Yeast pie with cherries - general principles of preparation

Dry yeast is now mainly used for dough. Raw compressed yeast is used extremely rarely, as it is more capricious in operation and storage. Dry yeast can be simply mixed with flour or diluted in warm liquid. In addition to water, the dough is prepared with milk, kefir, and sour cream.

What else do they put in:

• salt, sugar;

• eggs;

• fats;

• flour.

Cherry pits are always removed. Since the berries are quite sour, they are sprinkled with sugar. Sometimes for the filling you need to boil the cherries a little or simmer them in their juice. Often other berries or fruits, cottage cheese, and chocolate are added to it.

Cherry pies can be closed and consist of two layers of dough, or open. Sometimes they make a mesh of dough and cover the top with sprinkles.

How to bake a dessert from puff pastry

I like to use store-bought puff pastry. Most often I use yeast-free. I take it out of the freezer in advance. I open the package and defrost. And then I use it to cook pizza, an apple roll, or a cherry dessert.

Let's take:

  • 450 g puff pastry,
  • 4 tbsp. l. granulated sugar,
  • egg,
  • 3 tbsp. l. starch,
  • half a kilo of pitted cherries,
  • powdered sugar.

A springform pan 28 cm in diameter will also come in handy.

We immediately combine the prepared cherries with sugar and starch.


Sprinkle the defrosted square with a little flour and roll it out a little.

Cover the baking sheet with it so that it rests on the sides.

Let's distribute the berries along the bottom.


Cut off excess dough along the edge.

From these leftovers we form a grid on the cake.


Brush the top crust with egg and bake for 40 minutes at 200 degrees.

Then remove the cake from the oven, let it cool, and decorate with powder.

Recipe 6: Yeast pie with cherries “Logs”

An interesting way to form a yeast pie with cherries. You can use any dough for it, for example, prepare it according to one of the recipes above.

Ingredients

• 0.9 kg of dough;

• 0.4 kg cherries;

• 1 egg;

• 120 grams of sugar.

Preparation

1. Divide the dough into three parts and roll out a long strip of 10 by 25 centimeters from each piece.

2. Lay out a row of seedless berries, sprinkle with sugar and roll into a log. It is better to pinch the ends so that the juice does not leak out during baking.

3. Form two more logs from the dough and cherries.

4. Place on a baking sheet, but not tightly to each other. Leave at least a centimeter so that the logs have room to rise.

5. Leave the workpiece to stand in a warm place for about half an hour. There should be no drafts in the room, otherwise a crust will form on the formed product.

6. All that remains is to grease the cake and put it in the oven! Cooking at 190.

7. After baking, the pie is cooled and cut across the logs. Similarly, you can prepare baked goods in the form of small balls. To do this, roll out the cakes, put cherries in each and pinch the edges. The balls are placed on a baking sheet, smooth side up.

Shortbread dough is dominated by a large amount of fat. Most often, butter or margarine is used. I always use only butter with a fat content of 82.5%. I am afraid of all vegetable fats and try to protect my family from them. Therefore, I always read the composition of the oil; there should be nothing unnecessary in it.

I decided to show you the recipe itself in video format.

It certainly looks very appetizing. And we will visually repeat the shortbread dough in the cherry-curd pie, just below.

Assembling the Pie

When the dough has risen, you can put it on the table, knead it a little (not too much - so as not to clog it). Place the dough in a mold lined with baking paper and spread it with your hands, pressing it to the sides. By the way, you can do without paper, but then the form itself must be thoroughly greased with odorless oil.

1. Part of the dough needs to be set aside. We will need it for decoration.

2. Having formed the cake, sprinkle it lightly with flour. Place the filling on top.

3. Cut the remaining dough into strips and place them in patterns on top of the cherries.

The strips can be laid in a lattice or snowflake pattern. If the strips are cut on both sides along the entire length, they will turn into Christmas trees in the oven.

If you squeeze out circles from the dough with a glass and cut them into rays, then when baked they will become flowers. Such flower circles can be attached to the sides of the pie for beauty.

4. When the filling and decoration have already been placed, brush the dough with a beaten egg.

But this is not the whole recipe. Now the most delicious part - the filling.

Description of preparation:

You can make cherry pie from yeast dough by taking ready-made yeast dough, but making it yourself is also not difficult.
To prepare a cherry pie from yeast dough, I used canned cherries in syrup for the filling, it turned out to be about 350 g of the cherries themselves, the rest was syrup, which I then boiled (see below for more details).
