings - to taste.
Finely chop the onion, cut the mushrooms into cubes, fry everything together in butter, bring to softness, then let cool. Boil the eggs, chop into strips and add to the fried mushrooms, then place finely chopped crab sticks in a salad bowl. After mixing, add spices, add mayonnaise (or a dietary option - yogurt), after which the salad is considered ready.
Bean salad
Mushrooms are a very healthy product that contains a lot of the most beneficial substances, and a salad of fried mushrooms with beans is an even more powerful source of easily digestible proteins, vitamins and beneficial microelements. But chefs appreciate it not only for this - this salad is incredibly tasty and easy to prepare.
Ingredients:
- mushrooms (white) – 300 gr.;
- beans (canned) – 300 gr.;
- onion – 1 pc.;
- sweet pepper – 1 pc.;
- sour cream – 2 tbsp. l.;
- herbs, seasonings - to taste.
Wash the porcini mushrooms thoroughly, cut into large slices, then fry along with finely chopped onion. Grind the bell pepper (cleaned and freed from membranes and seeds), drain the beans, and chop the herbs. Mix mushrooms, pepper strips, beans, herbs and seasonings fried until soft with onions, season with sour cream and mix well again before serving.
How to prepare a salad with champignons, cheese and eggs.
Peel the mushrooms, rinse well and cut into thin slices 5 mm thick.
Fry the mushrooms in sunflower oil.
Cut the onion into slices and fry in sunflower oil.
Grate the cheese on a coarse grater.
Mix all the salad ingredients, add salt, pepper and mayonnaise to taste.
Finely chop the green onions.

This salad turns out to be nourishing and high-calorie, so it is not used in a regular diet, but is often prepared for the holiday table. And all because the salad with ham and fried champignons looks attractive and has wonderful taste.
Ingredients:
- mushrooms (champignons) – 200 gr.;
- ham – 200 gr.;
- cheese – 100 gr.;
- cucumbers (pickled) – 3 pcs.;
- eggs – 2 pcs.;
- mayonnaise – 4 tbsp. l.;
- green onions – 1 bunch;
- seasonings - to taste.
Wash the mushrooms, cut into quarters, fry together with chopped onions until the former are soft and the latter transparent. Boil the eggs, cool and cut into cubes, cucumbers, ham and cheese into strips. Combine all ingredients, add seasonings and chopped green onions with stirring, and season the salad with mayonnaise before serving.
Advice! A high-calorie salad with fried champignons and ham can be made a little less heavy if, instead of mayonnaise, you use sour cream mixed with yogurt or mustard as a dressing.

Salad with fried wild mushrooms
Mushrooms are most often fried in sour cream or soup is made with them, but salads with this component are relatively rare. One of these - not yet very popular, but already deserving of respect from culinary experts - is a salad with wild mushrooms.
Ingredients:
- mushrooms (chanterelles, honey mushrooms, white mushrooms) – 400 gr.;
- salad mix – 150 gr.;
- celery stalks – 4 pcs.;
- parsley – 2 bunches;
- garlic – 4 cloves;
- lemon – 1 pc.;
- parmesan – 100 gr.;
- white wine (dry) – 100 ml;
- butter (butter) – 30 gr.;
- salt – 1 tsp;
- seasonings - to taste.
Wash, peel, remove the stems and finely chop the selected forest mushrooms. Chop the celery, grate the parmesan, mix everything with the mixed salad and pour over the juice of ½ lemon. Squeeze the peeled garlic through a press and mix with salt (it’s best to use coarsely ground sea salt), add chopped parsley, then mix everything thoroughly with butter.
The resulting mass needs to be heated in a frying pan to fry the mushrooms in it for 8-10 minutes, after which wine is poured in to simmer the mixture in it for another 3-5 minutes. In a salad bowl, greased with lemon juice, everything is laid out in layers: mushrooms, a mixture of lettuce with celery and Parmesan, mushrooms again, and the rest of the salad on top.

This recipe uses familiar champignons, which are sold raw. I admit, I had never eaten raw mushrooms until I tried this salad, but as soon as I tried this salad, I became a fan.
This is a simple salad made in minutes. What I especially love is how the lemon, garlic and fresh coriander leaf combine different spices to bring out the flavor of the fresh mushrooms.

Oyster mushrooms are ideal for fried mushroom salad with smoked chicken. This variety of mushrooms is distinguished by its speed of preparation and juicy taste, which they fully convey to the finished dish.
Ingredients:
- mushrooms (oyster mushrooms) – 300 gr.;
- smoked chicken – 200 gr.;
- onion – 1 pc.;
- eggs – 3 pcs.;
- croutons (white bread) – 100 gr.;
- cheese – 100 gr.;
- mayonnaise – 2-3 tbsp. l.;
- seasonings - to taste.
Take ready-made white croutons or fry them yourself - cut the white bread/loaf into small cubes and bake in the oven for 20-30 minutes at 250⁰C. Peel the mushrooms, chop and fry with onion half rings, add salt or other spices to taste. Remove smoked chicken from bones and skin, chop, grate boiled eggs.
Salad with fried porcini mushrooms
Mushrooms are often called forest meat, which is due to the huge number of useful components in these amazing products. In addition, they are remarkably tasty, which is especially evident in the next dish - salad with fried porcini mushrooms.
Ingredients:
- mushrooms (white) – 300 gr.;
- tomatoes – 2-3 pcs.;
- potatoes – 2 pcs.;
- onion – 1 pc.;
- garlic – 3-4 cloves;
- Chinese cabbage – 300 gr.;
- soy sauce – 3 tbsp. l.;
- olive oil – 3 tbsp. l.;
- seasonings and herbs - to taste.
Wash the mushrooms, chop and fry until liquid is removed in a frying pan without oil. When the fried mushrooms acquire a golden color, you can pour in olive oil and add onion half rings, then fry until the latter is transparent.
Pre-boiled potatoes should be peeled and coarsely grated, then they can be added to the pan. The mixture is processed over medium heat until the potatoes are ready, then it is allowed to cool, and at this time the tomato is cut into slices, Chinese cabbage is chopped and the garlic is squeezed through a press.
Next, all the components - fried mushrooms, potatoes and tomato-cabbage mixture - are collected in a salad bowl, seasoned with soy sauce and mixed. Before serving, the salad is sprinkled with finely chopped herbs.

- 5 lettuce leaves
- 1 tomato, chopped

- 1 clove garlic, minced
- 1 tablespoon raw sunflower seeds
- 1 tablespoon hazelnuts
- 1 teaspoon sesame seeds
- 1 teaspoon shelled hemp seeds
- 1 tablespoon olive oil

Crackers
- 3 slices of bread
- 4 tablespoons oil
- salt and freshly ground pepper
- dried herbs (basil, oregano, cilantro, thyme, parsley), optional
Recipe for Mushroom Salad with Bread Croutons
First prepare the crackers. Preheat oven to 200 C (400 F). Slice or tear the bread into bite-sized pieces. Mix the oil in a bowl with salt and pepper. Add herbs of your choice. Place the bread cubes in a bowl and mix with your hands. Place the bread cubes on a baking sheet in a single layer and place in the oven. Bake for about 5 minutes, stir with a spatula and bake for another 5 minutes until golden brown. They will be crispy but not too hard, perfect for a fresh salad.
In a medium bowl, chop or tear the lettuce into small pieces. Using a vegetable peeler, chop the carrots into long strips and add to the salad. Add tomatoes, apples and mushroom slices, garlic, hazelnuts and seeds and mix well.
Mix soy sauce, olive oil and pepper. Stir into salad, let cool and serve with bread croutons.
