I love adding nuts to baked goods. They give it additional taste and play of textures. And in this version they also add beautiful design. This is especially noticeable when cut into pieces. Worth a try!
Classic walnut muffin
This cake with walnuts is a classic pastry. Available ingredients allow anyone to prepare such a dessert for tea.
Ingredients:
- half a glass of walnuts;
- half a glass of sugar;
- 1 egg;
- 1/3 cup sour cream;
- half a glass of flour;
- 0.5 teaspoon baking powder;
- 4-5 tablespoons of vegetable oil;
- 6 caramel coated nut halves, for decoration.
Cooking method:
Grind the nuts and sugar in a blender until crumbly.
Add flour with baking powder. Stir until smooth.
Beat eggs with sour cream. Combine both mixtures: dry and liquid. Stir until smooth. Add vegetable oil one spoon at a time. Make a thick dough.
Fill the molds two-thirds full with dough.
The oven is heated to 190 degrees. Cupcakes are baked for 25-30 minutes. Check readiness with a toothpick or match.
The cupcakes cool in the mold. After this, the cupcakes are transferred to a wire rack and decorated with walnuts coated with a caramel layer. The caramel is prepared in advance, after which the finished caramelized nuts are used to decorate the baked goods.
This dessert is close to classic pastries, but walnuts with a caramel layer will make the taste pleasant and unusual.
Nut cupcake
1. In order to prepare a simple and tasty cake with nuts according to the classic recipe, place butter and two types of sugar in a food processor bowl or other deep container suitable for kneading the dough. In the list of ingredients, I indicated the GOST quantities of sugar, but I myself prefer to put 100 g of regular sugar and 1 bag (8 - 12 grams) of vanilla sugar.
Tip! If you have extra time on your hands, then remove the butter from the refrigerator in advance, cut into small cubes and leave at room temperature. The softening time will depend on both the quality of the oil and the room temperature, but usually it is no more than one hour. If you are in a hurry, then there is an opportunity to significantly speed up the softening process - you can hold the plate with oil on a hot radiator, warm it a little in the oven or microwave, but be careful, otherwise the oil will quickly become liquid.
2. Next, beat the butter intensively with the sugar at high mixer speed. Beat for several minutes until the butter mixture lightens in color and becomes smoother and fluffier.
3. Add chicken eggs one at a time into the nut cake batter and beat it again until smooth. It is better to remove the eggs from the refrigerator in advance along with the butter so that they warm up to room temperature and the dough does not separate when whipped.
4. Sift the flour with baking powder and add it to the dough in two additions, kneading it thoroughly with a mixer after each addition. When using a food processor, which has a fixed and therefore less maneuverable whisk, it is advisable to periodically stop and scrape the adhering dough from the walls, otherwise it may not be mixed very evenly.
5. Grind cashew nuts by hand (with a knife, rolling pin, hammer) or using a blender so that tangible pieces remain. It is advisable to use dried rather than roasted nuts, as the latter may burn during prolonged baking in the oven if they end up near the surface of the cake.
Advice! In addition to cashews, you can use other nuts to make this cupcake, since in culinary matters you should always focus primarily on your tastes and financial capabilities. So, to save significantly, you can use peanuts; in addition, walnuts are also cheaper, and almonds and hazelnuts in our area have the same cost as cashews. It should be noted that the cashew nut is quite convenient, because its kernels do not have a dense shell and, thanks to this, fit perfectly into the structure of the dough, and it is advisable to peel other nuts, since otherwise there will be a lot of flakes in the cake.
6. Place the chopped nuts into the dough and mix it either with a spoon or at low speed with a mixer. Now the dough for the classic nut muffin is ready.
7. Grease the mold with oil and sprinkle with flour, then put the dough into it. GOST cupcakes of this type were baked in square molds (about 15 x 15 cm), but I made it in a rectangular one (10 x 20 cm), because in this case it bakes much faster.
8. Bake the cake in an oven preheated to 170°C, periodically piercing it with a wooden skewer to determine readiness. In a rectangular shape, the cake bakes for about an hour, in a square one - up to an hour and a half, and its readiness is indicated by the dry state of a skewer removed from the most “elevated” part of the cake.
Despite the long baking time, the classic Nut cake is so easy to prepare that it is quite possible that you will no longer want to buy sweets in the store, and this rich crumbly dessert will become a frequent guest at your family and friendly tea parties. It is very convenient that there is no need to keep the finished cake for a long time, but you just need to give it the opportunity to cool a little, after which you can start eating it warm, sprinkling a small amount of powdered sugar on top for beauty. Cinnamon Peanut Cake
This walnut muffin recipe uses cinnamon. As a result, the baked goods are reminiscent of classic ones, but the cinnamon makes itself known.
Ingredients:
- 3 eggs;
- 1.5 cups sugar;
- a glass of walnuts;
- 180 milliliters olive oil;
- 200 grams of sour cream;
- 300 grams of flour;
- 2 teaspoons cinnamon;
- a tablespoon of vanilla extract;
- a pinch of sea salt;
- a packet of baking powder.
Cooking method:
At the first stage, walnuts are cleaned, crushed, and dried in the oven. Then beat the eggs with sugar in a deep bowl. A mixer is used for this.
At the next stage, gradually pour in olive oil, add sifted flour, baking powder, and cinnamon. Salted. At the same time, continue to beat.
After a few minutes, add 150 grams of flour, chopped nuts, sour cream, and vanilla extract. Beat at low speed. You should get a thick dough.
The mold is greased with oil. The dough is placed in it. The cake is baked in the oven at 190-200 degrees for 35-40 minutes. Readiness is checked with a match.

