Step-by-step cooking process
The amount of sugar in the recipe can be varied to taste. All ingredients should be at room temperature. Milk is heated to 30-33°.
Further:
- In a separate deep container, mix 300 g of flour, yeast, sugar. Salt is introduced.
- Next, add egg, butter, and warmed milk on top.
- Using a mixer screw attachment or a spatula, mix the mass, gradually adding another 200-250 g of flour.
- Then, as the dough thickens, they begin to knead by hand. At this stage, add a little more 100-200 g of flour.
- Knead by hand for at least 6-8 minutes. The mass should become elastic and not stick to your hands or bowl. It is important not to over-flour the dough, otherwise the baked goods will be too dense.
- Next, grease the inside of the bowl a little with vegetable oil - the risen dough will easily separate from the walls.
- The top of the mixture is dusted with flour and the bowl is covered with a napkin. Place it in a warm place to rise, eliminating the possibility of drafts.
- After 50-60 minutes. the dough should almost double in size. They do a kneading exercise: they knead the mass with gentle movements, this way the excess carbon dioxide goes away. Cover with a napkin and leave the dough for another 45-60 minutes.
- The newly risen dough is kneaded and placed on a table dusted with flour. The baking sheets are covered with baking paper and coated with oil.
- For buns or pies, the mass is divided into several equal pieces and the products are shaped.
- For large pies, the layer is rolled out, folded in four, rolled out again, then placed on a baking sheet and sides are made. Next, fill with any filling and decorate with the rest of the dough on top. For a loaf or roll, the quadruple-folded layer is re-rolled, folded, and placed on a baking sheet.
- The products are left to proof in a warm place for 40-60 minutes. to increase volume.
- Next, carefully brush the top with yolk, milk or a small amount of sour cream mixed with sugar.
- Loaves, rolls, large pies are placed in the oven for 55-60 minutes. at 160-170°. Piece products require less baking time and a higher temperature - 170-200°.
