Recipe from Yulia Vysotskaya
Not a pie, but a fairy tale! Treat yourself to delicious pastries from the famous TV presenter.
Ingredients:
- pitted cherries – 500 g;
- salt - a pinch for filling;
- flour – 250 g;
- egg white – 4 pcs. For filling;
- butter – 125 g butter;
- almonds – 120 g for filling;
- egg;
- granulated sugar - 150 g for filling.
Preparation:
- You will need chilled oil. Grate using a coarse grater.
- Pour flour through a sieve. Grind. You will get small crumbs.
- Pour in the egg. Add salt. Stir to form a dough.
- Roll it up. Place in a bag. Place in the refrigerator for an hour.
- Roll out the dough. Then roll into a ball. Repeat this procedure four times.
- Prepare the mold by greasing it with oil.
- Spread the dough over the bottom.
- Take a fork. Pierce.
- Grind the almonds with a blender.
- Sprinkle over dough.
- Place the whites in a bowl. Add the amount of sugar for the filling. Beat. You should get a dense foam consistency.
- Pour half the mixture into the cherries. Mix.
- Place on the dough.
- Distribute the rest of the fluffy mass among the berries.
- Place in the oven (180 degrees).
- Bake for half an hour.
Cooking process:
The cake mixes very quickly. The original recipe says that you need to start cooking by preheating the stove, but my stove heats up in 5-7 minutes, so I don’t see the point in wasting the oven and start by preparing the cherries. Peel the berries and try not to miss a single cherry so that there are no seeds in the finished pie. Let's knead the dough. Beat eggs into a bowl and add sugar.
With a fork or whisk, beat the eggs with sugar until fluffy foam forms. Add butter at room temperature to the dough and beat the mixture again. The butter should be soft, but not melted.
Sift the flour. It is necessary to do this; the flour is enriched, which gives “lightness” to the finished dough. Mix flour with baking powder and add to dough.
Knead the dough. It will turn out quite liquid, and the consistency will resemble thick sour cream. When kneading the dough, you can add vanillin or other flavoring. I don’t add flavorings, because the natural taste and aroma of cherries is important to me.
Transfer the dough into a baking dish. In modern cooking, many housewives use silicone baking dishes. It's convenient and functional. If you use any other baking container, be sure to cover it with baking paper so that the dough does not stick to the walls, and place the dough on the paper.
Place the cherries in a circle, lightly pressing them into the dough. Don’t skimp on the berries, there should be so many of them that the entire surface of the pie turns red.
Sprinkle a small amount of almond flakes over the raw cake. Preheat the oven to 170-180 degrees and bake the pie in the oven for about 40 minutes. Check the readiness of the Viennese pie with a wooden skewer. The berries will change color to darker when baked, but don't worry about it. The pie does not burn, but this is just a signal that it is ready. The almond petals will brown slightly.
Sprinkle the finished pie with powdered sugar. This should be done only after the dessert has cooled completely.
Viennese cherry pie is ready. It turned out surprisingly tender and tasty. Appetizing berries and almond petals give the baked goods a special taste and a light crunch.
I am sure that once you make this pie, you will return to this recipe every time. And I will be waiting for you with reviews and photo reports. I hope that among you there are also fans of this pie, just like me! And your feedback will be a reward for me for my work in creating this culinary master class.
Sincerely, Varvara Sergeevna.