This cinnamon walnut muffin is quick and easy to make, but still has a delicious flavor.
How to make Nut Cake
1. To begin, chop the nuts into small pieces and place on a baking sheet with foil. Then put them in the oven for 13 minutes at 160 degrees.

Nut cake with dried fruits
Many nut muffins pair well with dried fruit. This recipe is original due to the variety of ingredients.
Ingredients:
- 200 grams of sugar;
- 5 eggs;
- a packet of baking powder;
- 3 tablespoons of cognac;
- a bag of vanilla sugar;
- a pinch of salt;
- 100 grams of hazelnuts;
- 200 grams of walnuts;
- 150 grams of dried apricots;
- 100 grams of cherries;
- candied fruit;
- 350 grams of flour.
Cooking method:
- At the first stage, beat the eggs with a mixer. After the foam appears, add regular and vanilla sugar, salt and cognac. Beat for several minutes. As a result, foam should appear.
- Now sift the flour with baking powder. The sifted flour is gradually added to the eggs.
- Dried apricots, raisins and candied fruits are washed and dried. Then dried fruits and candied fruits are cut into small cubes. The cherries are divided into 2 halves.
- Dried fruits and cherries, nuts are added to the dough.
- The oven is initially preheated to 160 degrees. Now grease the mold with oil. The dough is poured into a refractory mold. Bake for an hour. Then the temperature is raised to 180 degrees and left for another 20 minutes. Bake until golden brown.

Ingredients:
- 250 grams of flour;
- 200 grams of sugar;
- 200 grams of butter;

- half a chocolate bar;
- 1 cup of coffee;
- 3 eggs;
- 2 teaspoons baking powder;
- vanilla, cognac.
Cooking method:
- At the first stage, beat warm butter with sugar until fluffy. Vanilla is added for flavor.

- vanillin and baking powder.
Cooking method:
- At the first stage, melt the butter and leave it to cool to room temperature.
- Beat eggs with sugar and vanilla until white fluffy foam.
- Now pour in the cooled liquid butter and add sour cream. Mix thoroughly.
- Add raisins and walnuts.
- Now mix flour with baking powder and add to the dough.
- The dough is poured into a refractory mold, previously sprinkled with flour.

