Good advice

  • To decorate the cheesecakes and soak them, you can prepare sour cream filling. To do this, you need to mix 255 grams of sour cream and 95 grams of sugar (for approximately 14 cheesecakes). You need to pour this filling over the finished cheesecakes and put them in the oven at 180 degrees for another ten minutes.
  • Another option for decorating cheesecakes is confectionery crumbs. To prepare it, you need to mix 55 grams of flour, 35 grams of cold, diced butter, 65 grams of sugar and 5 grams of flour. All ingredients are mixed in a bowl and ground into crumbs by hand. Then you need to sprinkle the cheesecakes with this crumb before baking. If you haven’t used all the crumbs, you can form a ball out of it, put it in a bag and store it in the freezer.
  • If you want to fill the cheesecakes with jam, be sure to drain all the liquid from it. You can also mix jam with a tablespoon of starch. The liquid filling may leak out and the bottom of the cheesecakes will burn.

Donuts made with dry yeast

What makes this recipe unusual is the kneading method using a mixer.
Therefore, it is perfect for fragile girls, because it does not require long kneading by hand. The dough for such cheesecakes with jam is prepared with dry yeast. Ingredients

For the base you need to take:

  • 0.5 kg of wheat flour;
  • 1 piece of butter (70-80 grams);
  • 1 medium egg;
  • 0.5 teaspoons of salt;
  • 1 teaspoon vanilla sand;
  • 1 package of yeast type Safmoment;
  • 3 tbsp. spoons of sugar;
  • 1 glass of cow's milk (0.25 l).

For the filling, use non-liquid jam. Apricot or apple would work well. These cheesecakes with apple jam are called “school”, because everyone ate them during school.

Preparation

  1. Start by mixing all the dry ingredients for the dough in a large bowl. Pour all liquid ingredients into this mixture.
  2. Take a mixer and continue to knead the mixture for about 7 minutes until the yeast and sugar dissolve.
  3. Grease your hands with sunflower oil, collect a lump of dough, transfer to a bowl, cover with a towel (or cling film), and place in a warm place for 60 minutes.
  4. From the resulting volume you need to make 8 balls. Place them on a baking sheet and let rest for 20 minutes.
  5. Make a depression in the center of each product and fill it with jam (about 3 teaspoons). Brush the top of each bun with egg yolk.
  6. Send the pies to a preheated room at 180 degrees. Celsius oven for 15-20 minutes (until blush appears).

"Tsar's" pie

In order to please your family and friends with a delicious, tender and delicious treat, prepare a “royal” pie with jam according to an old recipe. It is best to take apple, apricot, pear or plum, currant or strawberry jam.

Ingredients

  • flour – 500 g;
  • margarine – 220 g;
  • granulated sugar – 400-450 g;
  • curd mass – 450-550 g;
  • jam – 230-250 g;
  • chicken eggs – 4 pcs.

Preparation

Margarine must be finely chopped or grated, mixed with flour and granulated sugar. Using your fingers, thoroughly rub all the ingredients to form small flakes. It is from them that the aromatic pie will be baked.

The cottage cheese should be beaten in a blender along with the eggs. Place a layer of cereal on the bottom of the baking dish, curd mass on top and cover everything with a layer of jam. So alternate layers until the form is filled. The pie must be baked in the oven for 35-45 minutes, until an appetizing, golden brown crust appears.

Recipe for “Airy cheesecakes with jam”:

1. To the sifted flour (to start, I take 300 g) add dry yeast, salt, sugar, warm milk and water, egg white (I leave the yolk for greasing the buns) and mix everything. Then I knead everything on the table, adding the remaining 100 g of flour. 2. As soon as the dough has taken all the flour, stir in soft butter in portions. The dough will be runny at first, but will gradually come together and become elastic, soft and may slightly stick to your hands. Place the dough in a container greased with vegetable oil, cover and put in a warm place for an hour. 3. After a while, knead the dough, divide into portions, roll into balls, place them on a baking sheet covered with baking paper and cover with film or a towel, let them stand for about 20 minutes. 4. Using a glass, the bottom of which is dipped in flour, make indentations in our suitable balls. Then put the filling (jam) into each cavity. Grease the edges of the dough with yolk mixed with 1 tbsp. l. milk. 5. Bake cheesecakes at 190 degrees for 10-15 minutes. 6. If desired, sprinkle the finished baked goods with powdered sugar and serve with milk, tea or coffee.

Step-by-step recipe with photos

I cook cheesecakes with jam less often than cheesecakes with cottage cheese or potatoes, but for a change, for breakfast, on the road or for a picnic, they are very appropriate!
For my taste, the most suitable or familiar dough for cheesecakes is yeast. The easiest way to prepare it is straight, with dry yeast, for example, those that are mixed into flour, and less labor-intensive - using kitchen appliances...

Almost any berry or fruit can be used as jam for cheesecakes. It is advisable to drain the syrup from a portion of jam so that the filling mass is thicker, but one way or another, I still advise you to mix flour or starch into the jam so that it does not spread during baking.

To prepare cheesecakes from yeast dough with jam in the oven, prepare the ingredients according to the list.

Combine the ingredients for the dough, mix and knead by hand or using kitchen equipment, such as a bread machine.

Let the dough rise twice, i.e. After the first good rise, crush it and leave it for another rise.

For the filling, mix the jam with flour or starch. Here is strawberry jam made from frozen berries in the microwave.

Divide the dough into the required number of pieces. For a small cheesecake, a portion of dough of 40-50 g is enough.

Form round cakes, place them on a baking sheet, greased or lined with baking paper. Using a glass with a bottom of suitable diameter, make indentations for the filling.

Spread the jam filling over the dough pieces. In addition to the egg yolk mixture, you can use just water, sweetened water or tea to lubricate the surface of the dough.

Place the baking sheet with the cheesecakes with jam in a preheated oven and bake them at 200 degrees for about 15 minutes or rely on the properties of your oven.

Cheesecakes made from yeast dough with jam are ready. Cover them for a few minutes with a towel or baking paper on which they were baked.

Enjoy your tea!

From a puff base in the oven

Cheesecakes made from puff pastry are a quick baking option that takes a minimum of time to prepare. As a base, you can use a store-bought semi-finished product or homemade puff pastry prepared with your own hands.

The ratio of the amount of dough and jam for the filling will be as follows:

  • 1000 g puff pastry (yeast or yeast-free);
  • 200-300 g of thick jam or marmalade.

Progress:

  1. Thaw the dough layers and roll them out a little on a floured work surface. Then cut into small squares of the same size.
  2. Place jam in the center of each piece and pinch the corners of the square in the center. After which you should send the cheesecakes to the oven, heated to 220-230 degrees.
  3. The golden brown crust will serve as a marker of the baking’s readiness. After cooling, the product can be sprinkled with powdered sugar.

If the jam for the filling does not seem too thick, then you can correct its consistency by adding a little starch or crushed white bread crackers.
