Many people appreciate home-baked goods. It's always tasty and fresh. It's easy to prepare and goes down quickly. Such baked goods have an amazing aroma, it’s simply impossible not to join in the tea party. Even if you have no experience in cooking, it can be learned, and apricot jam pie is an excellent option for beginners. Children can also be involved in creating fresh baked goods. They will be happy to participate in decorating the pie.

Grated pie with jam on shortcrust pastry

Ingredients

  • 180 g butter;
  • 200–300 g sugar;
  • a pinch of salt;
  • 2 eggs;
  • 420 g flour + a little for sprinkling;
  • 2 teaspoons baking powder;
  • 300 g of any thick jam.

Preparation

Beat room temperature butter with sugar and salt with a mixer. Beat in the eggs one at a time, beating thoroughly after each addition. You should end up with a fluffy, creamy mass. Sift the flour and baking powder, add them to the prepared mass and knead the dough.

Sprinkle the table with flour and roll the dough in it on all sides. Cut off a third of the mass, wrap it in a plastic bag or cling film and put it in the freezer. Flatten the remaining dough slightly into a rectangle shape, wrap it in a bag or film and put it in the refrigerator for 40 minutes.

Line a 40 x 27 cm baking pan with parchment. The parchment should extend beyond the edges of the pan. Place the dough there from the refrigerator and smooth it out with your hands. Grease it with jam. For this recipe, jam with sourness is best suited, since the dough contains a lot of sugar. Grate the mixture from the freezer on top using a coarse grater.

Bake the cake for 35–40 minutes at 180°C until golden brown and cool.