Every person has their own weaknesses, and I want to confess to you that my weakness is cupcakes. My children have many similar tastes to me, after all, genes are genes, so we don’t have any particular disagreements in terms of food. This is especially true for home-baked goods, and children always take the offer to bake something with a bang. Unfortunately, on weekdays we simply don’t have enough time for this, I have work, they have school, clubs, homework. Therefore, we leave our culinary fantasies until the weekend, when time allows us to spend a couple of hours in the kitchen and please not only ourselves, but also our beloved daddy with something delicious. Today I decided to make walnut muffins with my kids. My girls unanimously supported me, took a book with a recipe for muffins with walnuts and ran to the kitchen together to get the necessary ingredients.
Walnut muffins.
In principle, you can make muffins with any other filling, depending on your taste preferences and the time of year. They turn out especially well with fresh berries, cranberries, raspberries, and blackberries. But when it’s winter, nuts become a good, and, importantly, very healthy alternative.
To make walnut muffins you will need the following ingredients:
- Butter – 200 grams (1 pack).
- Eggs – 3 pieces.
- Sugar – 1 glass.
- Flour – 1.5 cups.
- Milk - a third of a glass (6 tablespoons).
- Walnuts – 1 cup.
- Baking powder – 1 teaspoon (heaped).
You can bake muffins with walnuts either in a large refractory pan or in small special molds. But if you are cooking with children, then small muffin tins will be preferable. After all, a child is much more interested in eating a small cupcake than a cut piece of a large one. Plus, he will know that he made this nut muffin.
This recipe makes 12-14 walnut muffins.

I must say that making muffins with walnuts is a fairly simple and not at all troublesome process. Therefore, if you have some free time, you can safely get down to business.
- Cut 200 grams of butter into small pieces (it is advisable to remove it from the refrigerator in advance so that it has time to melt a little). Using a mixer or blender, thoroughly beat the butter with a glass of sugar.
- While continuing to beat, add eggs and milk to the resulting mixture, one at a time.
- After the mass becomes homogeneous, add baking powder and flour to it and mix well again.
- At this point, the process of preparing the dough can be considered complete; all that remains is to pour the walnuts into it and mix again, but this time with a spoon.
- Grease the muffin tins with butter and lightly sprinkle with semolina so that the finished muffins with walnuts stand up well.
- Place the dough in the molds (but do not fill them to the top, as the dough will rise during the baking process).
- Place in a preheated oven and bake for 15-20 minutes.
Make sure the cupcakes are completely baked before removing them from the oven. To do this is quite simple, pierce the cupcake with a regular match, and if there are no traces of raw dough left on it, then the cupcakes with walnuts can be considered ready. Remove them from the oven, let cool for 20-30 minutes and place on a plate, lightly dusting the tops with powdered sugar.

Muffin with walnuts, bananas and dates
Fruits and dried fruits are often used to prepare nut baked goods. Walnuts go well with bananas and dates.
Ingredients:
- 225 grams of flour;
- 175 grams of butter;
- dates;
- toasted walnuts;
- 100 grams of sugar;
- 3 tablespoons honey;
- 2 eggs;
- 2 bananas;
- a pinch of cinnamon.
Cooking method:
- Initially preheat the oven to 160 degrees. The refractory mold is greased with oil.
- Now start preparing the delicacy. Warm butter is ground with granulated sugar, honey, eggs, and banana puree are added. They make a batch.
- Now add sifted flour and cinnamon. Mix thoroughly.
- Chopped nuts and dates are added to the dough. Mix again.
- The dough is placed in a mold. Allow half an hour or a little more for baking. Check readiness with a toothpick.

As in most other recipes according to GOST, margarine was used to prepare the nut cake. Now it is better to replace it with butter. But if you have proven margarine, of which you are confident, you can take it.
Oatmeal treat with prunes and nuts
Such baked goods are prepared on the basis of oatmeal, which already determines the benefits. Prunes and nuts make the dish even more healthy.
Ingredients:
- half a glass of low-fat kefir and water;
- 2 cups oatmeal;
- prunes;
- nuts;
- a tablespoon of vegetable oil;
- a teaspoon of baking powder;
- a couple of eggs;
- salt.
Cooking method:
- Pour boiled water over oatmeal and allow it to swell.
- Grind the second glass of oatmeal into flour. Mix the crushed and swollen oatmeal.
- Add kefir, eggs, baking powder. Salted.
- Prunes are soaked and finely chopped.
- Walnuts are crushed.
- Chopped prunes and nuts are added to the dough, and vegetable oil is poured in.
- The baked goods are cooked in the oven at 175 degrees for about half an hour.
